BACON APPLE STUFFING
This Bacon Apple Stuffing recipe will make the flavors of your Thanksgiving turkey sing! It's delicious, so flavorful, and always a crowd-pleaser.

Steps:
- Adjust oven rack to the center position and heat the oven to 350˚F.
- Cook the bacon in a large skillet over medium heat until crisp and brown, about 10-12 minutes.
- Transfer the bacon to a paper towel-lined plate.
- Add the celery, onion, and apple to the same skillet the bacon was cooking in (don't drain off the bacon grease) and sauté, stirring occasionally, until softened about 8-10 minutes.
- Add the parsley, thyme, sage, and marjoram and stir. Cook until fragrant, about 1 minute. Transfer the mixture to a large mixing bowl.
- Add the breadcrumbs, egg, salt, pepper, chicken broth and bacon to the vegetable and apple mixture.
- Place the stuffing mixture into a buttered 9x13 pan, or any other 3-quart pan. Bake for 45 minutes, or until the top is golden brown and the internal temperature reaches 165˚F.
- Cool for 5 minutes, then serve.

APPLE, BACON AND CHESTNUT STUFFING
An always-popular rustic side dish, this stuffing reaches new heights with fresh Ontario apples, double smoked bacon and Asian water chestnuts.

- In large skillet, cook bacon over medium high heat until brown and crisp, about 10 minutes. Using slotted spoon, transfer bacon to large bowl. Pour off all but 2 tbsp (25 mL) of the drippings from skillet. Add onions and celery, reduce heat to medium and cook, stirring, until celery is tender and onion is golden and translucent, about 10 minutes. Add mushrooms and apples and cook 2 minutes. Remove from heat and add to bowl with cooked bacon. Sprinkle with thyme, sage, salt and pepper. Stir in chestnuts and cubed bread until well combined. Drizzle in broth, stirring, until well moistened.
- Meanwhile, preheat oven to 350°F (175°C). Arrange stuffing in a greased 13 x 9-inch (3 L) baking dish. Cover with buttered foil and bake in preheated oven until heated through, about 40 minutes. Uncover and bake until top is slightly crisp and golden, about 15 minutes.
BACON STUFFING WITH RADICCHIO AND CHESTNUTS

- Spread the ciabatta cubes out on baking sheets and leave at room temperature to dry out for 24 hours before making the stuffing.
- Preheat the oven to 375 degrees F. Butter a 9-by-13-inch baking dish and set aside.
- Heat the broth in a small saucepan over medium-low heat.
- Add the bacon to a large skillet and place over medium heat. Cook, stirring often, until almost browned and crispy, about 5 minutes. Stir in the carrots, celery and red onion and season with the salt. Continue to cook, stirring often, until the vegetables are beginning to soften and the bacon is crispy, an additional 4 minutes. Remove from the heat and stir in the chestnuts, rosemary and radicchio.
- Place the bread cubes in a large bowl. Add the vegetable mixture to the bowl along with the olive oil and 1 cup of the Parmesan cheese. Toss well to combine. Add the broth and toss again until the bread mixture is entirely and evenly moistened.
- Pour the mixture into the prepared dish and top with the remaining 1/2 cup Parmesan. Dot with the butter and cover with foil. Bake, covered, for 30 minutes. Uncover and cook until browned and crispy on top and warm all the way through, an additional 20 minutes.
BACON-PARMESAN STUFFING

- Preheat the oven to 375 degrees F. Butter a shallow 3-quart baking dish. Cook the bacon in a large nonstick skillet over medium-high heat, stirring, until crisp, about 5 minutes. Add 6 tablespoons butter, the onions, scallion whites and a pinch of salt. Cook, stirring, until softened, about 5 minutes. Stir in the rosemary. Add the chicken broth and 1 teaspoon salt; bring to a simmer, then remove from the heat.
- Whisk the eggs in a large bowl. Whisk in the Parmesan, parsley and 1 tablespoon pepper. Stir in all but 2 tablespoons scallion greens. Stir in the bread cubes and bacon mixture.

CHESTNUT AND APPLE STUFFING
Stuffing that is to be cooked inside turkey should be warm or at room temperature; it should not be refrigerated. Be sure you are ready to stuff the turkey soon after stuffing is made.

- Preheat oven to 375 degrees. Butter an 8-inch square baking dish; set aside. Arrange bread in a single layer on two rimmed baking sheets. Bake until dried, rotating sheets from top to bottom and front to back halfway through, about 15 minutes. Meanwhile, in a large saucepan over medium heat, melt butter. - Soak the cranberries in the port for an hour. Fry the onion and bacon gently in the butter, until the onion is tender and the bacon is cooked. Add the garlic and fry for another minute or so.
- Cool slightly, then mix with all the remaining ingredients, including the cranberries and port, adding enough egg to bind - I find it easiest to use my hands. Fry a knob of stuffing in a little butter, taste and adjust the seasoning if necessary.
- To Cook: This stuffing can be baked in a dish, or rolled into balls that will be crisp on the outside and moist inside. To bake, press the stuffing into a greased ovenproof dish in a layer that is around 4cm thick. Bake at 190C/gas 5/fan 170C for about 40 minutes, until browned and, in the case of sausagemeat stuffing, cooked right through. Alternatively, roll into balls that are about 4cm in diameter. Roast the stuffing balls in hot fat (they can be tucked around the turkey or done in a roasting tin of their own) for 30-40 minutes, until crisp and nicely browned on the outside.

- Cook bacon in large skillet or Dutch oven over medium heat until crisp and browned, about 12 minutes.
- Remove bacon from pan with slotted spoon and drain on paper towels.
- Discard all but 3 tablespoons of rendered bacon fat.
- Increase heat to medium-high and add onions and 1/4 teaspoon of salt.
- Cook onions until golden in color, making sure to stir occasionally and scrape sides and bottom of pan, about 20 minutes.
- Reduce heat to medium and continue to cook, stirring more often to prevent burning, until onions are deep golden brown, another 5 minutes.
- Add apples and continue to cook another 5 minutes.
- Transfer contents of pan to large bowl.
- Add remaining 3/4 teaspoon salt, pepper, parsley, and sage to bowl and mix to combine.

- Whisk stock and eggs together in small bowl.
- Pour mixture over bread cubes.
- Gently toss to evenly distribute ingredients.
