APPLE STREUSEL MUFFIN
These apple streusel muffins are a delicious breakfast or afternoon snack. These are freezable and easy to make.

Steps:
- Preheat oven to 350F/170C. Grease or place muffin papers inside 12 muffin tin.
- To prepare streusel, in a medium bowl, combine brown sugar, apples, walnuts, flour and cinnamon. Stir in melted butter and set aside.
- For the crumble; in a small bowl, add all the ingredients: butter, flour and sugar. And with your fingertips work the butter into the flour and sugar to form coarse crumbles. Set aside.
- For the muffins, in a medium bowl, combine flour, baking powder and baking soda. Mix well. In a large bowl of standing mixer, set on medium speed and beat butter and sugar until light and fluffy (about 10 minutes).
- Add eggs, one at a time, beat well after each addition. Add vanilla. Set mixer to low, alternately beat flour mixture and apple juice into egg mixture.
- Spoon the batter into the 12 muffin tin and spoon on each muffin batter the streusel mixture, we prepared earlier. Bake for 15 minutes.
- Remove the muffin tin from the oven, sprinkle the top with the crumble and bake for another 15 minutes. Transfer to wire rack and let cool completely before enjoying them.

- Preheat oven to 375°. Whisk together first 5 ingredients. In another bowl, whisk together eggs, melted butter and vanilla; add to flour mixture, stirring just until moistened (batter will be stiff). Fold in apples. , Fill 12 greased or paper-lined muffin cups three-fourths full. For topping, mix brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. , Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack to cool. Mix glaze ingredients; drizzle over tops.

- Preheat the oven to 400 degrees F (200 degrees C). Grease the bottoms of 12 muffin cups or line with paper liners.
- Combine flour, white sugar, baking powder, cinnamon, nutmeg, and salt in a medium bowl; mix well.
- Combine apple cider, vegetable oil, and egg in another bowl; blend well. Add flour mixture all at once and stir just until moistened; batter will be lumpy. Stir in apples.
- Combine brown sugar, oats, pecans, and flour in a medium bowl for topping; mix well. Mix in melted butter until all ingredients are moistened and clumpy.
- Spoon batter into the prepared muffin cups, filling each 2/3 full. Top each with a generous amount of streusel topping.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 18 to 22 minutes. Let cool for 1 minute before removing from the pan. Serve warm.

- In a large bowl, combine the first six ingredients; stir in 1 cup cheddar cheese and Parmesan cheese. In a small bowl, beat the egg, buttermilk and oil; stir into dry ingredients just until moistened. Fold in apples. , Fill greased or paper-lined muffin cups three-fourths full. Sprinkle with the remaining cheddar cheese. Bake at 400° for 20-22 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

This is a combination of a couple of recipes. I wanted an apple muffin recipe with oatmeal in it and a streusel on top. I also had one with a caramel drizzle so I just combined the best of three recipes! This can be doubled.

Steps:
- Preheat oven to 400°F.
- Place oatmeal in a blender or processor for 2 min or till makes course flour.
- In a bowl combine first 7 ingredients (dry).
- Make a well in the center and add egg, milk and margarine, stir just till moist, don't over stir.
- Add apples.
- Fill greased muffin tins 2/3 full.
- Streusel:.
- Place all ingredients in a small bowl and blend with a fork.
- Sprinkle over tops of muffins.
- Bake 15-20 minutes or till tops test done.
- While they bake, place all caramel drizzle ingredients except powdered sugar in sauce pan and bring to a boil. Cook and stir 2 minutes.
- Remove from heat and blend in powdered sugar.
- Remove muffins from oven and then from pan.
- Place on wire rack and drizzle all with caramel drizzle. Cool and store in airtight container.

This is a recipe from an old Company's Coming recipe book of my mom's. It is so simple, uses up bruised apples, and tastes great. *Note* It is not a typo, it really is 1 tablespoon of baking powder.

- Topping: In small bowl rub together the first amounts of sugar, butter, cinnamon, and flour until crumbly.
- Set aside.
- Muffins: In large mixing bowl whisk together second amounts of flour, sugar, baking powder, and salt.
- Make a well in the center.
- In another bowl beat egg, milk, and cooking oil to blend.
- Stir in apple.
- Pour wet mixture into well of dry mixture.
- Stir just until moistened.
- Fill greased muffin cups 3/4 full.
- Sprinkle with topping.
- Bake in 400 F (200 C) oven for 15 to 20 minutes.

Steps:
- Heat oven to 400. Line muffin pan with 12 baking cups.
- Prepare Streusel Topping by cutting margarine into flour, brown sugar and cinnamon in a medium bowl using a pastry blender or crisscrossing two knives until crumbly. Set aside.
- Beat rice milk, oil, vanilla and applesauce in large bowl. Stir in shredded apple.
- Stir in flour, sugar, baking powder and salt all at once just until flour is moistened (batter will be lumpy).
- Divide batter evenly among muffin cups. Sprinkle each with about 2 tsps of Streusel Topping.
- Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to wire rack.

- Preheat oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners.
- Mix flour, baking soda, allspice, nutmeg, cinnamon, cloves, ginger, and salt together in a bowl.
- Beat shortening with an electric mixer in a separate large bowl until smooth; add honey and mix for 2 minutes. Stir flour mixture into shortening mixture, alternating with applesauce, until batter is smooth. Fold in raisins and walnuts. Spoon about 2 1/2 tablespoons batter into each muffin cup.
