Steps:
- Combine apricot preserves, dried cranberries and pecans in a small bowl. Mix well and set aside.
- Remove brie from the wrapper, leaving casing on, place on your serving dish. Bake at 350 for 10 minutes or allow to come to room temperature.
- Right before serving, top with apricot topping. Can be served hot or at room temperature. Serve with your favorite crackers.

- Preheat oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper and set aside. Alternatively, use a small 6 inch cast iron skillet or pie pan.
- Unwrap brie cheese and place onto prepared pan. Bake for 15-20 minutes, or until center is melted (check with a toothpick).
- Remove from oven and use the parchment paper to transfer brie to a serving plate (or leave cheese in cast iron skillet for serving). Top cheese with apricot jam and walnuts.

- Heat oven to 400°F. Line cookie sheet with foil or cooking parchment paper; lightly spray foil or paper with cooking spray. In small bowl, mix preserves, pecans and onion; set aside.
- On lightly floured surface, roll pastry into 10x14-inch rectangle. Using the round of cheese as a pattern, cut a pastry circle 3 to 4 inches larger than the cheese. Set aside excess pastry.
- Spread half of the preserves mixture in center of pastry circle, leaving 3-inch edge. Place 1 cheese round (in rind) on preserves. Spoon remaining preserves over cheese. Top with remaining cheese round.
- Gently fold edges of pastry up and over cheese to cover, folding and pinching edges to seal. Place seam side down on cookie sheet. Cut out decorative pieces from excess pastry. Brush pastry with whipping cream; place pastry cutouts on top.
- Bake 20 to 25 minutes or until golden brown. Serve warm.

APRICOT JALAPEñO BAKED BRIE
Nothing beats a gorgeous baked brie served at a holiday meal and this Apricot and Jalapeno Baked Brie is among the best. It's beautiful and the gentle, fruity spice of the jalapeno is just what the sweet, tangy apricots and mildly-sharp, creamy, flaky pastry wrapped Brie need. It doesn't get more festive than this!

- Preheat oven to 400°. Line a rimmed baking sheet with parchment paper or a silpat.
- Unfold it and lay the sheet of puff pastry out on the counter.
- Use a sharp knife to remove the top layer of mold rind on the brie. It shouldn't be a deep cut, but it should be deep enough to lift it off in one piece. Lay the big piece of brie, cut side up, on the puff pastry, positioning it so that when you fold the puff pastry over it, you can reach the other side of the brie.
- In a bowl, mix together the apricot preserves and minced jalapeno. Spoon it over the cut surface of the brie. Lay the rind piece you removed over the brie, cut side down.
- Lift the excess puff pastry and fold up and over the top of the brie, bringing it to meet the puff pastry on the other side. Cut away the excess puff pastry, crimp the seams well and gently transfer the puff pastry wrapped cheese to a parchment lined baking sheet.
- Brush the surface with a beaten egg to help it turn a beautiful golden brown while it bakes.
- Bake it for 20 to 25 minutes, or until gorgeous. Remember, the goal is to cook the puff pastry properly not so much to worry about what the cheese is doing in there. The cheese will be perfect if the pastry is.
- After removing it from the oven, DO NOT MOVE OR TOUCH THE PASTRY. Just let it rest. This will allow the brie to set back up a little bit.
- Before serving, use a broad spatula (or two) to transfer to your serving dish. Garnish with pomegranate seeds (arils) and finely chopped fresh parsley for a festive and tasty touch. Cut in half and offer crackers and toast with it.

- Carefully slice the rind off the top of the brie round (it's OK if there is some left on). In a small bowl, make the egg wash by beating the egg with 1 tablespoon water with a fork or whisk until it's very smooth. Set aside.
- Lay the puff pastry sheet out on a piece of parchment paper. Use a rolling pin to roll out the seams and make it as square as possible (but don't roll it out much bigger than it already is). Use a sharp knife or pizza cutter to cut the corners off so it's a circle (reserve the scraps). Place the cranberry sauce (1/3 cup) in the center of the circle and spread out so it's about 4.5-5 inches in diameter. Place the 8 oz. Brie round cut side down on top of the cranberry sauce. Fold the sides of the circle up to meet in the center, going around in one direction, until the brie is completely covered. Press the seam together as best you can (don't worry if it doesn't stick together perfectly and if it looks a little messy!) and flip over so the smooth side is up in the center of the parchment paper. Transfer the whole piece of parchment paper onto a rimmed baking sheet, lifting from each side so the brie is in the center of the baking sheet.
- Use a pastry brush to brush the top and sides of the puff pastry wrapped brie with the egg wash. Optional: Use a sharp knife to cut leaves and roll berries out of the scraps of puff pastry. If you like, you can score lines for the veins of the leaves. Place them on top of the wrapped brie and press down gently to adhere them to the egg on top. Brush the tops of the leaves and berries with egg wash.
