Categories     Desserts     Fruit Dessert Recipes     Apple Dessert Recipes

Yield 8

Number Of Ingredients 5

5 cups thinly sliced apples
1 cup white sugar
2 tablespoons quick-cooking tapioca
½ teaspoon ground cinnamon
1 teaspoon lemon juice

Steps:

  • Combine apples and sugar in a large saucepan. Mix together, then let stand until juice starts to be released from apples. Place over medium-high heat and stir frequently until mixture comes to a boil. Boil hard 1 minute, continuing to stir frequently.
  • Mix tapioca, cinnamon, and lemon juice into apples. Boil hard for 1 minute more, continuing to stir. Pack mixture into a sterilized quart jar, a spoonful at a time, ensuring that there are no air bubbles in mixture. Secure sterilized lid.
  • Place a rack in the bottom of a large stock pot and fill halfway with boiling water. Carefully lower jar into pot using a holder. If processing more than one jar, leave a 2 inch space between jars. Add more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid doesn't move up or down at all). Can be stored up to one year.

TAPIOCA WITH STEWED APPLES AND APRICOTS

Tapioca with Stewed Apples and Apricots image

Provided by Sophie Dahl

Yield Makes 4 servings

Number Of Ingredients 12

1/2 cup/70 g tapioca (soaked overnight in plenty of water)
1 1/3 cups/350 ml milk
1 teaspoon vanilla extract
1 tablespoon butter, plus more as needed
2 tablespoons runny honey, agave nectar, or brown sugar
For the Apples and Apricots:
12 dried apricots (like the tapioca, soaked overnight, but in about 1 cup/250 ml orange juice)
1 cup/250 ml or so water
1 cinnamon stick
A few tablespoons of orange juice
1 tablespoon agave nectar or honey
2 eating apples, peeled, cored, and sliced

Steps:

  • Having soaked the tapioca overnight, drain and place it in a saucepan with the milk, vanilla extract, and butter. Bring to a boil, turn to low, and simmer, stirring in the honey, agave, or sugar, for another 10 minutes.
  • Cut your overnight magically plumped apricots into halves or quarters, if desired. In another saucepan, place the water, cinnamon, orange juice, agave or honey, and apples and bring to a boil, giving it a good stir now and then. Simmer for about 10 to 15 minutes, or until the apples are tender.
  • Now, here you can do one of two things. Serve the stewed fruit as is on top of the tapioca or put the tapioca in a small ovenproof dish with another tablespoon of butter, pour the apples and apricots on top, and bake at 350°F/180°C for 15 or so minutes. The choice, Cilla, is yours.

REFRESHING APPLE TAPIOCA PUDDING

Refreshing Apple Tapioca Pudding image

This recipe comes from a magazine from Quebec. It's healthy. In the cooking time, I included the 2 hours in the fridge. I tried it last week and liked it a lot. I used homemade applesauce (unsweetened). I used more cinnamon and omitted the nutmeg. I guess splenda would be great instead of brown sugar to make it healthier. And I used 1% fat milk.

Top Asked Questions

How do you make apple juice with tapioca?
Mix tapioca, cinnamon, and lemon juice into apples. Boil hard for 1 minute more, continuing to stir. Pack mixture into a sterilized quart jar, a spoonful at a time, ensuring that there are no air bubbles in mixture.
How much tapioca do you use for canning apples?
I love it and have used it for over 20 years canning for the winter. The canning portions for this one is 10 pounds apples, apricots or peaches, 1 cup plus 2 tablespoons quick cooking tapioca, 1 1/2 cups sugar, 3/4 cup lemon juice, 4 cups sugar, water.
Can I use tapioca in apple pie filling?
Really like this filling. My mother always used tapioca in her berry pies, but I had never heard of using it in apple pies before. I did add a bit of water only because my apples were not producing much liquid. Not sure what I did wrong but it turned out great. Will use this recipe over and over again.
How good is tapioca flour for apple crisp?
Very, very good. I used tapioca flour instead of quick cooking and it came out thick and delicous. I used it almost immediately and refrigerated the rest. The apples were cooked but still intact, the cinnamon was less evident than we like so I doubled it. Thanks Karen for the recipe!
