THE BEST VINEGAR COLESLAW
We love the zippiness that a vinegar-based dressing brings to this coleslaw, making it the perfect partner for rich, meaty dishes like pulled pork or ribs. Cabbage can take lots of seasoning and lots of vinegar, so don't be bashful. But the real secret to this colorful coleslaw is the marinating time - a long trip to the fridge softens up the veggies and gives them time to absorb the flavors of the vinaigrette. A drizzle of olive oil at the end balances the acidity.

Steps:
- Whisk together the vinegar, salt, sugar, celery salt, pepper and garlic in a large bowl until combined. Reserve 1/4 cup of the dressing for serving. Toss the green cabbage, red cabbage and carrots in the remaining dressing until the vegetables are completely coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour and up to 3.
- Strain the coleslaw through a colander and discard the liquid. Transfer the coleslaw to a serving bowl. Drizzle with the reserved dressing and the oil. Season with salt and pepper if necessary. Toss to coat.
CHINESE COLESLAW
We use this recipe a lot, especially in the summer. Everyone in the family enjoys it. It's great for barbecues, served with chicken and a little bread.

This broccoli slaw is a light version of a coleslaw because it doesn't have a heavy mayonnaise dressing--but it's still delicious! Best if refrigerated overnight.

Spread broccoli on a baking sheet and roast for 15 to 20 minutes, until tender and lightly browned. Discard garlic cloves. ASIAN BROCCOLI (OR CABBAGE) COLE SLAW W/ HOMEMADE DRESSING
The sweet and tangy homemade dressing jazzes up the broccoli, and the cranberries, almonds, sunflower seeds, and crisp noodles add amazing flavor and texture. And did I mention that it's super easy to throw together and can be made in advance.

Steps:
- In a small bowl, whisk together the mayo, sugar, garlic powder, onion salt, black pepper, mustard, and vinegar, whisking until sugar dissolves. Refrigerate while you prepare the slaw.
- Totally optional step, but recommended: For a somewhat finer textured cole slaw, pulse it a couple of times in a food processor (in 2-3 batches). (The texture is shown in my photo).
- In a large serving bowl, toss the broccoli slaw, apple (if using) cranberries, almonds and sunflower seeds together. Pour desired amount of dressing over the salad, tossing to coat well. Serve immediately, or leave the dressing off and refrigerate it and the slaw mixture in separate containers until serving time, then stir together.
- Note: Unless I'm serving immediately, I usually just serve the dressing on the side instead of mixing it together.

- Heat oven to 400°F. Place the broccoli and tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoons oil, salt, and pepper, and toss to coat. Bake for 10 to 15 minutes or until the broccoli starts to brown and the tomatoes soften and start to pop open.
- In a blender or jar, add the salad dressing ingredients, and either shake well or process until the dressing is very smooth and creamy. Adjust spiciness by adding more or less chili sauce. We like 1 tablespoon and it gives it a nice kick without being very spicy.
- Shred cabbage and carrots. I use my food processor to finely shred cabbage, but prefer the texture of julienne carrots.
