Roasted Carrots and Broccoli, a super easy sheet pan roasted vegetable recipe with only 5 ingredients and ready in under 30 minutes. Your new favorite simple side dish or salad topper!

1 pound carrots (washed and peeled)
1 pound broccoli (washed and destemmed)
2 whole garlic cloves (sliced thin)
2 tablespoons olive oil
1 pinch salt and pepper

Steps:

  • Prep oven: Preheat the oven to 400 degrees (200 C)
  • Prep vegetables: Wash broccoli and carrots. Cut stems from broccoli and separate florets into smaller, bite-size pieces. Cut stems from carrots and slice diagonally into 1-2 inch (3-5 cm) pieces.
  • Roast vegetables: Arrange the carrots and broccoli on a baking sheet and drizzle with olive oil, tossing the vegetables to completely cover with oil and sprinkle with sliced garlic, salt, and pepper. Place sheet pan in the oven and roast for 25 minutes, stirring halfway through to roast vegetables on all sides.
  • Serve vegetables: Remove pan from oven, arrange roasted broccoli and carrots on a plate and serve as a side dish or as a salad topping.

3 tablespoons reduced sodium soy sauce
1 tablespoon brown sugar, packed
2 teaspoons sesame oil
1 teaspoon rice vinegar
1 teaspoon Sriracha, or more, to taste
16 ounces baby peeled carrots
1 tablespoon olive oil
3 cloves garlic, minced
16 ounces broccoli florets*
2 teaspoons sesame seeds

Steps:

  • Preheat oven to 425°F. Lightly oil a baking sheet or coat with nonstick spray. In a small bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar and Sriracha; set aside. Place carrots in a single layer onto the prepared baking sheet. Drizzle with olive oil and sprinkle with garlic. Place into oven and bake for 20 to 25 minutes, or until tender. Stir in broccoli during the last 7 to 10 minutes of cooking time. Stir in soy sauce mixture and gently toss to combine. Serve immediately, garnished with sesame seeds, if desired.

3 tablespoons light soy sauce
3 tablespoons rice vinegar
2 cloves garlic, minced
2 teaspoons sesame oil
2 teaspoons minced fresh ginger root
¼ teaspoon Chinese five-spice powder

Steps:

  • Bring a large pot of water to boil, add the carrots and parboil for 5 minutes. Drain and rinse with cold water.
  • In a large glass dish, combine the remaining ingredients. Add the carrots and marinate for 30 minutes.
  • Prepare an outdoor grill with an oiled rack set 4 inches from the heat source. Using a oiled wire hinged vegetable basket or just directly on the rack ( whichever you find easier), grill the carrots, turning constantly for a total of 10 minutes, until slightly charred.

5 ½ cups broccoli florets
1 carrot, thinly sliced
2 teaspoons water
1 teaspoon cornstarch
1 teaspoon chicken bouillon granules, or to taste
salt to taste
2 tablespoons peanut oil

Steps:

  • Bring a large pot of lightly salted water to a boil. Add broccoli and cook uncovered until bright green, about 2 minutes. Transfer broccoli to a bowl of ice water using a slotted spoon and immerse for several minutes to stop the cooking process. Drain.
  • Bring water back to a boil in the same large pot; add sliced carrot and cook for 1 minute. Drain.
  • Mix water and cornstarch together in a bowl until smooth. Add chicken granules and salt and mix well.
  • Heat peanut oil in a wok or large skillet over high heat; saute broccoli and carrots for 2 minutes. Add cornstarch mixture; cook and stir until vegetables are coated evenly, 1 to 2 minutes.
