I didn't think I liked apple fritters, but turns out I just don't like chunks of almost raw apple, surrounded by a doughnut. Maybe I've just been going to the wrong shops, but I've never enjoyed the texture, and always wanted to try them with cooked apples.

1 tablespoon butter
2 large Granny Smith apples - peeled, cored and cut into 1/4-inch dice
1 tablespoon white sugar
1 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground nutmeg
1 large egg
¼ cup white sugar
1 tablespoon melted butter
½ cup sparkling apple cider
2 cups vegetable oil for frying
½ cup confectioners' sugar, or more as needed
1 tablespoon sparkling apple cider, or as needed to make glaze

Steps:

  • Melt butter over medium-high heat and cook until it turns golden brown, 2 to 3 minutes. Add apples and cook over medium-high heat until apples just begin to soften around the edges, 3 to 4 minutes. Sprinkle in 1 tablespoon sugar and continue cooking another 2 minutes. Remove from heat. Drain in a strainer; let cool to room temperature.
  • Whisk flour, baking powder, salt, cinnamon, ginger, and nutmeg together in a mixing bowl until well combined.
  • Whisk egg, 1/4 cup sugar, and melted butter together in a separate mixing bowl. Add cooled apple pieces and sparkling apple cider; add the flour mixture. Stir just until flour is incorporated.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Spoon about 2 tablespoons batter per fritter, into hot oil, slightly flattening them out. Cook in batches. Fry on one side until small bubbles appear on the surface, about 2 minutes. Carefully flip fritters over and fry the other side until richly browned, about 2 more minutes.
  • Transfer with a slotted spoon to a paper-towel-lined plate to drain grease. Cool slightly before glazing.
  • Whisk powdered sugar and cinnamon in a mixing bowl. Add enough apple cider, 1 teaspoon at a time, to form a smooth glaze that is just runny enough to drizzle over fritters.

My mom made these for us after school in the fall with the apples we'd pick and buy from a fruit farm. Warm, crisp, and sweet, a perfect fall treat.

1 quart vegetable oil for deep-frying
1 ½ cups all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
½ teaspoon salt
⅔ cup milk
2 eggs, beaten
1 tablespoon vegetable oil
3 cups apples - peeled, cored and chopped
1 cup cinnamon sugar

Steps:

  • Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
  • In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
  • Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.

Vegetable oil, for deep-frying
2 cups all-purpose flour
1/2 cup plus 3 tablespoons granulated sugar
2 1/4 teaspoons baking powder
2 teaspoons ground cinnamon
1 1/4 teaspoons salt
2 large eggs
3/4 cup whole milk
2 tablespoons melted butter
2 teaspoons vanilla extract
2 Granny Smith apples, cored and cut into small dice
Powdered sugar, for dusting, optional
Serving suggestions: breakfast sausage and bacon

Steps:

  • Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
  • In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
  • Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!

1 1/2 teaspoons baking powder
3 tablespoons sugar
1/4 teaspoon salt
1 egg (beaten)
1/3 cup milk
1 cup apple (diced)
1 cup cooking oil
confectioners' sugar (for dusting)

Steps:

  • Measure and sift all dry ingredients.
  • Beat eggs and milk together; slowly incorporating the dry ingredients.
  • Add the chopped apples.
  • In a heavy skillet on the stovetop, heat cooking oil over medium-high heat.
  • Drop teaspoon full of apple-batter into hot oil and fry until golden brown in color- 3 to 4 minutes on each side.
  • Remove from oil and drain on brown paper.
  • Cool and sprinkle with powdered sugar.
  • Makes 12 small fritters.
  • Eliminate the sugar and serve with pork roast.

1 tablespoon sugar
3/4 teaspoon baking powder
1/4 teaspoon salt
1 large egg
1/3 cup whole milk

2 teaspoons grated orange zest
1/4 teaspoon vanilla extract
3/4 cup chopped peeled tart apple
Oil for frying
Confectioners' sugar

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, combine the egg, milk, butter, orange juice, zest and vanilla. Add to dry ingredients just until moistened. Fold in apples., In an electric skillet or deep-fat fryer, heat 1/4 in. of oil to 375°. Drop batter by rounded tablespoons into oil. Fry until golden brown on both sides. Drain on paper towels. Dust with confectioners' sugar. Serve warm.

2 sweet apples, such as Rome, McIntosh, or Gala, peeled, cored, and cut into 1/4-inch pieces (about 3 cups)

Steps:

  • In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. In another bowl, whisk together milk, eggs, butter, and vanilla. Gently fold milk mixture into flour mixture until just combined. Fold in apples.
  • Meanwhile, heat 2 inches of oil in a medium heavy-bottomed pot over medium-high heat until a thermometer registers 350 degrees. Set a wire rack in a rimmed baking sheet.
  • Working in batches, drop heaping tablespoons of dough into oil. (A small ice cream scoop works especially well for creating uniform-size fritters.) Cook, turning once, until puffed and golden, 3 to 4 minutes. Transfer to rack with a slotted spoon. Let cool slightly, dust with confectioners' sugar, and serve.

Steps:

  • Stir together flour, granulated sugar, and salt, then add beer and whisk to combine. Heat oil in a 5-quart heavy pot until thermometer registers 375°F.
  • Dip apple slices in batter, shaking off excess, and fry, about 8 at a time, until golden, about 1 1/2 minutes on each side. Transfer fritters with a slotted spoon to paper towels to drain. Serve warm, dusted with confectioners sugar.

Apple fritters make a delightful dessert. The fritters are made with a simple batter consisting of a cup of flour, a cup of ice-cold water and one egg. Use the least expensive apples you can find for the fritters; any variety works well in this recipe. Notice that the apples are not peeled. They are stood upright and cut on all sides into 1/2-inch-thick slices as far as the core, which is then discarded. The apple slices are then stacked and cut into sticks, and these sticks are mixed into the batter. Large spoonfuls of the mixture cook in just a few minutes in hot oil. If the fritters are made ahead, be sure to cook them until they are crisp and well browned. Then reheat and recrisp them in a toaster oven or under the broiler just before serving. Dust them heavily with granulated sugar.

1 egg
1 cup ice-cold water
1 pound apples (about 3), any variety
1 1/2 cup canola oil
1/2 cup granulated sugar for dusting the fritters

Steps:

  • Put the flour, egg and a third of the water into a bowl, and mix vigorously with a whisk. The mixture will be fairly thick. When smooth, add the remaining water, and mix again until the water is incorporated.
  • Stand the unpeeled apples upright on a board, and cut them vertically into 1/2-inch-thick slices, stopping when you reach the core. Pivot the apple, and cut again, until only the core remains. Discard the core, stack the apple slices, and cut them into 1/2-inch-wide sticks. You should have 4 cups. Stir the apple sticks into the batter.
  • In a large, heavy skillet heat the oil to 375 degrees. When hot, pour about 1/3 cup of the batter into the pan for each fritter, making four or five at a time. Using two forks, spread the batter so that it is not more than 1/2 inch thick. Cook for about 3 minutes on each side, until brown and crisp.
  • Drain the fritters on paper towels, and transfer them to a rack. Sprinkle liberally with the sugar, and serve immediately.
