1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
1 cup half-and-half
1/2 cup (1 stick) unsalted butter, melted
2 cups mixed berries (blackberry, raspberry and blueberry work well)
1/2 cup brown sugar
1 tablespoon freshly squeezed lemon juice
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
3 small Golden Delicious apples, peeled and sliced (about 3 cups)

Steps:

  • Preheat the oven to 375 degrees F.
  • Whisk together the flour, baking powder, salt and 1 cup granulated sugar in a bowl. Stir in the half-and-half, mixing just until combined.
  • Add the butter to a 9-by-13-inch baking dish, tilting to coat evenly. Pour the batter over the butter in the baking dish, then set aside.
  • Bring the berries, brown sugar, lemon juice, cinnamon, nutmeg, apples, 2 tablespoons water and the remaining 1/2 cup granulated sugar to a boil. Cook for 2 minutes more. Pour the fruit and syrup over the batter in the baking dish without disturbing the batter layer.
  • Bake until golden brown and puffed on top, 45 to 50 minutes. Let cool slightly before serving.

450g rhubarb , cut into 3cm slices
350g apples (Bramley or Granny Smith work well), peeled and cut into 3cm chunks
1 vanilla pod , split open or 1 tsp vanilla paste or extract
120g golden caster sugar
ice cream or custard, to serve
200g plain flour
1 tsp ground ginger (optional)
100g cold salted butter , chopped
70g light soft brown sugar

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Toss the rhubarb, apples, vanilla and sugar together in an ovenproof dish and roast for 10 mins.
  • Mix the flour and ginger, if using, together in a large bowl. Rub in the butter with your fingertips to create a chunky breadcrumb textured mixture. Stir through the sugar. Sprinkle the crumble topping onto the fruit and cook for a further 30-35 mins or until the topping is lightly golden brown. Serve with ice cream or custard.

2 cups rhubarb

Steps:

  • Make topping: In large bowl, combine flour, oats, sugar. With fork mix in butter to make a crumbly mixture.
  • In lightly greased 8x8x2 dish, combine all filling ingredients. Add 1/4 cup water; stir to mix.
  • Sprinkle topping over mixture.
  • Bake at 350°F for 30 minutes.

1 cup diced rhubarb

1 tablespoon sugar
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, cut into 1/4-inch pieces and chilled
2 tablespoons vegetable shortening, chilled
3 tablespoons ice water, or as needed
1/2 pound rhubarb (2 stalks), peeled and cut into 1-inch thick slices
2 apples, peeled and cut into 1-inch pieces
1 tablespoon extra-virgin olive oil
5 tablespoons sugar
1/4 cup water
1 tablespoon all-purpose flour
1 teaspoon finely grated lemon zest
Pinch table salt
1 1/2 teaspoons unsalted butter, cut into slivers
Vanilla ice cream, for serving

Steps:

  • Crust: Sift the flour, sugar, and salt into a large bowl. Add the butter and shortening. Rub the fats between your fingertips and thumbs, or use a pastry blender, until the mixture resembles coarse crumbs. One tablespoon at a time, work in enough ice water just until the dough comes together, being careful not to overmix.
  • Shape into a smooth ball of dough, flatten into a disk, and wrap in plastic wrap. Refrigerate for at least 30 minutes and up to 2 days.
  • Cobbler: Preheat oven to 350 degrees F.
  • To prepare the cobbler, place the rhubarb and apples in a large, heavy saucepan. Add olive oil, 1 tablespoon sugar and water. 2 apples, peeled, cored and sliced
2 cups raspberries (or 1 cup raspberries and 1 cup Marion berries)
1/2 cup water
1 cup frozen rhubarb, cut in small pieces
1 cup sugar
2 drops red food coloring
1 teaspoon vanilla
1/2 teaspoon salt
2 dashes cinnamon
1 1/2 cups flour
1 cup sugar
4 teaspoons baking powder
1 1/4 cups milk
1 dash salt

Steps:

  • Preheat oven 375°F.
  • In large saucepan,margarine, rhubarb, sugar food coloring, vanilla, salt and cinnamon and water. Cook medium heat for about 10 to 15 minutes.
  • Then add sliced apples and stir. Fold in berries and cook until hot.
  • In mixing bowl add flour,sugar, baking powder, dash of salt and milk.
  • In 9 X 13 pan pour hot margarine and fruit mixture.
  • Tip the mixing bowl and pour in a drizzle fashion long lines of batter, some will sink to the bottom because the fruit mixture is hot. That is fine, it will come back up.
  • Bake 40 to 45 minutes.
  • Serve with whipped topping or vanilla ice cream.
