1 1/2 cups unsweetened almond milk or any other milk
2 large eggs (or use flax eggs for vegan. For each flax egg - 1 tablespoon flax seed + 3 tablespoons water)
1/2 cup maple syrup (Or honey)
4 teaspoons melted coconut oil (Or olive oil)
1 teaspoon pure vanilla extract
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon sea salt
1/2 cup unsweetened applesauce
1 medium apple peeled (cored & diced (about 1 cup))
3 1/2 cups gluten-free old-fashioned rolled oats
thin apple slices (optional, for garnish)

Steps:

  • Preheat oven to 350°F. Grease a 12-cup muffin tin with non-stick cooking spray or line baking sheet with silicone liners. Set aside.
  • In a large bowl, mix the flax seeds and water to make the flax egg. Set aside until thickened, about 2 minutes (skip if using regular egg). After 2 minutes, whisk in milk, maple syrup, coconut oil, vanilla, baking powder, cinnamon, salt, applesauce, and chopped apples. Fold in oats.
  • Divide batter evenly into prepared muffin tin or silicone muffin liners. Top with more sliced apples, if desired.
  • Bake in preheated oven for 18-25 minutes, or until set.
  • Enjoy immediately or freeze in a freezer-safe bag or container for up to 3 months. Reheat in the microwave when ready to enjoy.

1 and 1/2 cups (360ml) milk (dairy or nondairy)
2 large eggs*
1/2 cup (120ml) pure maple syrup*
1/2 cup (120g) unsweetened applesauce
3 cups (240g) old-fashioned whole oats*
1 teaspoon baking powder
1 and 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
1 heaping cup peeled chopped apple*
optional: 1/2 cup (50g) chopped walnuts or pecans
optional: coarse sugar for topping

Steps:

  • Preheat oven to 350°F (177°C). Generously spray a muffin pan with nonstick spray. If using muffin liners, spray them with nonstick spray. The oatmeal cups stick to the liners a bit regardless, so I recommend skipping them.
  • Whisk all of the ingredients together, except for the apples (and nuts and coarse sugar), in 1 large bowl. Using a spoon or rubber spatula, fold in the apples and nuts (if using). Batter will be a little liquid-y. Spoon batter evenly into muffin cups, making sure both the oats/apples and liquid are in each. Fill all the way to the top. See photo above. If desired, sprinkle the tops with coarse sugar.
  • Bake for 25-30 minutes or until the edges are lightly browned and top appears set. If the tops appear to brown very quickly, tent a piece of aluminum foil on top.
  • Cool for 5 minutes before serving. Cover leftover oatmeal cups tightly and refrigerate for up to 1 week.

1/2 cup pure maple syrup
1 teaspoon vanilla extract
1 medium Granny Smith apple (, peeled, cored, and chopped (about 1 cup))

Steps:

  • Preheat the oven to 350°F (177°C). Spray a 12-count muffin pan very well with non-stick cooking spray and set aside.
  • Add the oats, baking powder, cinnamon, and salt to a large mixing bowl and mix until well combined.
  • In a separate mixing bowl, whisk together the milk, eggs, maple syrup, and vanilla extract until fully combined. Add the dry ingredients into the wet ingredients and mix until well combined. Add the chopped apple and gently mix it in.
  • Evenly distribute the mixture between all 12 cavities in the prepared muffin pan. Bake at 350°F for 25 to 27 minutes, or until the tops of the oatmeal cups are lightly golden brown and firm.
  • Remove from the oven and allow to cool in the pan for about 5 to 10 minutes, then remove the oatmeal cups and transfer to a wire rack to finish cooling.

1 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cardamom
1/2 teaspoon ground allspice

1 large apple (peeled and minced)
2 large eggs
2 tablespoons maple syrup
1 tablespoon melted coconut oil
1 medium banana (mashed)
1.5 cup unsweetened almond milk

Steps:

  • Preheat oven to 350ºF and line a 12-count muffin tin with muffin liners. Spray with nonstick cooking spray and set aside.
  • Place rolled oats, baking powder, and spices in a large bowl and combine.
  • Peel a large apple and then finely dice. Set aside.
  • Place a large banana in a medium size bowl and mash. Then add in eggs, maple syrup, and almond milk. Add wet mixture into the dry mixture and mix. Then, add melted coconut oil and apples and mix again.
  • Fill 12 muffin liners to the top (~2 heaping tablespoons of the oat mixture).
  • Place in oven at 350ºF and bake for 19-21 minutes.

Steps:

  • If you plan to bake these right away, preheat your oven to 375 degrees. If not, that part can wait until the morning.
  • In a large bowl, combine the oats, baking powder, salt, and cinnamon. Add the milk, egg, and mashed banana and mix until combined. Stir in the apple.
  • You can either put the mixture into the fridge overnight or continue with the directions and bake right away.

I like to make sweet treats to share with friends. I came up with this recipe so that I could bake and take apple crisp to share easily with everyone.

3 large McIntosh apples - peeled, cored, and chopped
¼ cup water
2 tablespoons white sugar
½ teaspoon ground cinnamon, or to taste
2 cups all-purpose flour
2 cups rolled oats

½ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 4 12-cup mini-muffin tins.
  • Mix apples, water, white sugar, and 1/2 teaspoon of cinnamon together in a saucepan, and bring to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes; remove from heat.
