4 bone-in pork chops, fat trimmed

3 c. chopped pineapple
1 red bell pepper, diced
1/2 small red onion, chopped
4 green onions, thinly sliced
Juice of 1 lime

Steps:

  • Preheat oven to 425°. In a large oven-safe skillet over medium-high heat, heat 1 tablespoon of the oil. Season pork chops with salt and pepper and add to skillet. Sear until golden, 3 minutes per side. Transfer skillet to oven and bake until cooked through, 10 to 12 minutes.
  • Meanwhile, in a large bowl, toss pineapple, bell pepper, red and green onions, lime juice, and the 2 remaining tablespoons of the oil until combined. Season with salt and pepper.
  • Let chops rest 5 minutes, then top with pineapple salsa before serving.

1 pork tenderloin (1-1/4 pounds)
3 tablespoons brown sugar, divided
2 tablespoons Dijon mustard
1 teaspoon paprika
1/2 teaspoon ground ginger
1/3 cup finely chopped sweet red or green pepper
1/4 cup chopped green onions
1/8 teaspoon crushed red pepper flakes, optional

Steps:

  • Drain pineapple, reserving 1/4 cup juice. Set aside 1 cup of pineapple (save remaining pineapple for another use). Place the pork on a rack in a shallow roasting pan. Combine 2 tablespoons brown sugar, mustard, paprika and ginger. Spread half over the pork. , Bake, uncovered at 450° for 15 minutes. Spread with remaining brown sugar mixture. Bake 15-20 minutes longer or until a thermometer reads 160°, Meanwhile, for salsa, in a small bowl, combine the red pepper, onions, pepper flakes if desired, remaining brown sugar, reserved pineapple and juice. 1/2 red onion, minced

  • For the marinade:
  • Blend all the ingredients in a large bowl. Place in a resealable plastic bag and add the pork chops. Marinate in the refrigerator for up to 3 hours.

1 cup medium- or long-grain white rice
1 pineapple, peeled, quartered lengthwise and cored
1 tablespoon minced peeled ginger
1 tablespoon vegetable oil
1 tablespoon soy sauce, plus a splash for the salsa
1/2 teaspoon Chinese five-spice powder
1 bunch scallions
4 bone-in pork sirloin chops (1/2 inch thick; about 1 3/4 pounds)
Pinch of red pepper flakes

Steps:

  • Combine the rice and 1 2/3 cups water in a medium saucepan and bring to a boil. Cover, reduce the heat to low and cook until the rice is tender and the water is absorbed, about 15 minutes. Remove from the heat and let stand until ready to serve.
  • Meanwhile, cut off a 2-inch piece of the pineapple and grate it on the coarse holes of a box grater into a large bowl. Stir in the ginger, vegetable oil, 1 tablespoon soy sauce and 1/4 teaspoon five-spice powder. Add the scallions and pork chops and turn to coat; let marinate at room temperature, 10 minutes. Rub the remaining pineapple with the remaining 1/4 teaspoon five-spice powder.
  • Preheat a grill to medium high. Grill the pork chops until just cooked through, about 3 minutes per side. Grill the scallions and pineapple, turning occasionally, until charred, about 3 minutes.
  • Roughly chop the pineapple and scallions and transfer to a bowl. Add the red pepper flakes and a splash of soy sauce and toss. Serve the pork chops with the pineapple salsa and rice.

1 small onion , chopped
2 tsp ground cumin
2 tsp smoked paprika
2 tbsp soft brown sugar
2 tbsp cider vinegar
200ml passata
½ small pineapple , peeled, cored and diced
1 red onion , diced
½ small pack coriander , chopped
crisp taco shells, salsa, chipotle Tabasco sauce or chilli sauce, and soured cream (optional), to serve

Steps:

  • Heat a non-stick frying pan, and fry the mince and onion with some seasoning until brown and cooked through, about 5 mins. Drain off the excess fat. Add the cumin, smoked paprika, sugar, vinegar and passata. Cook for 10 mins on a medium heat, then season to taste.
  • Mix the pineapple, onion and coriander together. Heat the tacos following pack instructions. Serve the mince in the taco shells with the salsa, Tabasco, and soured cream, if you like.

1 Tbsp. annatto paste
2 cups masarepa
1/4 cup KRAFT Grated Parmesan Cheese
2-1/2 cups lukewarm water
1 can (8 oz.) pineapple chunks in juice, drained, chopped
1/2 cup chopped onions
1/2 cup green salsa
1/4 cup chopped fresh cilantro

Steps:

  • Cut meat lengthwise in half, then crosswise into 1/4-inch-thick slices. Mix next 3 ingredients in shallow baking dish until blended. Add meat; turn to evenly coat each piece. Refrigerate 30 min., turning after 15 min.
  • Meanwhile, add masarepa and cheese to water in medium bowl; knead until mixture is well blended and forms smooth ball. Shape into 8 (3-1/2-inch) patties. Heat large heavy skillet or flat griddle on medium heat. Add patties, in batches; cook 15 min. or until crisp and lightly browned on both sides, turning every 5 min.
  • Heat heavy medium skillet on medium-high heat. Cook half the meat 2 to 3 min. or until done, stirring frequently. Repeat with remaining meat. Return all meat to skillet; stir in pineapple. Cook and stir 3 min. or until heated through.
  • Cut arepas in half, being careful to not cut all the way through each arepa. Fill with meat and remaining ingredients.

1 (3/4 lb) pork tenderloin
3 tablespoons dark brown sugar, packed, divided
2 tablespoons honey dijon mustard
1 teaspoon paprika
1/2 teaspoon ground ginger
1/3 cup red bell pepper, diced small
2 tablespoons green onions, sliced thin
1 cup fresh pineapple, sliced, diced small
1/4 cup pineapple juice, unsweetened

Steps:

  • Preheat oven to 450 degrees F, then put the pork tenderloin in a roasting pan.
  • In a small bowl, combine 2 tablespoons of the brown sugar with the Dijon mustard, paprika & ginger, then spread HALF of this mixture over the pork tenderloin, before baking uncovered for 15 minutes.
  • When the 15 minutes are up, spread the pork with the remaining brown sugar mixture & bake 15 to 20 minutes longer, or until a meat thermometer reads 145 degrees F, but if you're a traditionalist, you'll want the thermometer to read 160 degrees F!
  • Meanwhile, for the salsa, in a small mixing bowl, combine the bell pepper & onion with the last tablespoon of brown sugar, along with the cup of diced pineapple & pineapple juice.
  • When the pork comes out of the oven, let it stand briefly before slicing the meat & serving it with a generous portion of salsa.
