1 tablespoon olive oil
1 (1 1/4 pound) pork tenderloin
kosher salt and ground black pepper to taste
2 teaspoons chopped fresh parsley
½ sweet onion, diced
1 Gala apple, cut into chunks
½ cup Riesling wine
1 cup apple jelly
2 tablespoons balsamic vinegar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a baking dish large enough to hold the tenderloin without folding it.
  • Heat the olive oil in a large skillet over medium-high heat, and brown the pork tenderloin on all sides. Remove the browned tenderloin to the prepared baking dish. Sprinkle all sides of the meat with salt, pepper, and parsley.
  • Cook and stir the onion and apple in the same skillet over medium heat until the onion becomes soft, about 5 minutes, and pour in the Riesling wine. Scrape all the browned flavor bits off the bottom of the skillet and stir to help dissolve them into the wine. Bring to a boil, and pour the onion, apple, and wine mixture over the tenderloin.
  • Mix together the apple jelly and balsamic vinegar in a bowl until the mixture is smooth and without lumps. Spread the jelly mixture all over the pork.
  • Bake loin in the preheated oven until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), 30 to 45 minutes. Allow the tenderloin to rest for 10 minutes before slicing, and serve each slice with a spoonful of the apple-onion mixture.

4 apples (recommended: a mix of Golden Delicious and McIntosh)
1/4 cup melted butter
3 pounds pork tenderloin
Salt and freshly ground black pepper
1/2 cup apple butter
3 tablespoons Dijon mustard
1/4 cup honey
1 tablespoon chopped fresh rosemary leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the apples into 1-inch dice and toss with melted butter in a large bowl. Scatter the apples in the bottom of a roasting pan fitted with a rack.
  • Season the tenderloin generously with salt and pepper and place on the rack in the roasting pan. Whisk together all remaining ingredients in a small bowl. Put the tenderloin in oven until internal temperature registers 160 to165 degrees on an instant-read thermometer, about 30 to 40 minutes. During the last 10 minutes of cooking brush with half of the glaze. Remove from oven, brush with remaining glaze and allow to rest for 10 minutes on a cutting board before slicing. Serve with roasted apples.

1 cup apple juice concentrate (thawed)
2 tablespoons balsamic vinegar
3 -5 teaspoons liquid smoke flavoring (depending upon your taste)
2 teaspoons onion powder
1 teaspoon garlic powder
2 tablespoons cornstarch
3/4 cup water
2 pork tenderloin (12 to 16 ounces each, trimmed of fat and silver skin)
1 1/4 teaspoons kosher salt
3/4 teaspoon ground black pepper
2 teaspoons vegetable oil

Steps:

  • combine first seven ingredients to make glaze.
  • Brine tenderloins for 1 hour in a solution of water & kosher salt. The ratio is 1 Tablespoon of salt per 1 cup of water.
  • Rinse tenderloins and pat dry.
  • Adjust oven rack to middle position; heat oven to 400 degrees.
  • Sprinkle tenderloins evenly with salt and pepper; rub seasoning into meat. Heat oil in 12-inch skillet over medium-high heat until smoking. Place both tenderloins in skillet; cook until well browned, 3 minutes. Using tongs, rotate tenderloins 1/4 turn; cook until well browned, 1 to 2 minutes. Repeat until all sides are browned.
  • Transfer tenderloins to rimmed baking sheet, coat with glaze, and place in oven, roast until internal temperature registers 135 to 140 degrees on instant-read thermometer, 10 to 16 minutes.
  • Transfer tenderloins to cutting board and tent loosely with foil ; let rest until internal temperature registers 145 to 150 degrees, 8 to 10 minutes. Cut tenderloins crosswise into 1/2-inch-thick slices, arrange on platter or individual plates, serve immediately.

1/4 cup soy sauce
1/2 cup apple cider vinegar
2 tablespoons grainy mustard
2 lbs pork tenderloin

Steps:

  • Stir first 4 ingredients together to make the glaze.
  • Pour half the glaze over the pork and stand for 15-30 minutes.
  • Roast or Grill pork at 350 degrees for 20-25 mins per side.
  • Heat remaining glaze on stovetop or in microwave.
