NUTTY APRICOT MUFFINS



Nutty Apricot Muffins image

I tried apricots when I didn't have the usual muffin ingredients one time - and this recipe is the result! We enjoyed them, and I've made them often since.

Time 45m

Yield 12 muffins.

Number Of Ingredients 13

1 cup dried apricots, cut up
1 cup boiling water
1/2 cup butter, softened
1 cup sugar
3/4 cup sour cream
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated orange zest
1/2 cup chopped nuts
TOPPING:
1/4 cup sugar
1/4 cup orange juice

Steps:

  • In a small bowl, combine apricots and water. Let stand 5 minutes. Drain well and set aside. In a large bowl, cream butter and sugar until fluffy. Add sour cream and mix well. Combine dry ingredients and add to butter mixture. Mix on low only until combined. Fold in orange peel, nuts and apricots. Batter will be very stiff. Spoon into well-greased muffin tins, filling each cup almost to the top. Bake at 400° for 18-20 minutes or until done. Combine sugar and orange juice; dip tops of warm muffins in mixture.

1 cup Pillsbury BEST® All Purpose Flour
1/4 cup SPLENDA® No Calorie Sweetener, Granulated
2 tsps. baking powder
1/4 tsp. salt
1 large egg
2 tbsps. Crisco® Pure Canola Oil
2 tbsps. skim milk
1/2 cup Smucker's® Apricot Sugar Free Preserves, plus additional for spreading on tops of muffins
1/4 tsp. almond extract

Steps:

  • HEAT oven to 350 degrees F. Coat 6 muffin cups with no-stick spray.
  • COMBINE flour, SPLENDA® Granulated Sweetener, baking powder and salt in medium mixing bowl.
  • BEAT together egg, oil and milk. Blend in preserves and almond extract. Add to flour mixture and stir just until moistened. Fill muffin cups evenly with batter.
  • BAKE 20 to 30 minutes or until toothpick inserted in center comes out clean. Cool. Spread tops with a thin layer of preserves before serving.

These are moist and chewy. I sometimes add 1/2 cup of dates as well as the apricots. A family favorite!

1 cup chopped dried apricots
1 cup boiling water
2 cups all-purpose flour
¾ cup white sugar
1 teaspoon baking soda
½ teaspoon salt
¼ cup melted butter
¼ cup vegetable oil
1 cup buttermilk
1 egg

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12 cup muffin pan, or line with paper muffin cups. Place apricots into a small bowl, and pour the boiling water over them. Let stand for 5 minutes.
  • In a medium bowl stir together the flour, sugar, baking soda and salt. In a separate bowl, whisk together the melted butter, oil, buttermilk and egg. Pour the wet ingredients into the dry ingredients, and stir until just blended. It is okay for the batter to have some lumps. Drain water from apricots, and mix them into the batter. Spoon into the prepared muffin cups.
  • Bake for 15 minutes in the preheated oven, or until the top springs back when lightly pressed. Cool in the pan over a wire rack.

  • Preheat oven to 375º F.

  • Mix dry ingredients together.
  • In a seperate bowl combine melted butter, egg and milk; mix well.

1/2 cup packed brown sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup quick-cooking oats
1 cup chopped dried apricots
1/2 cup butter
3/4 cup boiling water
2 large eggs, lightly beaten
1 cup whole milk
2 teaspoons grated orange zest, optional

Steps:

  • In a bowl, combine the first four ingredients. In anther bowl, combine the oats, apricots, butter and boiling water; stir until butter is melted. Cool for 5 minutes. Stir in eggs, milk and orange zest if desired. Stir into dry ingredients just until moistened., Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 20-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to wire racks.

1 cup all-purpose flour
⅓ cup packed brown sugar
1 teaspoon baking powder
1 teaspoon baking soda

⅓ cup toasted walnuts, chopped

1 cup chopped dried apricots
1 cup boiling water
1 cup sugar
1/2 cup butter, softened
1 cup sour cream
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated orange zest
1/2 cup chopped nuts

Steps:

  • Soak apricots in water for 5 minutes. In a large bowl, cream sugar and butter until fluffy. Add sour cream; mix well. Combine dry ingredients; stir into creamed mixture just until moistened. My son Monte and I both love fresh apricots. Living in Southern California, we're lucky to get them in abundance. I created this recipe for him. He loves the subtly sweet cornmeal muffin punctuated by bites of tart apricot. (Okay, I admit I'm paraphrasing-he is only five.)

Yield makes 12 muffins

Number Of Ingredients 14

1 cup vanilla vegan yogurt
2/3 cup rice milk
1 tablespoon freshly squeezed lemon juice
1 cup granulated sugar, plus 2 teaspoons for sprinkling
1/2 cup dairy-free, soy-free vegetable shortening
1 tablespoon Ener-G egg replacer mixed with 1/4 cup rice milk
2 teaspoons pure vanilla extract
2 1/4 cups Basic Gluten-Free Flour Mix (page 19)
3/4 cup fine cornmeal
3/4 teaspoon xanthan gum
1 1/2 teaspoons double-acting baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup diced apricots (they should be ripe, but still firm enough to cube into centimetersized chunks)

Steps:

  • Preheat the oven to 350°F. Line a muffin pan with 12 muffin liners.
  • In a bowl, combine the yogurt, rice milk, and lemon juice and set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine 1 cup of the sugar, the shortening, and the egg replacer, mixing on medium speed for 20 seconds.
  • Add the rice milk mixture and the vanilla. Mix for 20 seconds.
  • In a separate bowl, combine the flour mix, cornmeal, xanthan gum, baking powder, baking soda, and salt.
  • Add the dry ingredients to the wet and mix on low speed until just combined, about 20 seconds.
  • Turn off the mixer and fold in the apricots.
  • Fill the liners with batter. They will be heaping. Smooth the tops slightly with a knife. Sprinkle the tops of the muffins with the remaining 2 teaspoons sugar.
  • Bake in the center of the oven for 30 minutes, or until lovely golden brown on top, rotating once about halfway through. Transfer the muffins to a cooling rack.
