My favorite recipe adapted many times from its original. Always a big hit due to taste of the cookies, and because they are low fat. The perfect on the go breakfast food.

Number Of Ingredients 10

1 cup butter, softened
1 ½ teaspoons ground cinnamon
¼ teaspoon ground cardamom
1 ½ teaspoons baking soda
2 cups packed dark brown sugar
2 cups applesauce
2 cups all-purpose flour
6 cups rolled oats
1 ½ cups dried cherries
1 ½ cups dried cranberries

Steps:

  • Cream butter or margarine, cinnamon, cardamom, baking soda, and brown sugar. Mix in applesauce. Gradually blend in flour, and then oats. Stir in dried. Let dough sit for one hour.
  • Drop by teaspoonful onto ungreased baking sheet.
  • Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes, or until edges are slightly browned. Cool on wire rack.

Yield 6 half-pints.

Number Of Ingredients 4

2-1/2 pounds fresh tart cherries, pitted
1 package (1-3/4 ounces) powdered fruit pectin
1/2 teaspoon butter
4-3/4 cups sugar

Steps:

  • In a food processor, cover and process cherries in batches until finely chopped. Transfer to a Dutch oven; stir in pectin and butter. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into 6 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

3 fuji apples, peeled, cored, and coarsely chopped
1/2 cup dried cherries
1/2 cup fruit juice or 1/2 cup water
1 cinnamon stick
1/2 teaspoon finely grated lemon zest

Steps:

  • In medium saucepan, combine apples, cherries, fruit juice, and cinnamon stick.
  • Cover and bring to simmer over medium heat; cook 15 minutes, stirring frequently.
  • Uncover and reduce heat to low; cook 15 to 20 minutes longer or until apples are very soft but retain their shape.
  • Remove cinnamon stick. Add lemon zest to apple mixture.
  • In blender or food processor, puree apple mixture until chunky spread forms. Cool completely.
  • Chill before serving. Store in refrigerator.
