3 cups bean sprouts

1/2 cup coriander / cilantro leaves
1/2 cup mint leaves
1/4 cup Asian Fried Shallots ((optional), to garnish (Note 1))
3 tbsp rice vinegar ((Note 2))
3 tbsp soy sauce ((Note 3))
2 tsp fish sauce (, or more soy (Note 4))
2 tbsp lime juice (, or more rice vinegar (Note 5))
3 tbsp peanut oil ((Note 6))
1 1/2 tbsp sugar (, any type)
1/2 tsp birds eye or other red chilli (, finely minced (optional))
2 garlic cloves (, minced)
3 cups shredded cooked chicken

Steps:

  • Combine the dressing ingredients in a jar and shake well.
  • Combine the salad ingredients, except the Asian Fried Shallots.
  • Pour over dressing and toss to combine.
  • Garnish with Asian Fried Shallots. Serve!

1 cup distilled white vinegar
1 tablespoon kosher salt, plus more if needed
2 teaspoons sugar
3/4 teaspoon celery salt
1/2 teaspoon freshly ground black pepper, plus more if needed
1 clove garlic, finely grated
1/2 head green cabbage, cored and very thinly sliced
1/2 head red cabbage, cored and very thinly sliced
4 large carrots, peeled and shredded on the large holes of a box grater
1/4 cup extra-virgin olive oil

Steps:

  • Whisk together the vinegar, salt, sugar, celery salt, pepper and garlic in a large bowl until combined. Reserve 1/4 cup of the dressing for serving. Toss the green cabbage, red cabbage and carrots in the remaining dressing until the vegetables are completely coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour and up to 3.
  • Strain the coleslaw through a colander and discard the liquid. Transfer the coleslaw to a serving bowl. Drizzle with the reserved dressing and the oil. Season with salt and pepper if necessary. Toss to coat.

2 teaspoons kosher salt
1/4 teaspoon black pepper
1 1/2 teaspoons ground ginger
Pinch red pepper flakes
3 garlic cloves, smashed and peeled
1/4 cup olive oil
3 scallions, chopped (about 1/4 cup)
1/4 cup coarsely chopped fresh cilantro
5 large fresh basil leaves, torn
2 tablespoons coarsely chopped fresh mint
1/4 cup rice wine vinegar
2 tablespoons fresh lime juice
2 tablespoons olive oil
2 teaspoons toasted sesame oil
1 teaspoon soy sauce
1 teaspoon fish sauce, optional
1 teaspoon sriracha hot sauce, optional

Steps:

  • Heat oven to 450 degrees. Put broccoli in a bowl and season with salt, black pepper, ginger and red pepper flakes. Toss with garlic cloves and oil. Spread broccoli on a baking sheet and roast for 15 to 20 minutes, until tender and lightly browned. Discard garlic cloves. While broccoli roasts, combine scallions, cilantro, basil and mint in a large bowl.
  • Make the vinaigrette: In a small bowl, combine rice wine vinegar, lime juice, olive oil, sesame oil, soy sauce and, if you want a stronger-flavored dish, fish sauce and sriracha. Whisk until emulsified.

1 (12 ounce) package broccoli slaw mix or 1 (12 ounce) package fresh express 3 color deli coleslaw mix
1/3 cup dried cranberries or 1/3 cup raisins
1 medium apple, diced (optional)
3 tablespoons sunflower seeds
1/4 cup slivered almonds or 1/4 cup sliced almonds
chow mein noodles (optional) or ramen noodles, broken (optional)
sweet and tangy coleslaw dressing, recipe below (or your favorite bottled dressing)
1/2 cup mayonnaise
3 tablespoons sugar
1/8 teaspoon garlic powder or 1 minced garlic clove
1/4 teaspoon onion salt or 1/4 cup finely chopped red onion
1/4 teaspoon black pepper
1/4 teaspoon yellow mustard (to taste)
1 1/2 teaspoons apple cider vinegar, can use white vinegar (to taste)

Steps:

  • In a small bowl, whisk together the mayo, sugar, garlic powder, onion salt, black pepper, mustard, and vinegar, whisking until sugar dissolves. Refrigerate while you prepare the slaw.
  • Totally optional step, but recommended: For a somewhat finer textured cole slaw, pulse it a couple of times in a food processor (in 2-3 batches). (The texture is shown in my photo).
  • In a large serving bowl, toss the broccoli slaw, apple (if using) cranberries, almonds and sunflower seeds together. Pour desired amount of dressing over the salad, tossing to coat well. Serve immediately, or leave the dressing off and refrigerate it and the slaw mixture in separate containers until serving time, then stir together.
  • Note: Unless I'm serving immediately, I usually just serve the dressing on the side instead of mixing it together.
