DYNAMITE SHRIMP RECIPE
Dynamite shrimp, made with a crunchy batter, and smothered in creamy spiciness and a bold flavor.

Steps:
- Whisk together in a mixing bowl the mayonnaise, sugar and hot sauce.Set the sauce aside.
- In a shallow bowl, mix together the flour, cornstarch, baking powder, salt and pepper.
- Dredge the shrimp through the dry mixture, coating well.
- Place coated shrimp on a tray lined with parchment paper, and set aside.
- Add the beer to the dry mixture and whisk well to create a batter consistency, add water if too thick.
- Heat vegetable oil to 350ºF (175ºC).
- Dip and coat shrimp in the batter.
- Fry the battered shrimp in the hot oil 3 to 5 minutes until golden brown.
- Remove shrimp and place on paper towels to remove excess oil.
- Toss the shrimp with the sauce until well coated.
- Let sit for two minutes, and serve.

Steps:
- Prepare Applebee's Dynamite Sauce according to recipe below. Set aside.
- Cover a large plate with several layers of paper towels. Set aside.
- Butterfly shrimp by cutting vertically down the back of the shrimp. Leave tails on.
- Season shrimp with salt, pepper and seasoning salt.
- Place panko crumbs in a shallow dish. Season with salt, pepper and seasoning salt to taste. Mix well.
- Put flour in a second shallow dish.
- In a small bowl, beat eggs and water together with a spoon or whisk.
- Heat enough oil to deep fry the shrimp in a skillet to 350°F.
- While oil is heating, dip prepared shrimp, 2 or 3 at a time, in the egg-water mixture.
- Add shrimp to the flour. Toss to coat.
- Dip again in egg-water mixture.
- Toss shrimp in panko crumbs.
- Repeat until all shrimp are coated.
- Place shrimp, a few at a time, in the hot skillet. Fry until golden, about 3 minutes. You may have to turn the shrimp to evenly brown them.
- Place cooked shrimp on a paper towel-covered plate to drain and continue frying until all shrimp are done. Keep shrimp warm while frying batches of shrimp.
- Remove skillet from heat and carefully wipe out with a dry paper towel (alternately use a new skillet or a wok.)
- Add teaspoon of oil and place over high heat.
- When hot, add prepared Applebee's Dynamite Sauce. Simmer for 1 minute to thicken.
- Add fried shrimp. Toss to coat fully and cook for 1 minute more.
- Serve hot.

Steps:
- Heat a pot of oil to 375 degrees, at least 3 inches high.
- Mix together the flour, cornstarch, baking powder, salt and pepper then dredge the shrimp in it and dust off the excess amount.
- Whisk the club soda into the flour mixture then dip the shrimp into it and fry them immediately until golden brown, about 2-3 minutes.
- Whisk together the mayonnaise, sugar and sriracha and toss with the freshly fried shrimp before serving.
