SAVORY APPLE-CHICKEN SAUSAGE
These easy, healthy sausages taste great, and they make an elegant brunch dish. The recipe is also very versatile: It can be doubled or tripled for a crowd, and the sausages freeze well either cooked or raw. -Angela Buchanan, Longmont, Colorado

Steps:
- Preheat oven to 400*F In a large bowl combine sausage, syrup, eggs, green onions, stuffing mix and apples. Mix well with spatula and or hands and set aside. I find hands work great for this! Roll out each pastry sheet to a 16 x 12 inch rectangle on a baking mat, parchment paper or nonstick foil. Place half of the sausage mixture down the center of one of the pastry sheets. Fold up each end of pastry sheet to cover edges at each end of sausage. Slice 1 inch slits down both sides of pastry then fold up strips on top of sausage, alternating sides like a braid. Transfer braid to a cookie sheet. Repeat the above steps for second pastry sheet and braid. Bake for 30 - 40 minutes or until golden brown. Remove from oven and allow to sit for 5 minutes before cutting into slices. Drizzle with additional maple syrup and enjoy!
SAUSAGE BRUNCH BRAID

Roll into a 12x10-in. rectangle, pressing perforations to seal. Spoon sausage mixture lengthwise down center third of rectangle. On each long side, cut 3/4-in.-wide strips 3 in. into center. Starting at one end, fold alternating strips at an angle across filling; seal ends. Brush with egg., Bake until golden brown, 20-25 minutes. Refrigerate leftovers.

BAVARIAN APPLE-SAUSAGE HASH
This awesome recipe reflects my German roots. In the cooler months, nothing is as comforting as a hearty hash. Serve this versatile recipe as a side dish at a holiday meal or as a brunch entree over cheddar grits or topped with a fried egg. -Crystal Schlueter, Northglenn, CO

CHICKEN APPLE BREAKFAST SAUSAGE
This was not my favorite dish of the class, but it was a very close second. The best breakfast sausage I have ever tried! Eating raw meat is a HUGE NO NO - so to make sure you have added enough salt and/or seasoning, fry up a small piece of the sausage mixture to taste before you make the whole batch. This recipe will make 8 good sized patties or 16 small patties. These patties can be seared in a skillet, placed on a baking sheet lined with parchment paper and popped into a 400ºF oven for 10 min or so to finish the cooking.
