Spices, chili sauce and apricot jam come together for a flavor-packed BBQ sauce with a sweet kick of heat.

2 tablespoons unsalted butter
2 tablespoons olive oil
4 onions
chopped
Kosher salt
Freshly ground black pepper
1 teaspoon Hungarian or hot paprika
8 cloves garlic
minced
½ cup packed dark brown sugar
1 cup apricot jam
1 cup ketchup
2 teaspoons Sriracha hot chili sauce
2 teaspoons apple cider vinegar

Steps:

  • Melt the butter with the oil in a large sauté pan over medium heat
  • Add the onions and season with salt and pepper
  • Cook until tender, stirring occasionally to ensure the onions do not brown
  • Add the paprika and garlic, cooking until the garlic is tender but not browned, reducing the heat if needed
  • In this order, add the brown sugar, apricot jam, ketchup, and sriracha, stirring to combine between additions
  • Once combined, bring to a simmer and add the vinegar
  • Taste the sauce and season with a pinch of salt, if needed, and a few grinds of pepper

This is a very tasty sweet glaze for a holiday ham that is already cooked. Apricot and mustard come together for a tasty flavor that's sure to delight all at the dinner table.

7 pounds (about half of a bone-in) cured smoked ham, (butt end), room temperature
2 cups apricot jam
1/4 cup mustard powder
Butter for aluminum foil

Steps:

  • Preheat oven to 375 degrees, with rack in lowest position. Line a large roasting pan with aluminum foil; place roasting rack in pan.
  • With a sharp knife, trim fat, leaving a 1/4-inch-thick layer. Lightly score fat in a diamond pattern (do not cut into meat). Place ham, fat side up, on rack; roast 1 hour.
  • Meanwhile, in a small saucepan, combine jam and mustard (they can be mixed and refrigerated up to 1 day ahead). Transfer 1/2 cup mixture to a small bowl to glaze ham. Set aside saucepan with remaining mixture.
  • After 1 hour, brush ham with glaze. Repeat every 15 minutes until brown and shiny, and an instant-read thermometer inserted in the thickest part, avoiding bone, registers 130 degrees, about 1 hour more (if glaze starts to burn, tent ham with buttered foil). Discard unused glaze. Remove ham from oven; cover loosely with buttered foil to keep warm. Temperature will then rise another 5 to 10 degrees.
  • Bring jam mixture in saucepan to a boil. Carve ham, reserving bone and 2 cups of meat for Split Pea Soup. Serve with sauce.

¼ cup whole cloves
½ cup apricot preserves
3 tablespoons honey mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Score the fatty side of the ham with a sharp knife in a diamond pattern, spacing the lines about 1 inch apart. Insert whole cloves at the intersections, if desired. Place the ham in a shallow roasting pan and cover with aluminum foil.
  • Bake the ham in the preheated oven for about 90 minutes. About 10 minutes before the ham is finished, measure the apricot preserves into a small saucepan. Warm over medium heat until liquid, then remove from the heat and stir in the honey mustard.

1 (10 pound) fully-cooked spiral cut ham
⅔ cup brown sugar
⅓ cup apricot jam
1 teaspoon dry mustard powder

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C).
  • Place the ham cut side down onto a sheet of aluminum foil. I like to put the shiny side up. Mix together the brown sugar, apricot jam and mustard powder in a small bowl. Brush onto the ham using a pastry or barbeque brush. Reserve any leftover glaze. Enclose the foil around the ham and place on a rimmed baking sheet.

1 semi-boneless fully cooked ham (6 to 7 pounds)
Glaze:
One 15-ounce can apricots halves in heavy syrup, drained
1/4 cup ketchup
2 tablespoons soy sauce
1 tablespoon molasses

Steps:

  • Prepare your cooker to cook indirectly at 235°F using medium hickory wood for smoke flavor.
  • Lay the ham cut-side down on a cutting board. With a sharp knife, score the skin in a diamond pattern on all sides. Place the ham in the cooker with the cut side down and cook for 2 hours.
  • To make the glaze: In the large bowl of a food processor fitted with a metal blade, combine the apricots, ketchup, soy sauce, and molasses. Process for about 15 seconds, until the mixture is smooth. Transfer the glaze to a bowl and set aside.
  • After the ham has cooked for 2 hours, brush it all over with a heavy coating of the glaze. Cook for 30 minutes and glaze the ham again. Cook for an additional 30 minutes.
  • Transfer the ham to a platter and tent loosely with aluminum foil. Let rest for 15 minutes. Slice to serve.
