4 1/2 cups all-purpose flour, plus more for dusting
1 tablespoon granulated sugar
1 teaspoon kosher salt
2 sticks (8 ounces) unsalted butter, chilled
5 eggs
Nonstick cooking spray
1/4 cup turbinado sugar
6 Granny Smith apples, peeled, cored and thinly sliced
1 tablespoon lemon juice
1/2 cup packed brown sugar
1/4 cup granulated sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg

Steps:

  • For the dough: In a large bowl, mix the flour, granulated sugar and salt. Using a pastry blender or your fingers, cut in the cold butter until pea-size.
  • In a separate bowl, beat 4 of the eggs with a fork until fluffy and pale yellow.
  • Using a fork, mix the eggs into the flour mixture until the dough just comes together. Finish combining the dough with your hands to form a ball, being careful to avoid over-working the dough.
  • Cut the ball in half, forming two smaller balls of dough. Gently press down on each to form two equal disks. Wrap each disk in plastic wrap and refrigerate for at least 2 hours or up to overnight.
  • For the filling: In a bowl, coat the apple slices with the lemon juice. Add the brown sugar, granulated sugar, flour, cinnamon and nutmeg, and toss to evenly coat. Set aside.
  • Preheat the oven to 375 degrees F.
  • Dust a clean surface with flour. Using a rolling pin, roll out the dough, one disk at a time, to 1/4-inch-thick, about 12 inches in diameter.
  • Spray the pie pan with nonstick cooking spray. Roll one portion of the dough onto the rolling pin and carefully lift into the pan, leaving the excess dough hanging over the edge. Spoon the fruit filling into the pan, creating a mountain of fruit. Then push down the center of the filling pile to even it out, and trim the crust. Roll the second portion of the dough onto the rolling pin and place over the filling, with the excess dough hanging around the edges of the pan. Flute the edges of the crust by pinching dough between your thumb and forefinger all the way around the edge. Cut holes in the top crust with a paring knife or poke holes with a fork to allow steam to escape. Beat the remaining egg, and brush the piecrust with the egg wash using a pastry brush or your fingers. Sprinkle the crust with the turbinado sugar. Bake until golden brown and the juices begin to bubble, about 1 hour.
  • Cool the pie for several hours before cutting and serving (if you can wait that long!).

2 tablespoons all-purpose flour

Steps:

  • In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Gradually add water, tossing with a fork until dough holds together when pressed. Divide dough in two portions so that one is slightly larger than the other; wrap each in plastic wrap. Refrigerate for 1 hour or until easy to handle., Preheat oven to 425°. In a large bowl, combine apples, sugar, lemon juice, flour, salt, cinnamon and nutmeg., On a lightly floured surface, roll out larger portion of dough to 1/8-in. thick circle. Transfer to a 9-in. pie plate, trimming even with edge. Fill with apple mixture, mounding in the center. Dot apples with butter. Lightly brush rim of pastry with some of the beaten egg., Roll out remaining dough to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush top with egg; sprinkle with superfine sugar. Place on a foil-lined 15x10x1-in. baking pan., Bake 20 minutes. Reduce heat to 375°. 1 teaspoon salt
1 cup shortening
4 egg yolks
8 tablespoons cold water, or more as needed
2 tablespoons lemon juice
7 cups finely chopped apples
2 cups white sugar
¼ cup all-purpose flour
2 teaspoons ground cinnamon
1 tablespoon milk, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine 4 cups flour, baking powder, and salt in a large bowl. Cut in shortening with a fork until coarse crumbs form.
  • Whisk egg yolks, cold water, and lemon juice together in another bowl. Stir into flour mixture with a fork until dough comes together into a ball; divide in half. Roll out 1 half and press into the bottom of a 10x15-inch baking pan.

Steps:

Divide dough in half; form each into a disk. Wrap separately in plastic wrap; refrigerate 1 hour or until easy to handle., Meanwhile, in a large skillet, heat butter over medium heat. Add apples; cook and stir 5 minutes. Mix brown sugar, cornstarch and cinnamon; add to apples. Cook and stir until apples begin to soften and caramelize, 7-8 minutes longer. Remove from heat; stir in lemon juice and vanilla. Cool completely., Preheat oven to 400°. On a lightly floured surface, roll one portion of dough to 1/8-in. thickness. Cut 12 footballs with a floured 4-in. football-shaped cookie cutter., Transfer half of the footballs to a parchment-lined baking sheet. Spoon about 2 tablespoons filling onto center of each. Brush edges of pastry with egg. Top with remaining footballs; press edges with a fork to seal. Cut three slits in top of pastry and score a curved line on each end of the footballs. Brush tops with egg; sprinkle with coarse sugar., Bake until golden brown, 15-20 minutes. Here's a drink that's great to take on camping trips with good friends, perfect for sharing around the campfire. This is my own recipe that we take to SCA camping events in the Pacific Northwest (other folks have their "secret" recipes they don't share). You know you have good Apple Pie when you take a sip and you can even taste the crust. :) You don't want to miss out on this one!

16 ounces organic apple juice
8 ounces absolut red label vodka (100 proof)
4 ounces vanilla Schnapps
8 ounces butterscotch schnapps
1/2 teaspoon lemon juice
1/4 teaspoon apple pie spice
2 cinnamon sticks

Steps:

  • Mix together liquid ingredients; stir in apple pie spice.
  • Pour into a 32 oz bottle, add the cinnamon sticks, and refrigerate for at least a week before serving. (We often just store it in our cool garage, which works fine.).
  • Apple Pie is a group drink, often shared straight out of the bottle with folks all sitting around the campfire.
  • Notes: if you'd like your apple pie somewhat less sweet, add some more organic cider and/or regular apple cider to it, to taste. Also, you can use regular apple cider for the entire amount rather than organic, if you need to, but the organic has a different flavor and a much different "mouth feel" because it has more pulp in it. Get and use the organic, if you can.
  • Note #2: Absolut Red Label has gotten more difficult to find these days. Try to use higher proof vodka if you can, but if the Red Label is too expensive or unavailable, you can substitute another equal quality high proof vodka. Potato vodka can also be used, but check the taste before using to make sure it's something you like the taste of and that it's not too sweet for you. Higher proof is generally drier in taste.
