I had apples and ricotta cheese to use up, so instead of making a pie I decided to do something different. The result was these fluffy, tender waffles with just a hint of sweetness. -Teri Rasey, Cadillac, Michigan

1/4 cup butter
6 medium apples, peeled and chopped
2 tablespoons sugar
1 tablespoon honey
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
WAFFLES:
2 cups all-purpose flour
2 tablespoons quick-cooking grits
1 tablespoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
2 cups buttermilk
1 cup reduced-fat ricotta cheese
1/2 cup canola oil
2 teaspoons vanilla extract
1-1/2 cups fat-free vanilla Greek yogurt
Fresh blueberries, optional

Steps:

  • In a large skillet, melt butter over medium-high heat. Add apples, sugar, honey, cinnamon and vanilla; cook and stir until apples are crisp-tender, 10-12 minutes. Remove from heat and keep warm., Preheat waffle iron. In a large bowl, whisk flour, grits, cornstarch, baking soda and salt. In another bowl, whisk eggs, buttermilk, ricotta, oil and vanilla until blended. Add to dry ingredients; stir just until moistened., Bake waffles according to manufacturer's directions until golden brown. Serve with apple topping, yogurt and, if desired, blueberries.

A real hit in the house at breakfast time. These waffles smell and taste like an apple pie. Serve with real maple syrup or even vanilla ice cream!

1 ¾ cups whole wheat flour
½ cup wheat bran
½ teaspoon salt
1 teaspoon apple pie spice
¾ cup water
1 teaspoon honey
2 teaspoons active dry yeast
2 medium apples, grated
3 tablespoons applesauce
1 cup skim milk
2 egg whites

Steps:

  • In a medium bowl, stir together the flour, wheat bran, salt and apple pie spice. Set aside. In a separate bowl, stir together the water and honey. Sprinkle the yeast over the surface, and let stand for about 5 minutes to dissolve.
  • When the yeast has dissolved, stir in the apples, applesauce, milk and egg whites until well blended. Stir this mixture into the dry ingredients. Cover, and let rest for about 15 minutes.
  • Heat the waffle iron, and coat with cooking spray. Spoon the waffle batter onto the iron in the amount recommended by the manufacturer. Close the iron, and cook for about 7 minutes, or until the steam stops coming out and the waffle can be easily removed. Continue with remaining batter.

My DD went apple picking and brought me a nice bunch of organic apples. This can top ice cream waffles, pan cakes, french toast. Make an apple pie with it or stuff puff pastry with it. Pour it over a hot ricotta cheese cake.

Number Of Ingredients 12

4 cups sugar
1 cup cornstarch
1 tablespoon cinnamon
1/2 vanilla bean, split and scraped
9 cups water
1 cup butterscotch schnapps
1/4 cup bottled lemon juice
1 teaspoon lemon zest
9 lbs apples, peeled, cored and sliced
3 cloves (optional)
1/2 teaspoon cardamom (optional)
1/2 teaspoon ground nutmeg (optional)

Steps:

  • In a large pot place first 5 ingredients and optional spices, bring to a boil and cook till thick and bubbly. Stirring so it doesn`t stick to the bottom and burn.
  • Meanwhile pack 4-6 sliced apples in sterilized quart jars.
  • Remove from heat and add the lemon juice and zest and buttershots.
  • Pour over apples removing as much air as you can. This is thick so use a butter knife to help it seep down to the bottom. Leaving 1 inch head space.
  • Wipe rims and place hot lids and screw tops on.
  • Process in a water bath for 25 minutes.
  • Optional packing:.
  • Mix apple slices into the syrup then pack.

Crispy on the outside, soft on the inside, with a little crunch from the pecans. Keep waffles warm in the oven as they complete cooking and come off the waffle iron. The ricotta adds tenderness, richness, and great texture to the waffles. Breakfast, brunch, or breakfast-for-dinner never looked better! Serve with butter, maple syrup, and additional pecans, if desired.

  • Combine buttermilk, ricotta cheese, and eggs in a large bowl; blend with an electric mixer until smooth. Stir in melted butter and maple extract. Add flour mixture to buttermilk mixture and stir until just combined but still lumpy; don't overmix or the waffles will be tough and chewy.
  • Lightly spray the waffle iron grids with cooking spray, if needed, following the manufacturer's instructions for cooking. Add about 1 cup of batter depending on the size of your waffle iron, spreading evenly, and sprinkle batter with about 2 to 3 tablespoons pecans.
  • Cook until golden brown, 3 to 5 minutes, making sure the waffle is fully cooked before lifting the lid (the steam slows down once the waffles are done).
