- Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
- In medium bowl, mix 3/4 cup flour, the oats, brown sugar and 1/2 teaspoon cinnamon until blended. Cut in cold butter, using fork or pastry blender, until mixture is crumbly. (Do not overmix.) Set aside.
- In large bowl, mix Filling ingredients until well coated. Spread evenly in baking dish. Sprinkle streusel over top.
- Bake 30 to 35 minutes or until topping is golden brown and juices are bubbling along edges.
- Cool at least 20 minutes before serving.

- Preheat your oven to 350ºF.
- Place the apples in an 8x8-inch baking dish. Toss with the raisins, maple syrup, and cinnamon, to coat. Shake the pan down lightly to even out the apples.
- Place the oats in your spice grinder or food processor and pulse 5 or 6 times to break them up a bit. You should end up with a mix of oat flour and cut oats.
- Combine the slightly ground oats, brown sugar, and salt in a mixing bowl. Add the margarine, oil, or shortening, and mash it all together with a fork until the ingredients are well mixed and coarse crumbs form.
- Sprinkle the oat mixture (see notes below) evenly over the apples, and bake for 30 to 45 minutes, or until it reaches your desired degree of doneness. My husband likes the apples really soft and the topping crispy, so we do 45 minutes in a convection oven, but it will technically be cooked at 30 minutes.

- In a large mixing bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt until well combined. Stir in the old-fashioned rolled oats and set aside.

If you like apple crisp you will equally like this cookie. I prefer a background nutmeg flavor, feel free to add more (or leave it out) for your taste.

- Preheat oven to 350°F.
- Cream butter with electric mixer; add sugar and cream together until fluffy.

- Line a baking sheet with parchment paper. Break or chop the apples in the filling into bite-size pieces. Scoop heaping tablespoons of the filling onto the lined baking sheet. Place in the freezer until completely frozen, about 1 hour.

- Prepare the cookie mix according to package instructions and chill in the fridge about 10 minutes.

- Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
- Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.

- Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.
