Applesauce Raisin Cake image

This cake is moist and delicious. I am from Washington state and this is my Mother's recipe. Great topped with caramel frosting!

4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 cup butter
2 cups white sugar
2 eggs
2 ½ cups applesauce
1 ½ cups chopped walnuts
2 cups raisins

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan. Mix together the flour, baking soda, cinnamon, cloves and nutmeg. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture alternately with the applesauce. Fold in the walnuts and raisins. Pour batter into prepared pan.
  • Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

3 large eggs
1 1/3 cups applesauce
1/2 cup butter or margarine
1 tsp ground cinnamon
1/2 cup chopped walnuts
confectioner's sugar

Steps:

  • 1. Preheat oven to 375 °F. Grease and flour 10-inch Bundt® or tube pan. 2. Combine cake mix, eggs, applesauce, melted butter and cinnamon in large bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed for 4 minutes. Stir in walnuts. Pour into pan. 3. Bake at 375 °F for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan 25 minutes. Invert cake onto serving plate. Cool completely. Dust with confectioners' sugar. Also delicious using chopped pecans instead of walnuts.

1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
3 apples - peeled, cored and sliced
1 cup white sugar
1 cup brown sugar
1 ¼ cups vegetable oil
2 eggs
2 teaspoons vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, baking soda, cinnamon and salt. Set aside.
  • Combine the apples and the white sugar; set aside. In a large bowl, mix together the brown sugar, oil, eggs and vanilla. Stir in the apple mixture, then the flour mixture. Fold in the walnuts.
  • Pour batter into prepared pan. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

1/2 cup unsalted butter, room temperature
2 cups brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
2 cups applesauce
1/2 cup raisins
1 cup chopped walnuts
Powdered sugar, optional

Steps:

  • Preheat oven to 350 degrees F.
  • In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
  • In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.

1-1/2 cups applesauce
1/2 cup water
1/2 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. 1 cup sugar

3-1/2 cups all-purpose flour
2 teaspoons ground cloves
2 teaspoons ground nutmeg

Pinch salt
2 cups raisins
1 cup chopped walnuts
2 cups unsweetened applesauce

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, cloves, nutmeg, baking soda, cinnamon and salt. Remove 1/2 cup flour mixture to a small bowl; stir in raisins and nuts. , Add remaining flour mixture to the creamed mixture alternately with applesauce, beating well after each addition. Stir in raisin mixture. Pour batter into a greased and floured 10-in. fluted tube pan. , Bake at 350° for 65-75 minutes or until a toothpick inserted in the center comes out clean.
