PARMESAN ARTICHOKE CASSEROLE
This is a great casserole that is quick and cheesy! You can add other veggies for a summery twist - sliced zucchini or chopped spinach work great!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place artichoke hearts in a glass mixing bowl. Mix in cheese, garlic powder, mayonnaise and parsley until well coated. Spread mixture in 9x13 inch glass baking dish and sprinkle with paprika.
- Bake in preheated 350 degrees F (175 degrees C) oven until bubbly, about 25 to 35 minutes. Serve hot.

- Drain artichokes, reserving 1/2 cup marinade. Set aside. Cut artichokes into slices; set aside. In a small skillet, saute green onions in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat., In a large bowl, combine the eggs, artichokes, mushrooms, cheese, cracker crumbs, onion mixture and reserved marinade., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.

- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
- In large bowl, beat eggs, sour cream, garlic powder, salt and pepper with whisk. Stir in spinach, artichoke hearts and 1/2 cup of the Parmesan cheese. Pour into pan. Top with remaining 1/2 cup Parmesan cheese and the mozzarella cheese.
- Bake 45 to 50 minutes or until cheese is melted and golden brown and egg is baked through. Serve warm.

While the potatoes are baking the rest of the prep can be done...there's not much slicing or measuring. - Preheat oven to 350°. Place potatoes in a greased 13x9-in. baking dish; drizzle with 1 tablespoon butter and sprinkle with salt. Bake 20-25 minutes or until lightly browned. , Meanwhile, in a small skillet, saute mushrooms in remaining butter until tender. Place artichokes on paper towels; pat dry. Sprinkle mushrooms, artichokes and cheese over the potatoes. We have this recipe with our Thanksgiving dinner annually. I was looking for a similar recipe online and couldn't find one, so I asked my mother to send it to me.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Put spinach into a microwave-safe bowl. Pour water over the spinach. Cover bowl tightly with plastic wrap.
- Cook in microwave oven on High, stirring occasionally, until the spinach is heated through, 9 to 11 minutes; transfer to a colander to drain, pressing to remove as much moisture from the spinach as possible.
- Melt 1/2 cup butter in a saucepan over medium heat; add spinach, cream cheese, water chestnuts, and garlic powder. Cook and stir until the cheese melts, 5 to 7 minutes.
- Spread artichoke hearts into the bottom of a baking dish. Spread spinach mixture over the artichoke hearts. Sprinkle bread crumbs over the spinach mixture. Dot top of casserole with butter pieces.
- Bake in preheated oven until heated through, 20 to 25 minutes.

ARTICHOKE BREAKFAST CASSEROLE
Steps:
- Grease up an individual baking dish with oil and preheat the oven to 350 degrees. Put salsa in the baker OR used the diced tomatoes if you don't have any salsa. Add in the Tabasco to taste. Sprinkle on Cheddar cheese. Whisk together sour cream and egg. Pour over the arichoke mixture. Top with Parmesan cheese. Bake about 25 minutes or until puffy and golden. If it looks gooey in the center bake a little longer. Serve immediately while it looks nice like a souffle. It falls almost right away and tastes great as it cools.

ARTICHOKE CASSEROLE
This is a nice and different side dish. Great for holiday dinners. It uses the canned water-packed artichoke hearts, NOT the marinated ones.

Steps:
- Preheat oven to 350. Lightly grease a 9" casserole dish; set aside.
- Drain the artichoke hearts and coarsely chop; set them aside.
- In a skillet, melt the 3 tbsp butter and sautee the onion and garlic until the onion is translucent.
- Add the artichoke hearts/ lemon juice and the pepper. stir to mix well. Pour into the prepared casserole dish.
- Evenly sprinkle with both cheese.
- In a small bowl, mix together the cracker crumbs and the 3 tbsp melted butter; toss well.
- Sprinkle the buttered cracker crumbs over the casserole.
- Bake at 350 for about 30-35 minutes.
