I'm expected to bring these wonderful treats to our family picnic each year. Their sweet apricot filling and delicate meringue topping make them everyone's favorite. I wouldn't dream of hosting a get-together without serving these bars. -Krissy Fossmeyer, Huntley, Illinois

3 cups all-purpose flour
1 cup sugar, divided
1 cup cold butter, cubed
4 large eggs, separated
1 teaspoon vanilla extract
2 cans (12 ounces each) apricot filling
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine flour and 1/2 cup sugar; cut in butter until crumbly. Add egg yolks and vanilla. Press into a greased 15x10x 1-in. baking pan. , Bake at 350° for 12-15 minutes or until lightly browned. Spread apricot filling over crust., In a small bowl, beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread the meringue evenly over filling; sprinkle with pecans. , Bake at 350° for 25-30 minutes or until meringue is lightly browned. Cool in pan on a wire rack (meringue will crack). Cut into bars. Refrigerate leftovers.,

2 (12 ounce) cans apricot filling
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine flour and 1/2 cup sugar.
  • Cut in butter until crumbly.
  • Add egg yolks and vanilla; mix well.
  • Press into a greased 15 in x 10 in x 1 in baking pan.
  • Bate at 350°F for 12 to 15 minutes or until lightly browned.
  • Spread apricot filling over crust.
  • In a small mixing bowl, beat the egg whites until soft peaks form.
  • Gradually beat in the remaining sugar, 1 Tbsp at a time on high until stiff peaks form and sugar is dissolved.
  • Spread over apricot layer.
  • Sprinkle with pecans.
  • Bake for 25-30 minutes or until lightly browned.
  • Cool on a wire rack.
  • Cut into bars.
  • Refrigerate leftovers.

250 grams Pastry flour
125 grams butter
4 egg yolks
2 Tbsps Rum
1 Tbsp sugar
250 grams Apricot jam
2 Tbsps Orange juice
50 grams grated almonds
4 egg whites
125 grams sugar
50 grams Almond slivers

Steps:

  • For the pastry: Quickly knead flour into a dough with the cold butter, egg yolks and sugar. Form into a ball, wrap in plastic wrap and place in the refrigerator for 1 hour. Cut parchment paper into the size of a baking sheet. Roll out dough to form a rectangle on the paper 4 mm (approximately 1/8 inch) thick and place on the baking sheet.
  • Bake the dough in a preheated oven at 180°C (approximately 350°F) for 12 minutes, or until golden yellow. Allow to cool. For the topping: Stir the jam with an immersion blender and mix in the orange juice. Spread the mixture on the cooled pastry sheet and sprinkle with ground almonds. Beat egg whites very stiff and sprinkle in sugar.
  • Spread meringue evenly over the pastry sheet, create a wavy design with a fork and sprinkle with slivered almonds. Bake in a preheated oven at 150°C (approximately 300°F) for 12 minutes, or until light yellow. While still warm, cut into bars approximately 6 x 3 cm (approximately 3 x 1 1/4 inches).

1 jar (10 to 12 ounces) apricot preserves

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In a small bowl, whisk flour and baking powder; gradually add to creamed mixture, mixing well. 1 cup apricot preserves
3 tablespoons orange liqueur (such as Grand Marnier)
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup sugar
1 teaspoon almond extract
2 cups all purpose flour
1/4 teaspoon salt
1/4 cup (packed) almond paste (from 7-ounce roll), crumbled
1/2 cup sliced almonds, divided

Steps:

  • Preheat oven to 325°F. Butter 9x9x2-inch metal baking pan; line bottom and sides of pan with parchment paper, extending over sides. Butter parchment. Mix preserves and orange liqueur in small bowl; set aside.
  • Using electric mixer, beat 1 cup butter and sugar in large bowl until well blended. Beat in almond extract. Add flour and salt; beat just until blended. Transfer 1 cup of dough to another small bowl; add crumbled almond paste and mix with fingertips until small clumps form. Mix in 1/4 cup sliced almonds; set aside for topping.
  • Press remaining dough evenly onto bottom of prepared pan. Spread preserves mixture evenly over. Using fingertips, coarsely crumble topping over preserves, then sprinkle 1/4 cup almonds over. Press topping lightly into preserves.
  • Bake shortbread until top and crust edges are golden brown, about 1 hour. Cool completely in pan on rack. Using parchment paper as aid, lift shortbread from pan. Cut shortbread into 4 equal strips, then cut each strip crosswise into 8 small bar cookies. (Can be prepared ahead. Store in single layer in airtight container at room temperature up to 4 days or freeze up to 2 weeks.)

1/2 cup (1 stick) unsalted butter, room temperature, plus more for the pan
2/3 cup dried apricots
1 1/3 cups all-purpose flour
1/4 cup granulated sugar
1 cup light-brown sugar, firmly packed
2 large eggs, lightly beaten
1/2 cup chopped walnuts
1/2 teaspoon baking powder
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
Confectioners' sugar, for dusting

Steps:

  • Heat oven to 350 degrees. Butter an 8-by-8- by-2-inch baking pan, and set aside.
  • Place apricots in a small saucepan with enough water to cover. Bring to a boil over high heat. Reduce heat to simmer, and cook until plumped, about 15 minutes. Drain through a fine sieve, and chop fine. Set aside.
  • In a large bowl, combine 1 cup flour, butter, and granulated sugar. Using a handheld electric mixer on medium speed, blend until crumbly and combined. Transfer mixture to prepared pan. Using your hands, pat crust evenly into pan. Bake until golden brown, about 25 minutes. Transfer to a rack to cool.
  • Combine remaining 1/3 cup flour, reserved chopped apricots, brown sugar, eggs, walnuts, baking powder, vanilla, and salt. Using a handheld electric mixer on medium speed, beat until combined; scrape down sides of bowl twice. Pour mixture over crust, and return to oven. Bake until top is golden, about 20 minutes.
  • Transfer pan to a wire rack to cool. Cut into 2-inch squares. Dust with confectioners' sugar.
