A delicious way to eat an apple a day-stuffed with peanut butter or cheese!

2 medium apples
4 tablespoons peanut butter, process cheese dip or sauce, or cream cheese

Steps:

  • Wash apples; remove core, leaving apples whole. Fill center of each apple with about 2 tablespoons peanut butter, packing gently. Wrap each tightly in plastic wrap. Refrigerate until filling is set, about 30 minutes.
  • Cut each apple crosswise into 1/2-inch-thick slices. Divide slices into 4 portions; wrap each portion tightly in plastic wrap. Refrigerate until serving time.

1 Granny Smith apple, skin on, cored and sliced crosswise
1 red apple skin on, cored and sliced crosswise (see Cook's Note)
1/4 cup crunchy peanut butter
1/2 cup granola
1 tablespoon Cinnamon Sugar, recipe follows
1/2 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Spread all the apple slices except the top slice with peanut butter.
  • Sprinkle granola and cinnamon sugar over the peanut butter.
  • Stack the apples, alternating between red and green slices.
  • Wrap tightly in plastic wrap and refrigerate until ready to eat.
  • Mix sugar and cinnamon together until blended.

4 strips bacon
2 teaspoons unsalted butter
8 dry-packed sea scallops, tough muscles removed
1/4 teaspoon kosher salt
1/8 teaspoon cayenne pepper
3/4 cup Crown Royal® Maple Finished Whiskey
1 1/2 teaspoons packed dark brown sugar
1 small tart apple, such as Granny Smith, halved, cored, and cut into 12 thin slices
1/4 small red onion, very thinly sliced

Steps:

  • 1. In a large skillet, cook the bacon over medium heat, turning occasionally, until browned and crisp, about 8 minutes. Drain on paper towels.
  • 2. While the bacon cooks, pat the scallops dry and sprinkle with the salt and cayenne. To the bacon fat in the pan, add the butter and turn the heat to high. When the butter foam subsides, add the scallops in a single layer. Cook, turning once, until nicely browned and just opaque throughout, about 2 minutes. Transfer to a plate.
  • 3. Drain any remaining fat from the skillet. Add the Crown Royal® Maple Finished Whiskey and boil, stirring and scraping the browned bits from the pan, until reduced to 3 tablespoons, about 5 minutes. Stir in the sugar until the mixture becomes syrupy and thick, about 1 minute, then turn the heat to low. Break each strip of bacon in half and add to the syrup. Cook, turning, until well coated and caramelized.
  • 4. On each apple slice, stack a scallop and a piece of bacon. Garnish with red onion slices and serve.

1 cup dried apples
1 cup chopped pecans
½ cup shredded or flaked coconut
⅓ cup currants
3 eggs
¼ cup brown sugar
1 teaspoon vanilla extract
½ cup butter
2 cups apple butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease bottoms of two 9 inch round layer cake pans.
  • In a large bowl, mix the spice cake mix, dried apples, pecans, coconut, currants, eggs, brown sugar, vanilla extract and butter. Pour the mixture into the cake pans.
  • Bake in the preheated oven 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
  • Split each cake layer into four sections. Spread apple butter between the sections and reassemble layers.

2 tablespoons unsalted butter
2 (1/4-inch-thick) baked ham slices, quartered
1 large shallot, finely chopped
2 teaspoons cider vinegar
1/2 cup apple juice
1 1/2 tablespoons whole-grain mustard
1/2 tablespoon Dijon mustard, or to taste
Pinch of ground cloves

Steps:

  • Preheat oven to 250°F.
  • Core whole apple (without peeling) and cut 8 (1/4-inch-thick) rounds.
  • Heat 1 tablespoon butter in a 12-inch nonstick skillet over moderately high heat, then sauté ham, turning once, until browned, 5 to 6 minutes total. Transfer ham to a heatproof dish and keep warm, loosely covered with foil, in oven. Add remaining tablespoon butter to skillet and sauté apple slices, turning once, until golden and tender, 4 minutes total. Top each piece of ham with an apple slice and continue layering, using all of ham and apple slices, to make 2 stacks. Keep warm in oven.
  • Add shallot to skillet and sauté over moderately high heat, stirring, until golden. Add vinegar and cook, stirring, 10 seconds, or until absorbed by shallots. Add apple juice and boil until reduced by half. Add mustards and cloves and boil until mixture is slightly thickened and syrupy. Serve stacks with sauce.

16 ounces dried apples, chopped
5 cups water
1 cup packed brown sugar
2 teaspoons apple pie spice
1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
6 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1/2 cup buttermilk
Confectioners' sugar, optional

Steps:

  • Place apples and water in a 6-qt. stockpot; bring to a boil. Reduce heat; simmer, uncovered, 40-45 minutes or until apples are softened, stirring occasionally. Mash into a chunky sauce. Stir in brown sugar and pie spice; simmer, uncovered, 10-15 minutes longer or until liquid is absorbed and sauce is thickened. Cool completely., Preheat oven to 400°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder and baking soda; add to creamed mixture alternately with buttermilk, beating well after each addition., Divide dough into 8 portions; shape each into a disk. Cut out eight 9-in. circles of parchment. With a floured rolling pin, roll out a dough disk to fit each parchment circle. Transfer to baking sheets. Bake until golden brown, 10-12 minutes. Remove from pans to wire racks to cool completely., Place1 layer on a serving plate; spread with 2/3 cup filling. Repeat layers. Top with remaining cake layer, wrap tightly in plastic wrap; refrigerate 1-2 days or until layers soften. If desired, sprinkle cake with confectioner's sugar.

1 lb dried apple
1 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground nutmeg
4 cups water
5 cups all-purpose flour, plus more for dusting
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
¾ cup unsalted butter, 1 1/2 sticks, room temperature
1 cup granulated sugar
2 large eggs
1 cup molasses
1 cup buttermilk
powdered sugar, for serving

Steps:

  • Make the apple filling: Combine the dried apples, brown sugar, cinnamon, ginger, nutmeg, and water in a large pot over medium-high heat. Bring to a light boil, then reduce the heat to low. Cook for 30 minutes-1 hour, or until the apples are tender and have absorbed the liquid.
  • Mash the apples with a potato masher until no large chunks remain. Remove from the heat and let cool.
  • Make the cake: In a large bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
  • In a separate large bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs and molasses, and whisk until fully incorporated and the mixture is light brown.
  • Add ⅓ of the flour mixture to the wet ingredients and fold with a spatula until fully incorporated. Add half of the buttermilk and stir until fully combined. Continue alternating with the remaining flour and buttermilk, fully incorporating each addition before adding the next. The batter will be thicker than a traditional cake batter.
  • Chill the cake batter for 30 minutes.
  • Preheat the oven to 350˚F (180˚C). Grease as many 9-inch (22-cm) cake pans as you have and line with parchment paper.
  • Dump the cake batter onto a floured surface and dust with more flour. Pat into a rectangle, then divide into 5 equal pieces.
  • Transfer a piece of cake batter to a prepared pan and pat into an even layer. Bake for 12 minutes, until firm. Repeat with the remaining layers. Let cool completely.
  • To assemble, add a cake layer to a serving plate and top with a layer of apple filling. Spread evenly. Repeat with the remaining cake layers and filling.
  • Wrap the cake in plastic wrap and chill for 24 hours.
  • Dust the cake with powdered sugar, then slice and serve.
  • Enjoy!
