SPANISH ARROZ CON LECHE RECIPE
This creamy Spanish arroz con leche recipe is my mother-in-law's favorite. It's Spanish rice pudding done right!

Steps:
- Rinse the rice under cold water and then put it in a saucepan over a medium heat, just barely covered with water (you could also cover it with milk for even creamier arroz con leche).
- Add the cinnamon stick and lemon rind. Stir continually until all of the water is absorbed.
- Add milk about ½ cup at a time, stirring each time until all is absorbed. Continue adding up to the whole liter of milk, stirring continuously.
- When is seems creamy enough, taste to make sure the texture of the rice is correct. Some prefer it al dente and others like it very cooked (almost mushy).
- When it is to your liking, turn off the heat and add a pinch of salt and dash of cinnamon. Then, add the sugar a few tablespoons at a time until it is sweet enough for you. Enjoy warm or let cool.
- Sprinkle a bit more cinnamon on top to decorate!

ARROZ CONGRí
Arroz congrí is a popular Cuban dish made with rice, kidney beans and sometimes pork, similar to the famous moros y cristianos.

Steps:
- Wash the soaked beans.
- Add them into a pressure cooker and cover generously with water.
- Lock the pressure cooker and cook the beans under pressure for 30 minutes.
- Wash the beans and soak them in water the night before or for a few hours before cooking.
- Take 2 large ladles of cooked beans and 2 large ladles of the cooking water.
- Heat the olive oil or lard in a Dutch oven over medium heat and add the diced pork and fry them until they release their fat and are golden.
- Remove the pieces of meat and, in the hot fat, add the sliced onions, garlic, cilantro, ajis cachuchas (sweet Cuban peppers), and dry seasonings.
- Stir everything and add the kidney beans. Brown together with the rest of the ingredients for a few minutes, stirring constantly.
- Add the rice and mix it with all the other ingredients until the grains of rice start to absorb the flavors.
- Then cover everything with the reserved cooking water for the beans.
- Cover and cook over low to medium heat until the rice softens and absorbs all the water. Uncover and stir with a fork to separate the grains and prevent them from settling as they cool.
- Serve the arroz congrí hot, sprinkled with fried pork when ready to serve.

ARROZ CARTAGENA
Steps:
- Wash rice and drain.
- In a large heavy saucepan heat the butter over medium heat. Add the onion and cook, stirring occasionally, for 3 to 4 minutes, or until just beginning to soften. Add rice, red pepper and the cumin and stir together for 2 minutes. Add the cabbage and tomato and cook for 3 minutes more, or until the mixture is thickened. Add the water and salt, increase the heat to medium-high and bring the mixture to a boil. Reduce the heat a little so that the liquid is simmering actively. Stir every minute or 2 until the rice is almost dry, then reduce the heat to very low, and stir in the green onion. Cover tightly, reduce the heat to low, and cook for 5 minutes more.
ARROZ CON GANDULES RECIPE BY TASTY
A traditional Puerto Rican dish, arroz con gandules is rice cooked with green pigeon peas. This orange-hued dish is full of flavor from the herby, peppery sofrito and pairs nicely with stewed chicken, pork, or red beans. Don't worry if the bottom layer burns a bit as you finish cooking the rice--this crispy layer is called pegao and is one of the best parts of the dish!

- To the bowl of a food processor, add the cilantro, culantro, onion, red and green bell peppers and garlic. Pulse until combined. Add the cumin and oregano and pulse a few more times to incorporate. The sofrito should have the consistency of a tapenade.
- Heat ¼ cup of canola oil in a large pan over medium-high heat. When the oil is shimmering, add the sofrito and fry, stirring constantly, until deepened in color but not brown, about 3 minutes. Add the olives, tomato sauce, adobo seasoning, Sazón seasoning, pigeon peas, and water, and stir to combine.
- Bring the mixture to a boil, then add the rice. Cook for 15-20 minutes, until the liquid is fully evaporated and the rice around the edges of the pot looks dry.
- Stir, then reduce the heat to low, cover, and cook the rice for another 30 minutes, stirring every 10 minutes, until the rice is tender and fluffy.
- Serve the arroz con gandules warm alongside dishes of your choice.

- Heat oil in a large skillet over medium heat. Add potato and carrot; saute for 3 minutes. Remove to a bowl.
- Add onion and garlic to the hot skillet and saute until slightly brown, 5 to 7 minutes. Add ground beef; cook and stir until browned and crumbly, 5 to 7 minutes. Add potato-carrot mixture back to the skillet with water, soy sauce, salt, and pepper. Cover and simmer until potatoes are tender, 5 to 8 minutes.

Growing up, my aunt ChaCha cooked 6 nights a week for 6-8 people. She used traditional Cuban recipes, made EVERYTHING from scratch and bought everything fresh. This is my all time favorite dish.

- Boil rice, lemon zest, vanilla & cinnamon stick in water until rice is soft.
- Add milk, salt, and sugar.
- Cook over medium flame stirring occasionally until it thickens (about 1 hour).
- Turn over into a Pyrex-type dish & powder with cinnamon.
- I leave zest & cinnamon stick in the dish and serve around it as it continues to put out flavor.
- Serve warm or chilled.

- Place the rice in a bowl with enough water to cover it and let it soak overnight.
- Strain the rice and discard the water. Stir the cold water and evaporated milk together. Place the drained rice into a blender along with half of the diluted milk. Blend until the rice is finely ground, about 30 seconds. Add the sugar, cinnamon, and vanilla; blend well. Pour in the remaining diluted milk; blend.
- Line a strainer with two layers of cheesecloth. Place the strainer over another bowl to catch the liquid. Strain the rice milk through the cheesecloth, discard the solids. Repeat the process if necessary. Serve over ice.

ARROZ CON CHAYA
Steps:
- In saucepan, combine water, onion, garlic, oregano, chicken stock, and pepper. Bring to a boil; stir in rice, reduce heat, cover and simmer 10 minutes. Stir in cooked chaya. Cover and cook 5-10 minutes more until the rice is tender. Stir lightly with a fork and mix in lime juice. May be served hot or cold.
