Time 3h15m

Number Of Ingredients 9

Homemade Pie Crust (makes two crusts, use both)
3 medium apples, peeled and diced into small bite-size pieces (about 2 and 1/2 cups diced)
1/3 cup (70g) granulated sugar
2 Tablespoons (30g) unsalted butter
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
egg wash: 1 large egg beaten with 1 Tablespoon (15ml) milk
optional: homemade salted caramel for topping

Steps:

  • Prepare my pie crust recipe through step 5. The dough must chill for 2 hours in the refrigerator. You can make pie dough ahead, see instructions below.
  • Combine the diced apples, granulated sugar, butter, cinnamon, nutmeg, and allspice together in a medium saucepan or skillet over low-medium heat. While occasionally stirring, bring to a simmer. Allow to simmer for 2 minutes. Remove from heat and allow to cool uncovered at room temperature for 30 minutes. You can make filling ahead, see instructions below.
  • See my video above as a visual guide for the next few steps. On a lightly floured work surface, roll out one of the discs of chilled dough (keep the other one in the refrigerator). Turn the dough about a quarter turn after every few rolls. At any sign of sticking, sprinkle some flour underneath then keep rolling. Roll out until it's about 12 inches in diameter and about 1/8th - 1/4th inch thick. Using your cookie cutter, cut into circles. Re-roll any scraps and cut into circles. Place cut circles in the refrigerator to keep cold. The colder the shaped dough, the easier it is to work with. Repeat with 2nd pie dough and refrigerate cut circles for at least 15 minutes before filling the hand pies.
  • Meanwhile, preheat oven to 375°F (191°C). Line two large baking sheets with parchment paper or silicone baking mats.
  • Arrange half of the circles about 3 inches apart on prepared baking sheets. These are the bottom crusts. Using a sharp knife, cut slits into the remaining circles. These are the top crusts. The slits act as vents so that steam can escape as the hand pies bake. Place about 2 Tablespoons of filling in the center of each bottom crust. (Or however much fits while leaving the edges bare.) Place top crust on top. Press your fingers all around the edges to seal, then crimp with a fork. If the hand pies lost some shape, use your hands to form a round circle again. It's OK if some filling juice is leaking out. Lightly brush the top of the pie crust with egg wash mixture. Sprinkle with coarse sugar, if desired.
  • At this point the hand pies can be baked, but if they don't feel cool to touch anymore, freeze for 10 minutes before baking. The colder they are going into the oven, the better they'll hold their shape.
  • Bake for about 28-32 minutes or until they're golden brown on top and around the edges. Rotate pans halfway through baking. Remove from the oven and allow the hand pies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool until ready to handle. You can serve warm or at room temperature. If desired, serve with a drizzle of warm salted caramel.
  • Cover leftovers and store in the refrigerator for up to 5 days.

BACON-LATTICED APPLE PIE

Bacon-Latticed Apple Pie image

This pie is both sweet and salty, which is my favorite dessert combination. The smoky bacon, mingling with the spiced apples and bourbon crust, is heavenly.

Provided by Amber Wilson

Categories     HarperCollins     HarperCollins     Pie     Fall     Apple     Bacon     Cinnamon     Nutmeg     Dessert     Bake

Yield Makes one 9-inch pie (12 servings)

Number Of Ingredients 18

For the pie dough:
1 1/4 cups all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt
1 1/2 tablespoons granulated sugar
8 tablespoons (1 stick) cold unsalted butter, cubed
1 tablespoon bourbon (see Tip below)
1/2 cup ice water
For the filling:
5 medium apples, peeled and thinly sliced
Juice of 1/2 lemon
3/4 cup packed brown sugar
1/4 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon ground cinnamon
Pinch of freshly grated nutmeg
For assembly:
6 slices bacon
1 egg, beaten

Steps:

  • Make the pie dough:
  • In a stand mixer fitted with the flat beater attachment, combine the flour, salt, and sugar with your fingertips. Add the cold butter and mix on low until the dough looks like coarse sand. Turn the machine off and blend any large pieces of butter with your fingertips, making sure there are no pieces of butter larger than the size of a pea.
  • In a measuring cup, combine the bourbon and ice water. With the stand mixer on low, slowly dribble in the bourbon water 1 tablespoon at a time. Add just enough liquid for the dough to pull away from the sides of the bowl. (You may not need to use all the bourbon water.) Pinch the dough between your fingertips; it should be smooth, not sticky or crumbly. Gently press the dough together and shape into a disk. Wrap the disk in plastic wrap and refrigerate for at least 30 minutes or up to 3 days.
  • Make the filling:
  • In a bowl, combine the apples, lemon juice, brown sugar, granulated sugar, cornstarch, cinnamon, and nutmeg. Toss with your fingertips until the apple slices are coated evenly.
  • Assemble and bake the pie:
  • On a lightly floured surface, roll out the dough, rotating it in quarter-turns, until 12 to 14 inches in diameter and 1/8 inch thick. Gently fit the dough into a 9-inch pie plate. Trim the edges of the dough with scissors, making sure to leave at least a 1-inch overhang.
  • Crack the egg into a small dish. Without breaking the yolk, use a pastry brush to gently coat the bottom and sides of the pie shell with a thin layer of the egg white (reserve the remaining egg). The egg white creates a barrier between the filling and the crust as it bakes, keeping the crust from getting soggy. Refrigerate for 30 minutes.
  • Spoon the filling into the chilled pie shell. Place 3 bacon slices on top of the filling horizontally. Then, one by one, place the remaining 3 strips vertically, lifting every other horizontal strip to create a basket weave lattice. Crimp the edges by folding the excess overhang inward at a slight angle and pressing down firmly with your thumb.
  • Continue crimping the edges all the way around the pie, tucking in the ends of the bacon slices as you crimp the edges. Beat the reserved egg and gently brush onto the exposed edges of the pie dough. Refrigerate the pie for 20 minutes to allow the pastry to set.
  • Preheat the oven to 425°F. Line a rimmed baking sheet with foil.
  • Place the pie on the lined baking sheet and bake for 20 minutes. Reduce the oven temperature to 375°F and bake until the crust is golden brown and the bacon is crisp, about 30 minutes. Cover the edges of the crust with foil if it is browning too quickly. Drain off any excess liquid by tipping the pie to one side. Let cool for 1 hour before serving.

LATTICE CRUST APPLE PIE

Lattice Crust Apple Pie image

Provided by Food Network Kitchen

Categories     dessert

Time 7h25m

Yield 6 to 8 servings

Number Of Ingredients 12

2 1/2 cups all-purpose flour
4 teaspoons sugar
1/4 teaspoon fine salt
14 tablespoons cold unsalted butter, diced
1 large egg, lightly beaten with 2 tablespoons cold water
2 tablespoons freshly squeezed lemon juice
3 pounds baking apples like Golden Delicious, Cortland or Mutsu
2/3 cup sugar, plus more for sprinkling on the pie
1/2 stick unsalted butter
1/4 teaspoon ground cinnamon
Generous pinch of ground nutmeg
1 large egg, lightly beaten

Steps:

  • To make the dough by hand: Whisk together the flour, sugar and salt in a medium bowl. Using your fingers, work the butter into the dry ingredients until it resembles yellow cornmeal mixed with bean-size bits of butter. (If the flour/butter mixture gets warm, refrigerate it for 10 minutes before proceeding.) Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture.
  • To make the dough in a food processor: Pulse the flour, sugar and salt in a food processor fitted with the metal blade until combined. Add the butter and pulse until it resembles yellow cornmeal mixed with bean-size bits of butter, about 10 times. Add the egg and pulse 1 to 2 times; don't let the dough form into a ball in the machine. (If the dough is very dry, add up to a tablespoon more of cold water.) Remove the bowl from the machine, remove the blade and bring the dough together by hand.
  • Form the dough into a disk, wrap in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour.
  • For the filling: Put the lemon juice in a medium bowl. Peel, halve and core the apples. Cut each half into 4 wedges. Toss the apple with the lemon juice. Add the sugar and toss to combine evenly.
  • Melt the butter over medium-high heat in a large skillet. Add the apples and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 7 minutes.
  • Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to get as much liquid as possible. Return the juices to the skillet, and simmer over medium heat until thickened and lightly caramelized, about 10 minutes.
  • Toss the apples with the reduced juice and spices in a medium bowl. Set aside to cool completely. (This filling can be made up to 2 days ahead and refrigerated or frozen for up to 6 months.)
  • To assemble the pie: Cut the dough in half. On a lightly floured surface, roll each half into a disc 11 to 12 inches wide. Layer the dough between pieces of parchment or wax paper on a baking sheet and refrigerate for at least 10 minutes.
  • Place a baking sheet on a rack in the lower third of the oven and preheat the oven to 375 degrees F.
  • Line the bottom of a 9-inch pie pan with one of the discs of dough, and trim it so it lays about 1/2 inch beyond the edge of the pan. Add the apple filling to the pan.
  • Use a chef's knife or a pizza cutter and cut the second round into 1/2-inch thick strips. Lay strips of dough, evenly spaced, across the entire pie. Weave more strips of dough perpendicular through the previous strips to make a lattice or basket weave design across the entire pie. Trim the excess ends from the strips of dough. Pinch the bottom crust edge and lattice edge together, and flute the edge as desired. Brush the surface of the dough with egg and then sprinkle with sugar. Refrigerate for at least 30 minutes.
  • Bake the pie on the preheated baking sheet until the crust is golden, 50 to 60 minutes. Cool on a rack for at least 3 hours before serving. The pie keeps well at room temperature (covered) for 24 hours, or refrigerated for up to 4 days.

APPLE HAND PIES

Apple hand pies image

Make a batch of apple hand pies and freeze them, uncooked, for a later date. Spiced with cinnamon and nutmeg, they're encased in a golden shortcrust pastry

Provided by Liberty Mendez

Categories     Dessert

Time 45m

Number Of Ingredients 9

2 cooking apples (we used Bramley), peeled, cored and cut into 3cm chunks
50g light brown soft sugar
1 tsp ground cinnamon
¼ tsp ground nutmeg
25g salted butter, cubed
320g sheet of ready-rolled shortcrust pastry
1 tbsp cornflour
1 egg, beaten
1 tbsp demerara sugar

Steps:

  • Tip the apples, brown sugar, cinnamon, nutmeg and butter into a saucepan set over a medium heat and simmer, stirring occasionally for 6-8 mins until the apples are soft. Tip the mixture into a bowl and leave to cool.
  • Meanwhile, unroll the pastry with a short side facing you. Cut in half lengthways so you have two long rectangles, then cut each into five smaller rectangles, so you have 10 in total (they should be 12 x 7cm).
  • Once the spiced apple mixture has cooled, toss with the cornflour. Spoon into the middle of half the pastry rectangles, leaving the remaining five empty. Brush some of the beaten egg over the exposed pastry around the apples, then carefully place the plain pastry rectangles on top of the filling. Press down around the sides so the filling is encased. Crimp the edges using a fork to seal, then use the tip of a knife to lightly cut three lines across the top of the pies so that steam can escape during cooking.
  • Arrange the pies on a baking sheet lined with baking parchment and brush all over with more of the beaten egg. Chill for at least 30 mins in the fridge or 10 mins in the freezer. At this stage, the pies can be chilled for up to 24 hrs or individually covered and kept frozen for two months.
  • Heat the oven to 200C/180C fan/gas 6. Brush with more of the beaten egg, sprinkle with the demerara sugar and bake for 15-20 mins, or until the pastry is golden (add another 10 mins if baking from frozen). Once baked and cooled, will keep in an airtight container at room temperature for up to three days.

APPLE HAND PIES

Apple Hand Pies image

These hand pies, also known as turnovers, look too perfect to be homemade. Any of your favorite pie fillings, both sweet and savory, will work. I hope you give this easy technique a try soon. Enjoy!

Provided by Chef John

Categories     Desserts     Pies     Apple Pie Recipes

Time 1h15m

Yield 4

Number Of Ingredients 11

1 pound prepared pie dough, cut into 4 pieces
2 large green apples, peeled and cored
2 tablespoons butter
¼ teaspoon salt
¼ cup white sugar
2 tablespoons brown sugar
1 ½ teaspoons ground cinnamon, or to taste
1 teaspoon water, or more if needed
1 egg
2 teaspoons milk
1 teaspoon white sugar, or as needed - divided

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Cut peeled and cored apples into quarters, cut each quarter into 3 wedges, and cut wedges into chunks.
  • Melt butter in a large skillet over medium heat; let butter brown to a light golden color and until butter smells toasted, about 1 minute. Stir apples into hot butter; sprinkle with salt, white sugar, and brown sugar. Cook and stir apple mixture until apples are softened, about 5 minutes. Mix in cinnamon and water; continue cooking until apples are soft and sticky, 1 to 2 more minutes. Spread apple filling onto a plate to cool.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Form a dough piece into a ball, place on a floured work surface, and roll into a circle about 8 inches in diameter. Spoon 1/3 to 1/2 cup apple filling in the center. Fold dough over filling, leaving about 1 inch of dough on the bottom side visible below the top side. Gently press dough closed around filling, using your fingertips.
  • Fold the overhanging bottom part of the dough up over the top edge, working your way around the crust, and pinch the overhang tightly to the top part of the crust.
  • Crimp the edge tightly closed, pinching a little bit of dough with the thumb and forefinger of one hand and using your index finger on the other hand to push a small notch into the pinched dough. Continue pinching and notching all the way around until the crust is tightly crimped together. Repeat with remaining dough and filling. Transfer pies onto prepared baking sheet.
  • Whisk egg with milk in a small bowl until thoroughly combined. Brush top of each hand pie with egg mixture and sprinkle with about 1/4 teaspoon white sugar. Cut 3 small vent holes in the top of each pie.
  • Bake in the preheated oven until pies are golden brown and filling is bubbling, 25 to 30 minutes. Let cool for at least 15 minutes before serving.

APPLE CINNAMON LATTICED HAND PIES

Apple Cinnamon Latticed Hand Pies image

Make and share this Apple Cinnamon Latticed Hand Pies recipe from Food.com.

Provided by Food.com

Categories     Pie

Time 2h

Yield 6-8 hand pies

Number Of Ingredients 12

3 1/4 cups all-purpose flour
1 teaspoon salt
1 tablespoon granulated sugar
1 1/2 cups unsalted butter, very cold, cut into 1-inch cubes
8 tablespoons ice cold water
2 -3 apples (peeled, cored and cubed into ¼-inch pieces, about 2 cups - Gala, Honeycrisp, Braeburn are best)
1/4 cup granulated sugar
1 teaspoon cinnamon
2 teaspoons cornstarch
1/4 teaspoon salt
1 large egg
1 teaspoon milk

Steps:

  • Special Equipment.
  • Food processor, apple cutter (3-inches x 3 ½-inches), two baking sheets, 12 or 18-inch plastic ruler, pastry brush.
  • DIRECTIONS.
  • To make the pie dough, fill a small bowl with ice and water and set aside. Place the flour, salt and sugar in the food processor bowl. Pulse the mixture two to three times to mix the ingredients together. Add the butter to the food processor bowl and use a fork to toss the pieces to cover them in the flour mixture. Place the lid on the food processor and pulse four to five times. At this point, the pieces of butter will still be fairly chunky (about the size of lima beans).
  • Add the ice water to the mixture and pulse the mixture until the dough starts to come together in the bowl (25-30 pulses. See Baker's Notes below). Empty the mixture out onto a lightly floured surface, leaving behind any overly wet dough that remains at the bottom of the bowl. Use your hands to gently gather the pie dough together in a ball. Using a knife, cut the dough ball into three pieces and flatten each into a disc, approximately 1-inch thick. Wrap the three discs tightly in plastic wrap and place in the refrigerator for at least 30 minutes before proceeding.
  • To make the filling, in a small saucepan, toss the cubed apple, cinnamon, sugar, cornstarch and salt to combine. Over a medium-low heat, warm the mixture, stirring constantly, until the apple begins to soften and releases its juices (approximately 3 minutes). Turn the heat to medium and continue to stir constantly until the mixture begins to simmer and thicken (another 1-2 minutes). Remove the saucepan from the heat and transfer the mixture to a bowl to cool at room temperature for 30 minutes.
  • To make the lattice strips, remove one pie dough disc from the refrigerator. On a lightly floured sheet of parchment, roll the dough out to an 11-inch by 12-inch rectangle. Using a ruler and knife, cut ¼-inch wide strips of pie dough across the 11-inch width. (You will have forty four ¼-inch by 12-inch strips of dough.) Transfer the parchment paper, with the strips on it, to a baking sheet and set aside. Repeat this process with the second disc of dough. Gently place the second sheet of strips, on the parchment paper, on top of the first set of strips. Cover the baking sheet with plastic wrap to keep the strips from drying out and set aside (See Baker's Notes below).
  • To make the hand pie bottoms, on a lightly floured sheet of parchment, roll out the third pie dough disc to a 12-inch square Press the apple cutter lightly into the dough to make an impression (do not cut all the way through the dough). Repeat to make a total of six impressions in two rows (three impressions per row) equally spacing the impressions apart. Place 2 tablespoons of apple-cinnamon filling in the centre of each impression, leaving a ¼-inch border around each edge. Slide the parchment with the pie dough impressions on it onto a baking sheet and set aside.
  • To assemble the lattice, transfer the top sheet of strips, still on the parchment, to a work surface, ensuring that the strips are vertical in front of you. Fold every other strip back on itself. (These strips will now be half the length of the alternating strips). Drawing from your second sheet of pie dough strips, place one strip horizontally over the unfolded vertical strips. Next, unfold the folded vertical strips so they lay over the horizontal strip (They should now be back in their original position). Now, fold back the strips running under the horizontal strip back over the horizontal strip (this is the set of strips you did not fold back the first time). Lay another horizontal strip across the unfolded vertical strips and then unfold the set of folded strips so they lay over the horizontal strip. Continue latticing, alternating sets of strips until the bottom half of the lattice is complete. Follow the same process to complete the top half of the lattice. Slide the completed lattice, on the parchment paper, onto a baking sheet and transfer it to the refrigerator to chill for 15 minutes. If you have leftover strips, set them aside.
  • Preheat the oven to 375°F Make an egg wash by whisking together the egg and milk in a small bowl. Set aside. Remove the chilled lattice from the refrigerator and slide it, still on the parchment, off the baking sheet and onto a work surface. Line the baking sheet with a fresh piece of parchment and set aside. Using a sharp knife or a pizza cutter, cut the lattice into six pieces, each approximately 3 ½-inches by 4-inches. Set aside.
  • Place the baking sheet with the hand pie bottom impressions in front of you. Using a pastry brush, brush the egg wash around the edges of the six apple impressions. Using an offset spatula or small lifter, carefully place the lattice pieces over the impressions, being sure to encase the apple cinnamon filling and cover the impression outlines completely. Gently press along the edges of the lattice rectangles to ensure that they seal to the bottom pie dough. Place your apple cutter over each lattice rectangle, being sure to center it carefully, and cut out an apple shape. Carefully pull away the excess pie dough (It can be used to make two additional hand pies along with any extra pie dough strips, if desired, or refrigerated/frozen for another purpose). Run an offset spatula or lifter under the cut hand pies and gently transfer them to the parchment-lined baking sheet. Brush the hand pies with egg wash then transfer them, on the baking sheet, to the freezer to chill for 15 minutes.
  • Place the chilled latticed apple hand pies, on the baking sheet, into the oven. Bake for approximately 40-45 minutes, until the crust is golden brown and the apple filling bubbles through the lattice. Allow the hand pies to cool for 30 minutes.
  • Baker's Notes:.
  • When making the pie dough, do not add more water than called for in the recipe, even if it looks like the mixture is not coming together. Instead, continue to pulse until the mixture starts to clump.
  • If your kitchen is very warm, transfer the lattice strips to the refrigerator to chill before proceeding with latticing. Allow the strips to warm for a few minutes before starting to lattice.
