1-1/2 cups dried apricots
2 cups sweetened shredded coconut
2/3 cup sweetened condensed milk
Confectioners' sugar

Steps:

  • Place apricots in a food processor; cover and pulse until chopped. Transfer to a large bowl; add coconut and milk. Shape into 1-in. balls; roll in sugar. , Place on a baking sheet. Refrigerate until firm. Store in an airtight container in the freezer or refrigerator.

1 cup desiccated coconut
250 g Marie biscuits, crushed
3 tablespoons brandy
1 cup dried apricot, chopped
3/4 cup pecan nuts, chopped (optional)

  • Mix together all ingredients.
  • roll into small balls.

8 ounces dried apricots, finely chopped
1 cup sweetened flaked coconut
1/4 cup sweetened condensed milk
additional coconut or finely chopped pecans, for rolling

Steps:

  • In a food processor chop apricots and coconut until thoroughly combined.
  • Add the 1/4 cup sweetened condensed milk; process until combined.
  • Pour the mixture into a dish; refrigerate until firm (about 30-45 minutes).
  • Place wax paper on a baking sheet; set aside.
  • Place additional coconut or finely chopped pecans in a shallow bowl.
  • Shape apricot mixture into balls (about 1-inch in diameter).
  • Roll in coconut; place on wax paper.
  • Refrigerate until firm.
  • Store in an airtight container in the refrigerator.

2 eggs
2 tablespoons Italian seasoning
2 teaspoons chopped fresh basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
2 pounds ground beef
½ cup panko bread crumbs

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix eggs, Italian seasoning, basil, salt, pepper, and garlic powder together in a large bowl. Add beef and panko bread crumbs and mix thoroughly.
  • Shape mixture into about forty 1 1/2-inch balls, a little smaller than golf balls, using a teaspoon. Place on ungreased, rimmed baking sheets.

Golden Sesame Balls image

A Chinese pastry with lotus paste filling.

Number Of Ingredients 8

1 ounce white sugar
⅓ ounce shortening
3 ounces glutinous rice flour
½ teaspoon baking powder
2 ounces ice cold water
½ cup white sesame seeds
4 ounces white lotus paste
2 cups vegetable oil for frying

Steps:

  • Combine sugar and shortening in a bowl to make a paste. Add rice flour, baking powder, and ice water and mix everything into a dough ball. Wrap in plastic film and refrigerate for 30 minutes.
  • Remove dough from fridge and separate into 6 equal portions. Roll into balls and flatten the balls into thin disks. Portion lotus paste into 6 equal parts and roll into small balls. Set a lotus paste ball in the center of the flattened dough disks and wrap dough around the lotus paste. Roll between the palms of your hands until all the seams are gone and no lotus paste is showing.
  • Pour sesame seeds onto a saucer and roll finished balls in the sesame seeds. Roll balls between your palms one more time to make sure sesame seeds stick.
  • Pour oil into a pot and heat to 350 degrees F (175 degrees C). Drop balls into the hot oil and fry until golden brown, 5 to 6 minutes. Remove from the hot oil with a slotted spoon and drain on a paper towel-lined plate to absorb the excess oil
  • Serve - be careful! The lotus paste inside the balls will be very hot.

1 egg
1 cup soft bread crumbs
1/4 cup chopped onion
1 teaspoon salt
1 pound ground beef
1/2 cup apricot preserves
1/4 cup barbecue sauce

Steps:

  • In a bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. In a skillet, brown meatballs in several batches; drain. Transfer to a greased 2-qt. baking dish. Combine preserves and barbecue sauce; pour over meatballs. Cover and bake at 350° for 30 minutes or until the meat is no longer pink.

I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

1 pound ground beef
½ pound ground veal
½ pound ground pork
2 cloves garlic, minced
2 eggs
1 cup freshly grated Romano cheese
1 ½ tablespoons chopped Italian flat leaf parsley
salt and ground black pepper to taste
2 cups stale Italian bread, crumbled
1 ½ cups lukewarm water
1 cup olive oil

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)
