Bars:
2 cups all-purpose flour (feel free to substitute up to half with whole wheat flour)
1 and 1/2 cups sugar
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground cloves
4 eggs, beaten
2 and 1/2 cups unsweetened applesauce
1/2 cup canola or vegetable oil
Frosting:
4 oz. cream cheese, softened
3 Tbls. butter, softened
1 tsp. vanilla
3 About 3 cups of powdered sugar (or more or less to taste

Steps:

  • For the bars: In a large bowl, whisk together dry ingredients. Stir in eggs, applesauce, and oil until combined. Spread into an ungreased 15x10x1-inch baking pan (like a cookie sheet in rim or jelly roll pan). Bake at 350 for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely, then spread with cream cheese frosting. Frosting: In a large bowl, stir together cream cheese and butter until very soft and thoroughly mixed. Stir in vanilla. Gradually add powdered sugar, stirring well after each addition. Spread on cooled bars.

These are my mom's super moist dense bars full of applesauce, cinnamon, allspice, nutmeg, and cloves topped with a lucious cream cheese frosting. These were a favorite of mine as a child and I still love em'! These are baked in a half sheet pan.

1 cup shortening
2 1/4 cups sugar
3 eggs, beaten well
3 3/4 cups applesauce (I use unsweetened)
4 1/2 cups flour
3 teaspoons cinnamon
3 teaspoons allspice
1 1/2 teaspoons nutmeg
2 1/4 teaspoons cloves
2 1/4 teaspoons baking soda
3/4 cup butter, softened
12 ounces cream cheese, softened
1 1/2 lbs powdered sugar
3 teaspoons vanilla

Steps:

  • Cream shortening and sugar.
  • Add rest of ingredients and mix well.
  • Pour batter into a greased half sheet pan and bake at 375* for 20-30 min or until a toothpick inserted in the middle comes out clean. Allow to cool completely then frost.
  • ***My mom always cut these into rectangle shaped bars about 1 1/2" by 3".***.

1/4 teaspoon ground cloves
1 cup golden raisins
GLAZE:
1 cup confectioners' sugar
1 tablespoon butter, melted
1/2 teaspoon vanilla extract
2 to 3 tablespoons fat-free milk

Steps:

  • In a large bowl, beat the sugar, applesauce and oil until well blended. In a small bowl, combine the flour, baking powder, cinnamon, salt, baking soda, nutmeg and cloves; gradually beat into sugar mixture until blended. Stir in raisins. , Transfer to a 13x9-in. baking pan coated with cooking spray. I always make this frosting for my Carrots and Beets Cake. Together, they make the most wonderful and so rich in savor cake as well as a conversation piece. The cake is one of the most precious recipes I have since it comes from my grandmother.
