APPLE CAKE WITH LEMON SAUCE
I make this delicious apple cake with the apples we get from a local orchard. Growers here in Ohio produce a wide variety of apples, and they're all good!

- For cake, beat eggs; add sugar, oil and vanilla. In separate bowl, combine the flour, soda, cinnamon and salt. Add flour mixture to egg mixture all at once; blend and stir. Add apples, nuts and raisins to mixture; blend well. Pour batter into well-greased 11x7-in. baking pan (13x9-in. baking pan may be used); decrease baking time by 15-20 minutes. Bake at 375° for 55 minutes or until a toothpick inserted in the center comes out clean., For sauce, grate peel from lemon; measure out 1-1/2 teaspoons rind. Squeeze lemon; measure 3 tablespoons juice. Set aside. Beat egg yolks lightly; set aside. In separate bowl, blend sugar, cornstarch and salt. Measure water into saucepan; gradually stir in sugar mixture. Cook, stirring, until mixture boils clear and thickens. Remove from heat. Beat small amount of hot mixture into egg yolks. Return yolk mixture to saucepan; cook and stir about 2 minutes. Remove from heat; add lemon peel, juice and butter. Pour sauce over cake.

CLASSIC APPLESAUCE
McIntosh apples make a traditional applesauce, but using a mix of varieties gives dimension. You can stir in up to three tablespoons dark-brown sugar, if you like.

- Peel, core, and slice apples.
- In a large pot, bring apples, lemon juice, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
- Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
- Let cool, then transfer applesauce to airtight containers.

- Flatten chicken to 1/4-in. thickness. In a shallow bowl, combine 4 tablespoons flour, cheese, 1/2 teaspoon salt and 1/4 teaspoon pepper. In another shallow bowl, beat the eggs. Coat chicken with flour, then dip into egg mixture., In a large skillet, cook chicken in 1 tablespoon butter and oil over medium heat for 3-5 minutes on each side or until no longer pink. Remove and keep warm., In a small bowl, combine remaining, salt and pepper; stir in broth until smooth. Add apple juice to the skillet, stirring to loosen any browned bits. Stir broth mixture and add to the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened., Stir in lemon juice; cook for 1 minute. Add parsley and remaining butter; cook and stir until butter is melted. Serve with chicken.

- Place apples in a large saucepan and just barely cover with water. Simmer over medium-low heat until apples are tender, 15 to 20 minutes.
- Run cooked apples through a food mill or blender. Stir in the sugar and lemon juice. Cook over medium heat for about 3 to 5 minutes.

GINGERBREAD APPLE COBBLER WITH LEMON SAUCE
Just in time for Fall, this is the one recipe I HAVE to make every Fall. Don't let the large amount of ingredients. (Sometimes I speed things up by using 2 cans of apple pie filling instead of the apples, brown sugar, lemon juice and cinnamon.) It's great with hot cider. Adding a scoop of vanilla ice cream puts it over the top. =)

- 1. CAKE.
- 2. Combine apples, brown sugar, 1 cup water, lemon juice and cinnamon. Cover and cook til apples are tender.
- 3. Beat together the sugar, egg, buttermilk, mollasses and oil. Set aside.
- 4. In a big bowl, stir together flour, baking soda, baking powder, spices, and 1/4 tsp salt.
- 5. Add the egg mixture to the dry mix and beat til smooth.
- 6. Combine cornstarch and 1 T cold water. Stir into apple mixture.
- 7. Pour into a 1 1/2 qt casserole. Spoon gingerbread mix atop apples.
- 8. Bake 350 degrees for 30 minutes.
- 9. (Can cook apple mixture in MW. Cook on High for 10-12 minutes, stirring 3 times during cooking.).
- 10. While cake is cooking make the Lemon Sauce.
- 11. LEMON SAUCE Makes 1 cup.
- 12. In saucepan mix sugar, cornstarch, nutmeg, and dash salt. Gradually stir in 1 cup water.
- 13. Cook and stir over low heat until thickened. Stir half of the hot mixture into egg yolks; return to pan.
- 14. Cook and stir 1 minute. Remove from heat; blend in the butter, lemon peel and lemon juice. (When grating lemon peel, make sure you don't include any of the bitter white part).
- 15. Spoon over hot gingerbread cobbler.

APPLE SAUCE TART

- Preheat oven to 450 degrees.
- Coarsely chop apples and place in a large heavy saucepan. Cover tightly and cook very slowly for about 20 minutes, until the apples have steamed in their juices and are tender.
- While the apples are cooking, line a nine-inch straight-sided tart pan with the pastry, prick it and line it with foil weighted with dry beans or pastry weights. Bake six minutes, until the pastry looks like parchment. Remove the foil and bake about five minutes longer, until the pastry just begins to color. Remove from oven and reduce temperature to 350 degrees.
- Force the apples through a sieve or a food mill. You should have two cups of apple sauce. Add butter to the hot apple sauce bit by bit, then add lemon rind, season with nutmeg and sweeten, using more or less sugar to make an apple sauce that is pleasantly sweet but not cloying. Add the vanilla.
- Beat the eggs in until beginning to froth and stir into the apple sauce. Pour into prepared tart pan and bake about 45 minutes, until the custard has set. Serve with whipped cream.
APPLE BROWN BETTY WITH LEMON SAUCE
Another recipe cut from a magazine years ago. "Raisin bread is the secret in this tasty version of an old favorite. It's grand with the Lemon Sauce, but not too shabby topped with cream or milk."

- Preheat oven to 350* F. Generously butter a 2-quart baking dish; set aside.
- Place half the bread into blender container. Cover and blend until bread is fine crumbs. Place in a bowl. Repeat with remaining bread. Stir sugar, cinnamon and melted butter into crumbs.
- Toss chopped apples with lemon juice to coat. Place half the apples in the bottom of the prepared dish. Top with half the bread mixture. Spoon on the remaining apples. Cover dish with foil and bake 40 minutes.
- Remove foil, add remaining bread crumbs and continue baking 20 more minutes or until the apples are completely tender. (Makes 8 servings, about 250 calories each.).
- Hot Lemon Sauce: In small saucepan combine sugar and cornstarch. Gradually stir water into sugar. Cook, stirring, over low heat until thickened and clear. Add butter, lemon peel and juice. Stir until butter melts. Remove from heat. Serve warm with Apple Brown Betty. (To reheat sauce, warm over low heat.) Makes 1 1/2 cups; 30 calories per tablespoon.
