I derived this recipe from "THE COUNTRY FAIR COOKBOOK" by L. Stallworth/R. Kennedy. I am sure you could substitute frozen hash browns for the cubed cooked potatoes.

Number Of Ingredients 7

6 slices bacon, cut in 2 inch pieces
1 small green pepper, chopped
2 tablespoons finely chopped onions
6 cups cubed cooked potatoes
1/2 cup shredded sharp cheddar cheese
6 eggs, lightly beaten
salt and pepper

Steps:

  • In a large heavy skillet, cook the bacon over moderate heat until crisp.
  • Remove the bacon to drain.
  • Pour off all but 3 tablespoons of drippings.
  • Heat the drippings in pan until it sizzles.
  • Add the green pepper, onion and potatoes and cook over medium heat until potatoes are browned, stirring gently.
  • Sprinkle on the cheese and stir until it melts.
  • Add the eggs and cook, stirring gently, until the eggs are set.
  • Season with salt and pepper.
  • Sprinkle on the crumbled bacon and serve at once.

6 large eggs
2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
2 slices white bread, cubed
1 lb sausage, browned
1 cup sharp cheddar cheese, shredded

Steps:

  • Beat eggs, add milk, salt and mustard, mixing well.
  • Grease bottom of 9x13-inch baking dish.
  • Place in layers of bread cubes, the sausage, then cheese.
  • Pour egg mixture over the top.
  • Refrigerate overnight.
  • Bake at 350°F for 45 minutes.
  • Let stand about 5 minutes before cutting.
  • NOTE: For 8 people use 3 slices of bread and 8 eggs.

1 pound sliced bacon, diced
1 medium sweet onion, chopped
6 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese
1-1/2 cups 4% cottage cheese
1-1/4 cups shredded Swiss cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish., Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.
