3 oz cream cheese, softened

1 large Granny Smith apple, peeled, cored and chopped (2 cups)
2 tablespoons butter, softened
1 cup powdered sugar
3 tablespoons butterscotch topping
2 tablespoons milk
Dried apple slices, if desired

Steps:

  • Heat oven to 325°F. Generously spray 10- or 12-cup fluted tube cake pan.
  • In large bowl, beat all Cake ingredients except apples with electric mixer on low speed 1 minute, scraping bowl constantly. Increase speed to medium; beat 2 minutes. Stir in apples. Pour into pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; turn upside down onto cooling rack or heatproof serving plate, and remove pan. Cool completely, about 1 hour. Place cake on serving plate.
  • In medium bowl, beat Butterscotch Glaze ingredients with electric mixer on medium speed about 1 minute or until smooth and well combined. Drizzle on top of cake. Garnish with dried apple slices.

½ cup brown sugar

1 (15.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant butterscotch pudding mix
1 cup sour cream
½ cup water
¼ cup vegetable oil
3 large eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch Bundt® pan.
  • Toss apples, cinnamon, brown sugar, and nutmeg together in a bowl.
  • Combine cake mix, pudding mix, sour cream, water, vegetable oil, and eggs in a large mixing bowl. Mix on low speed with an electric mixer until completely blended, 1 to 2 minutes. Pour 2/3 of the batter into the prepared pan.

2 teaspoons orange zest

Brown Sugar Glaze (recipe follows)
Garnish: Miniature Caramel Apples (see how-to above)
1⁄2 cup firmly packed dark brown sugar
3 tablespoons apple cider
2 tablespoons unsalted butter
1 tablespoon dark corn syrup
1⁄8 teaspoon salt
1 cup confectioners' sugar, sifted

Steps:

  • Preheat oven to 325°. Spray a 15-cup Bundt pan with nonstick baking spray with flour. Set aside. In a large bowl, whisk together flour, apple pie spice, salt, baking powder, and baking soda. In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy, stopping occasionally to scrape sides of bowl. Add eggs, one at a time, beating until combined. With mixer on low speed, gradually add flour mixture, beating until combined. Add apple, zest, and vanilla, beating until combined. Fold in pecans. (Batter will be thick).   • In a small saucepan, bring brown sugar, cider, butter, corn syrup, and salt to a boil over medium-high heat. Reduce heat to medium-low; cook 1 minute. Remove from heat. Add confectioners' sugar; beat at low speed with an electric mixer 1 minute. Let cool 3 minutes before using.

1 (21 ounce) can apple pie filling
2 teaspoons ground cinnamon
3 eggs, lightly beaten

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a Bundt cake pan.
  • I use Bakers Joy spray.
  • Put apple pie filling in large bowl and chop large pieces of apple into small pieces.
  • Add spice cake mix, ground cinnamon and the 3 beaten eggs.
