BELGIAN WAFFLES WITH BERRY CREAM
With their sweet whipped cream topping loaded with strawberries and blueberries, these waffles are equally popular for dessert!

- In chilled medium bowl, beat whipping cream and powdered sugar with electric mixer on high speed until stiff peaks form. Fold in strawberries and blueberries.
- Heat Belgian or regular waffle iron (Waffle irons without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray before batter for each waffle is added.)
- In small bowl, beat eggs with electric mixer on high speed about 3 minutes or until thick and lemon colored. Beat in milk. Beat in Bisquick and granulated sugar on low speed until smooth. Gently fold in oil. Pour batter onto hot waffle iron. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle iron.
- Bake about 5 minutes or until steaming stops. Carefully remove waffle. Top each waffle with berry cream and additional berries.

BERRY WAFFLES
Steps:
- Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt and sugar. In another bowl, beat together yogurt, milk and egg. Whisk liquid mixture into dry ingredients until just combined. Fold in frozen berries. Stir in melted butter. Brush hot waffle iron with butter or spray. Spoon about 1/2 cup of batter onto iron, smooth out with back of spoon and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm. Serve with butter, maple syrup or blueberry syrup.

- Combine the dry ingredients.together the egg, sugar, buttermilk and yogurt. Stir in Betsy's Best. Add to the dry ingredients and blend together.
- Batter should be light and creamy. If batter is too thick, add additional milk to thin.
- Let batter stand for 2-3 minutes. Pour batter into waffle iron and cook according to directions. Garnish with berries and enjoy!

PEANUT BUTTER FRENCH TOAST "WAFFLES" WITH MIXED BERRY SAUCE

- Crack the eggs into a medium baking dish and whisk lightly. Add the milk, sugar, vanilla and salt and whisk until smooth.
- Press down on bread slices to flatten slightly. Soak the bread in the egg mixture until completely soaked through, about 4 to 5 minutes per side.
- Heat a square 4 slot waffle maker according to the manufacturer's directions. Spray the top and bottom grates liberally with nonstick spray or melted butter. Remove the French toast from the eggs using a slotted spatula, allowing excess egg mixture to drip off. Make 2 at a time on the diagonal of the grates. Press down gently at first, then add a little pressure to the cover and press until the cover is completely closed. Cook until golden brown, about 3 minutes. Repeat with the remaining 6. Carefully remove each French toast waffle to a plate.
- Schmear each waffle with peanut butter. Dust with confectioners' sugar and drizzle with some of the mixed berry syrup. Garnish with fresh mixed berries, berry syrup, banana slices and mint sprig.
- Mixed berry sauce:
- Combine the strawberries, blackberries, raspberries, sugar and 1/4 cup water in a medium saucepan, bring to boil and cook, stirring occasionally, until the berries are soft, about 10 minutes. Remove from the heat and let cool for 5 minutes.
- Transfer the berry mixture to a blender or food processor, add the raspberry preserves and lemon juice and blend until smooth. Transfer to a bowl and let cool to room temperature. The sauce will keep in the refrigerator stored in a container with a tight fitting lid for 1 week.
SWEDISH WAFFLES WITH BERRY COMPOTE
These waffles are a weekend favorite with Gavin Kaysen's family-the recipe comes from his wife Linda's family in Sweden-and we're sure yours will love them, too. Topped with a fresh berry compote, they're a great way to start a day of lounging in your PJs.

- Berry compote: In a small saucepan, combine berries, sugar, and lemon juice. Gently heat until sugar is dissolved. Crush about half of the berries with a wooden spoon; allow the rest to soften but maintain their shape, 10 minutes. Set aside.
- Waffles: In a bowl, whisk together the flour, baking powder, and salt. Make a well in the ingredients and pour in the milk and vanilla; whisk thoroughly. Then whisk in warm (not hot) melted butter until fully incorporated. The batter should be thin.
- Heat a waffle iron according to the manufacturer's directions. Brush waffle iron on both sides with some of the remaining melted butter. Ladle enough batter to evenly cover the lower plate. Close the lid and cook until the waffles are brown and crispy, about 3-4 minutes. Repeat in batches with remaining batter; make 6-7 waffles.
- Assembly: Place waffles on a serving platter, spoon berries on top, and serve.
BREAKFAST WAFFLE: THE BERRY BOSSY RECIPE BY TASTY

- Preheat a waffle iron to medium-high heat. Grease with nonstick spray.
- OPTION 1: If using prepared mix, in a medium bowl, whisk together the waffle mix, milk, egg, and vegetable oil until fully incorporated.
- OPTION 2: If making the waffle batter from scratch, in a medium bowl, sift together the flour, sugar, baking powder, baking soda, and salt. In a small bowl, whisk together the eggs, melted butter, and buttermilk. Whisk the wet ingredients into the dry ingredients until fully combined.

BERRY BIRTHDAY WAFFLES
These waffles are surely a special breakfast birthday treat...but made healthful enough to ensure you'll be around for the next! Whole wheat flour adds nutrition and fiber while the all purpose flour keeps the waffles from tasting like tree branches. Beaten egg whites make them light. Strawberry preserves thicken and sweeten this summer berry sauce without adding refined sugars. And the whipped cream....well, they ARE birthday waffles. A dollop will do you, though. You say it is not your birthday? According to the Mad Hatter, there are 364 unbirthdays. Sing a "Very Merry Unbirthday" to yourself and make these anyway.

- WAFFLES: Sift together dry ingredients in a medium mixing bowl.
- Beat egg whites until stiff and set aside.
- Whisk egg yolks, milk, agave nectar, and oil together. (You may have to gently warm the milk before adding the coconut oil as it solidifies when combined with very cold milk -- it is just like working with melted butter).
- Add to dry ingredients and mix together thoroughly.
- Fold egg whites into the batter.
- Add batter to your heated waffle maker in amount recommended by your waffle maker's instructions and also cook per its instructions.
- BERRY SAUCE: Combine ½ cup blueberries, preserves, and orange juice in a sauce pan over medium heat.
- Bring to a boil, reduce and cook for 5 minutes until thickened, stirring occasionally.
- Add remaining blueberries, strawberries, and orange liqueur. Stir and let stand a few minutes.
- ASSEMBLY: Top each waffle with berry sauce and a dollop of whipped cream.
- For birthday waffles, add one candle to the top of the whipped cream and light after you have placed the waffle in front of your birthday boy/girl. (or yourself) Keeping the candle straight in your whipped cream could prove to be a little tricky (use a light weight candle) but I made my own homemade and stiff enough to pull it off. Or, use a fresh strawberry to anchor your candle.
- Notes: During recipe testing, frozen blueberries were used (picked locally and frozen this summer) while strawberries were always fresh.
- The sauce was sweetened with mainstream tastebuds in mind. If you prefer something less sweet and a little tart as I do, you may want to skip the OJ and go with water and a couple of teaspoons of lemon juice.
- I got 8-10 square (Belgian style) waffles out of each batch using my Chefmate Waffle Maker.
- Agave nectar is a syrup made from the agave plant whose sugars are mainly the fructose type. Coconut oil got a bad rap for years but make no mistake, it is good stuff. Your skin and hair will thank you for it.

- Whisk eggs and stir in milk and canola oil.
- Combine all-purpose flour, whole wheat flour, baking powder, white sugar and egg mixture. Carefully mix until lumps disappear. Let rest for 10 minutes. Stir in mixed berries.
- Preheat waffle maker to desired temperature. Apply a light layer of vegetable oil to heating plate. Spread waffle batter evenly onto heating plate. Close waffle maker and let bake until done.
- Serve warm with butter and honey or pure maple syrup.
