- To prepare this enticing recipe, first wash and soak the toor dal in water for about an hour. Once done, strain the water and keep the dal aside for further use. Meanwhile grind the tomatoes, ginger and green chilli together to obtain a paste.
- Next, in a pressure cooker heat ghee. Once the ghee is adequately heated, add to it cumin seeds, asafoetida, turmeric, coriander leaves and curry leaves. Saute the spices for 2 minutes. Now add the prepared tomato paste and saute for 2 minutes. Add in red chilli powder and salt. Now transfer the dal to the pressure cooker. Cook on a medium flame for 2 minutes. Add water, close the pressure cooker and cook the mix for 2 whistles. Let the pressure come down naturally and let the cooker open on its own.

- Clean, wash and soak toor dal in water for 15 - 20 minutes. Make sure to wash the pigeon peas nicely with water 2 - 3 times before soaking.
- Transfer soaked dal to a pressure cooker, along with green chili, salt, turmeric powder, ginger garlic paste, and chopped tomato. Add 4 cups of water. Stir to combine. Seal the pressure cooker with the lid. Cook dal for two whistles over low heat. Allow the steam to release naturally.
- Open the lid of the pressure cooker. Taste the dal and, if required, add more salt and seasoning to the dal. If the dal is too thick, add more water to get the desired consistency. Turn on the heat and allow arhar dal to simmer while you prepare the tadka.
- Prepare tadka, heat ghee in a small pan. Add cumin, asafoetida, red chilies, chopped garlic, and onion. Fry till onion and garlic is light brown. Continuously stir the tadka while frying. At last, add red chili powder and turn off the heat.
- Pour hot tadka over the arhar dal. Stir to combine. Sprinkle chopped fresh coriander. Stir to combine. Seal the pressure cooker with a lid for 5 minutes. This way flavor and aroma of tadka are nicely combined with the dal.
- Garnish with fresh chopped coriander leaves.
- Serve Arhar Ki Dal warm with rice.

- Wash arhar dal and moong dal with water 2 to 3 times until the water runs clear.
- Soak the lentils in 2-3 cups of water and keep aside.
- Press SAUTE button of the instant pot.
- Once it says hot, add oil to the inner pot.
- Once the oil is hot and shimmery, add onions and fry until they turn light brown in color (8-10 minutes), stirring frequently.
- Add ginger and garlic and fry for 2 minutes.
- Add green chilies and tomatoes and cook for 2-3 minutes. Stir frequently while cooking.
- Now add coriander powder, turmeric powder, and Kashmiri red chili powder, and cook for a minute.
- Drain the water from the lentils and add them to the pot along with 3 cups of water, and salt, and stir well.
- Close the lid of the pot and set the valve to the sealing position.
- Press PRESSURE COOK and set the timer to 10 minutes on high pressure. The instant pot will take some time to build the pressure and to start the timer.
- Once the timer goes off, let the pressure release naturally for 10 minutes. Then release the remaining pressure manually by moving the valve to the venting position. Use a cloth or a spoon to move the valve to avoid steam burn. Open the lid of the pot.
- Add lime juice to the pot and mix the cooked dal well using a wire whisk or a madani until it is smooth and creamy.
- Add some more water if the dal is thick for your liking and bring it to a boil by pressing the SAUTE button.
- Check for salt and add more if needed. Set the cooked dal aside.

- Once the oil is hot and shimmery, add onions and fry until they turn light brown in color (8-10 minutes), stirring frequently.

- Add green chilies and tomatoes and cook for 2-3 minutes. Stir frequently while cooking.
- Now add coriander powder, turmeric powder, and Kashmiri red chili powder, and cook for a minute.
- Add the dal to the pot along with 3 cups of water, and salt and stir well.
- Close the lid of the pressure cooker and cook for one whistle on high heat. Then reduce the heat to low and cook for 10-12 minutes.
- Remove the cooker from heat and let the pressure release naturally.
- Open the lid of the cooker.
- Add 1 tablespoon lime juice to the pot and mix the cooked dal well using a wire whisk or a madani until it is smooth and creamy.
- Add some more water if the dal is thick for your liking and bring it to a boil.
- Check for salt and add more if needed. Set the cooked dal aside.
- Once the lentils are cooked, let's give them a tempering. Heat ghee in a small pan over medium-high heat.
- Once the ghee is hot, add cumin seeds and asafetida and let them crackle for 4-5 seconds.
- Add dry red chilies and garlic and fry until it turns golden brown in color. Keep stirring frequently.
- Switch off the heat and add Kashmiri red chili powder to the pan.
- Pour the tempering immediately over the dal and mix well.
- Garnish with cilantro and serve hot.

- Pressure cook the lentils/daal with water, salt and turmeric powder. Cook till it whistles 4-5 times. Allow it to cool.
- Heat Ghee/Oil in a pan and temper it with Hing, Panchphoron, Bay Leaves and Green Chilies.
- Once they splutter, add the cooked dal and give it a good stir.
- Once it has come to a boil once, check for the salt and add as per requirement. Also adjust the consistency for the dal as per your needs.
- If you choose to add some water, then allow it to boil once before you turn it off and serve.
- You may add some chopped Coriander leaves on top as you serve with Rice.

DAL FRY RECIPE | HOW TO MAKE ARHAR DAL RECIPE | TUR DAL
Steps:
- For the preparation, we need to take 1 Cup Arhar Dal and wash it with Plain water. If you want, you may soak it in water for 30 mins and then start with the main recipe.
- To make Arhar Daal , add 1 tbsp Vegetable oil or ghee in a pressure cooker on medium heat. Once the ghee or oil gets heated, add ¼ tsp Hing, ½ tsp Jeera and 4- 5 cloves chopped garlic cloves and let it turn slightly brown. Make sure that the garlic doesn't burn, and just wait for all the ingredients to turn slightly brown.
- Now add 1 chopped medium Onion and add salt to it. Saute' until you see onions change its color. We add salt at this stage since salt helps cook onions a bit faster.
- Next, add chopped tomatoes and saute` for 3 to 5 mins on slow to medium heat.
- Now add washed Arhar daal in the pressure Cooker along with ½ tsp chaat masala, ½ tsp garam masala, ½ tsp Jeera Powder and ½ tsp Haldi. Mix everything well.
- Next, add 2 ½ to 3 Cups of water and pressure cook until you hear 3 whistles on slow to medium heat. After the third whistle, turn off the heat and wait for the pressure to release naturally and completely before you open the lid.
- At this stage, you may now check for the spices and salt and adjust it as per taste. Just in case you find the daal consistency to be too thick, you may adjust it by adding some more water to it and simmer for another 3 to 4 mins. You may now transfer the cooked daal to a serving bowl.
- For the tadka (tempering), You require to heat a pan, and add 1 tbsp ghee to it. Once the ghee gets heated, add ½ tsp Jeera and 1 to 2 Red Chillies and roast for 2 to 3 minutes in the ghee on medium heat. Once done, add the tadka from the pan on the dal. Garnish with chopped coriander leaves and serve hot!
