4 cups chopped peeled apples
2 cups sugar
2 eggs
1/2 cup canola oil
1 teaspoon almond extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup chopped pecans
SAUCE:
1/2 cup butter, cubed
1 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1 cup water
2 teaspoons vanilla extract
1/2 teaspoon rum extract

Steps:

  • In a large bowl, combine the apples and sugar. Let stand for 30 minutes. , Preheat oven to 350°. In a small bowl, whisk the eggs, oil and almond extract. Add to apple mixture and toss to coat. Combine the flour, baking powder, salt and cinnamon; stir into apple mixture just until moistened. Stir in pecans. , Transfer to a greased 11x7-in. baking dish. Bake 35-40 minutes or until a toothpick inserted in the center comes out clean. , For sauce, in a small saucepan, melt butter. Stir in the sugar, flour and salt until smooth. Gradually add water. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; stir in extracts. Serve with warm cake.

2 cups sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
3 cups cooking apples, peeled and chopped
1 1/2 cups pecans, chopped
1 cup sugar
1/2 cup butter
1/2 cup half and half cream
1 teaspoon rum extract

Steps:

  • Cake:.
  • Cream the butter; gradually add the sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition.
  • Combine flour and the next 5 ingredients; add to the creamed mixture, beating until blended. Stir in the apple and pecans.
  • Pour batter into a greased and floured 13 x 9 x 2 inch baking pan. Bake at 325 degrees for 50 to 55 minutes or until a wooden pick inserted in the center comes out clean. Let cool completely in the pan on a wire rack. Serve with Hot Buttered Rum Sauce.
  • Hot Buttered Rum Sauce:.
  • Combine the sugar, butter, and half and half in a saucepan; cook over low heat, stirring occasionally, until sugar dissolves. Remove from heat, and stir in the rum extract.

Wonderful cake, it has a wonderful flavor, goes with anything. I orginally started making this on Thanksgiving. Lots of ingredients but well worth it in the end.

4 cup(s) chopped peeled apples
2 cup(s) sugar
2 - eggs
1/2 cup(s) vegetable oil
1 teaspoon(s) almond extract
2 cup(s) all purpose flour
2 teaspoon(s) baking powder
1 teaspoon(s) salt
1 teaspoon(s) cinnamon
1/2 cup(s) chopped pecans
SAUCE:
1/2 cup(s) butter
1 cup(s) sugar
2 tablespoon(s) all purpose flour
1/8 teaspoon(s) salt
1 cup(s) water
1/2 teaspoon(s) rum extract

Steps:

  • In large bowl, combine the apples and sugar let stand for 30 mins.
  • In a small bowl, whisk the eggs, oil, and almond extract. Add to teh apple mixture and toss to coat. Combine the flour, baking powder,salt, and cinnamon, stir into apple mixture just until moistended. Stir in pecans. (if you like nuts add some more to suit your taste)
  • Transfer mixture to a large greased 11-inch x 7inch x 2in baking dish. Bake at 350 for 35 - 40 minutes, or until toothpick comes out clean.
  • For sauce, in a small saucepan, melt butter. Stir in the sugar, flour, and salt until smooth. Gradually add water. Bring to a boil, cook and stir for 2 minutes. Remove from heat, stir in vanilla and rum extract. Serve with warm cake. ( I drizzle it over the entire cake, then serve.

Steps:
