- Heat oven to 350°F. Grease 8-inch square pan with shortening; lightly flour.
- In small bowl, mix 1 3/4 cups of the flour, the baking powder, cinnamon, ginger, nutmeg, baking soda and salt. In medium bowl, beat brown sugar and 1/2 cup butter with electric mixer on medium speed 3 minutes or until light and fluffy. Beat in eggs, one at a time. On low speed, beat in molasses. Add flour mixture to butter mixture alternately with 1/2 cup buttermilk, beating after each addition just until smooth. Mix remaining 1/4 cup flour and the apples. Fold into batter. Pour into pan.
- Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool completely on cooling rack, about 2 hours.
- In medium bowl, beat powdered sugar, 1/4 cup butter, 2 tablespoons buttermilk and the vanilla with electric mixer on medium speed 2 minutes or until smooth. Frost cake. Sprinkle with additional nutmeg, if desired. Cut into 4 rows by 4 rows.

- Preheat oven to 350 degrees.
- Spray a 8" round baking pan with cooking spray.
- Chop up your apples.
- Beat the eggs in a small bowl until fluffy.
- Combine sugar, flour, baking powder and cinnamon in a bowl. Whisk together.
- Combine wet and dry ingredients together.
- Sprinkle 1/2 apples in bottom of pan.
- Pour over batter. It will be thick and you'll have to work it around the pan with a spatula.
- Sprinkle remaining apples on top and sort of press them down into batter.
- Bake for approximately 25 minutes or until golden.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour tube pan.
- In a medium bowl, sift together the flour, baking soda, cinnamon, cloves and salt. Set aside.
- In a large bowl, cream the sugar and shortening until fluffy. Add applesauce and molasses and mix in.
- Gradually add the flour mixture and beat well to moisten. Fold in the raisins.
- Pour into a prepared fluted or straight sided tube pan. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until toothpick inserted into the middle of cake comes out clean. Cake will not rise to top of pan. Cool for 10 minutes and remove from pan and cool on wire rack.

MOLASSES APPLE CAKE WITH FLUFFY TOPPING
This is a VERY old recipe from my grandmother (possibly my great-grandmother). She was a lunch lady and held fast (and still does) that no meal is complete with out two things: bread and dessert. And tea tastes the best to her (private family joke). She now has Alzheimer's and is in the nursing home. I'm posting this kinda for her, kinda for me...and for everyone else to enjoy as well.

- Preheat the oven to 350 degrees.
- Simmer the apples in the molasses until tender and cool.
- Melt the shortening in the hot water.
- Sift all the dry ingredients together and slowly add water mixture, stirring constantly to keep smooth. Stir in the molasses and apples.
- Pour into a greased 9x9 pan and bake for 1/2 hour or until a toothpick comes out clean.
- NOTE: The original recipe did not specify a pan size. This was just a guess as the serving size (which was mentioned) is 8-12.
- TOPPING: Whip the cream. Add the dry ingredients and fold in the molasses. Spread on top of cake and sprinkle with nuts if desired.

In Kentucky and its environs, this dessert once served as a wedding cake; neighbors and friends might have each brought a layer, and the hosts would add the filling. We plumped up dried apples in cider and tucked them between layers of clove-and ginger-spiced molasses cake.

- Bring apples and cider to a boil in a large pot. Reduce to a simmer; cook, stirring occasionally, until apples begin to soften and liquid has reduced, 40 to 50 minutes. Add 1 cup water; cook, mashing apples slightly, until liquid has reduced, about 10 minutes. Add 2/3 cup granulated sugar and 1/2 cup water; simmer until apples are very soft and coated in syrup, about 15 minutes. Let cool completely.
- Preheat oven to 375 degrees. Butter two 9-inch round cake pans. Line bottoms with parchment paper, and butter parchment. Dust with flour; tap out excess. Set aside.
- Put butter and the remaining cup sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until creamy, about 3 minutes. Reduce speed to low; mix in egg, molasses, buttermilk, baking soda, flour, spices, and salt.
- Divide batter evenly between prepared pans. Bake until a cake tester inserted into centers comes out clean and tops spring back when lightly touched, about 35 minutes. Let cool on a wire rack 10 minutes. Run a knife around edges of pans to loosen; invert to unmold. Remove parchment; reinvert onto racks. Let cool.
- Using a long serrated knife, cut each cake in half horizontally. Place 1 bottom layer on a serving platter. Top with 1/3 of the apple mixture, spreading to edges. Stack 1 top layer on top of apples, and top with another 1/3 of the apple mixture. Repeat with remaining cake bottom and apples, and top with remaining cake top. Let stand at room temperature at least 1 hour before serving. Sift confectioners' sugar over top of cake.
