BLUEBERRY-BUTTERMILK SCONES
The secret to making delicate scones is handling the dough as little as possible. Another tip: If you don't have buttermilk, you can substitute 1/2 cup plain yogurt whisked with 2 tablespoons milk.

Steps:
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
- Whisk together flours, granulated sugar, baking powder, and salt in a large bowl. Cut in butter with a pastry cutter, or rub in with your fingers, until mixture has the texture of coarse meal. Stir in blueberries.
- Whisk together buttermilk, 1 egg, and the vanilla. Drizzle over flour mixture, and stir lightly with a fork until dough comes together but a small amount of flour remains in bowl.
- Turn out dough onto a work surface, and gently knead dough once or twice just to incorporate flour. Pat dough into a 1-inch-thick round. Cut into 12 wedges. Transfer to prepared baking sheet. Brush with egg wash, and sprinkle with sanding sugar. Bake until golden brown and cooked through, about 22 minutes. Transfer scones to wire racks to cool.
APPLE AND OAT SCONES WITH CINNAMON AND NUTMEG
These scones are light yet hearty. Fresh apple keeps them moist, buttermilk contributes tenderness, and oats add a pleasantly toothsome texture.

Steps:
- Preheat oven to 400 degrees. Whisk together flour, oats, brown sugar, cinnamon, nutmeg, baking powder, baking soda, and salt. Cut in butter with a pastry blender or rub in with your fingers. (The largest pieces should be the size of small peas.) With your fingertips, flatten butter pieces into small disks. Add apples and buttermilk, stirring until dough just comes together.
- Turn out dough onto a lightly floured work surface. Pat dough into a 6-by-8-inch rectangle, and cut into twelve 2-by-2-inch squares with a floured knife. Place about 2 inches apart on parchment-lined baking sheets. Brush tops with buttermilk, and sprinkle with raw turbinado sugar and oats. Bake until golden brown, 20 to 22 minutes, rotating sheets halfway through. Let cool on sheets for 15 minutes. Serve warm or at room temperature.
APPLE PIE SCONES
Steps:
- Peel and core the apple and cut into small bite size pieces, this will yield about 2 cups.
- Add 1 tablespoon of unsalted butter to a small sauce pan and melt over medium heat.
- Add apple, sugar and spices to the pan and cook until sugar is melted.
- Continue to cook over medium low heat until the apple is starting to soften and the mixture is bubbly and thickened slightly.
- Take off the heat and allow to cool.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Mix 1 tablespoon of granulated sugar with the spices and set aside to use later.
- Add flour, sugar, salt, baking soda and baking powder to a medium mixing bowl and mix to combine.
- Toss the cubed butter in the flour mixture and work it into the flour with the tip of your fingers until about large pea size. Toss in the cooked apple pieces without the syrup.
- In a measuring cup, add buttermilk, egg and vanilla extract and beat to combine.
- Make a well in the middle of the flour mixture and pour in the liquid mixture, reserving about 2 tablespoon to use as egg wash. Add the left over syrup from the cooked apple.
- Fold with a spatula or wooden spoon until a wet dough forms.
- Turn the dough out onto a well-floured board, fold it over itself a 2 - 3 times, and shape into a circle about 1 1/2" thick.
- Cut into 8 scones.
- Place the scones on the prepared baking sheet, brush the top and sides with the reserved egg wash, and sprinkle generously with spiced sugar.
- Bake for 23 - 24 minutes until golden brown and a toothpick inserted in the center comes out clean.
- Let cool completely on a wire rack.

- In a large bowl, combine the first five ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in buttermilk just until moistened. Gently fold in the cheese and apples. Turn onto a floured surface; knead 10 times., Pat into a 9-in. circle. Cut into eight wedges. APPLE CINNAMON SCONES
I landed my first job in a bakery when I was sixteen. I would come in after school and make huge batches of scone mix to help the morning baker. After I graduated from high school, I became the principal baker --and spent the summer waking up at 2 a.m. Even though I had to go to bed at 7 p.m., I felt like the coolest kid in town. The bakery offered a bunch of different flavors of scones, and I could never decide on a favorite.

- Preheat the oven to 400 degrees F (204 degrees C), with racks in the upper and lower thirds. Line two baking sheets with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon and salt. Add the butter and toss to coat the cubes with flour. Cut the butter into the flour by rubbing it between your forefingers and thumbs until the butter pieces are between the size of peas and walnut halves. Add the chopped apples and toss gently to combine.
- Make a well in the center of the dry ingredients and pour in the cream. Toss the mixture with your fingers to combine, then knead gently to ensure everything is evenly moistened.
- Scoop 1/4-cup mounds of the dough onto the prepared baking sheets (I do this by hand because I like them to look craggy, but you can use a No. 16 (1/4-cup scoop)), leaving at least 1 1/2 inches between them. Brush the tops of the scones with the egg wash and sprinkle generously with turbinado sugar.
- Bake the scones, switching the sheets from front to back and top to bottom at the halfway mark, for 20 to 22 minutes, until the tops and edges are golden brown. The scones can be served warm or at room temperature.
APPLE CINNAMON SCONES
These are quick and easy to make and taste absolutely delicious, great toasted or fresh out of the oven, perfect for breakfast. *I have made these and posted the recipe only afterward, they turned out well though it is true that the dough is fairly sticky. Applesauce and buttermilk are what make this recipe moist, so perhaps in substituting them lies the problem, as for flavour. It could be that my measurements need editing, in which case I will try the recipe again and correct it if necessary.

- In a measuring cup, whisk together the buttermilk and honey until honey is dissolved. Set aside.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Add the cubed butter and using a pastry cutter, two knives until you ave coarse crumbs (or process lightly in a food processor then return to bowl). Drizzle about 3/4 of the buttermilk/honey mixture over the flour/butter mixture and using a fork, stir until a soft dough forms, adding more of the buttermilk mixture, as needed. You may not need every last drop. Dough should be moist (not crumbly) but not super sticky. Fold in the diced apples.
- Remove dough to a generously floured surface and fold over onto itself 2 or 3 times until dough holds together well. Lightly flour top of dough and press or roll into an 8-inch circle. Cut into 8 wedges. Transfer the wedges to your prepared baking sheet, allowing at least 1 inch between the slices. Brush tops with heavy cream and sprinkle with sugar, if desired.
