- In a large, straight-sided skillet, bring 2 inches of water to a simmer. Add shrimp and cook until opaque throughout, 2 to 3 minutes. Drain and rinse under cold water.
- Remove peel and pith from oranges and, working over a medium bowl, carefully cut between membranes, letting segments drop into bowl. Add carrots, lime juice, and jicama. Let sit for a few minutes. Mix in oil, sriracha, fish sauce, salt, and sugar. Adjust salt, sugar, and lime juice to taste. Stir in shrimp and cilantro. Serve on lettuce.
ASIAN SHRIMP SALAD WITH GINGER SESAME DRESSING
This quick and EASY Asian Shrimp Salad with Ginger Sesame Dressing is complete with all your favorite flavors, crunchy veggies and fresh herbs that can be easily made in just minutes!

- Preheat oven to 400 degrees F.
- Toss shrimp with olive oil on a large baking sheet and bake for about 5 to 7 minutes, until shrimp are pink and cooked through. Remove from oven and set aside.
- To make the ginger sesame dressing, combine all ingredients in a small jar with a sealed lid and shake well until combined. I also use this jar to store any extra dressing to use for the week.
- To make the sauce for the shrimp, whisk together chili paste, 3 tablespoons of the ginger sesame dressing and lime juice. Add cooked shrimp and toss to combine; set aside.
- For the salad, combine shredded cabbage, carrots, snap peas, cilantro and mint in a large bowl and toss with the extra ginger sesame dressing. Top with cooked shrimp and enjoy!
- If making this salad for lunches, store the dressing in a sealed jar and drizzle over salad just before eating so salad stays fresh.

- Put shrimp in a saucepan with salted water to cover; bring to a boil, then turn off heat and let sit for 5 minutes, or until shrimp are opaque in center. (Alternatively, grill or saute, sprinkling shrimp with salt as they cook.) Cool in refrigerator or under cold running water, then peel (and devein if you like). Cut shrimp in half if they're large.
- Combine nam pla or soy sauce with 2 tablespoons water, sugar and lime juice, and blend or whisk until smooth.
- Arrange the lettuce on 4 plates; top each portion with a few grapefruit pieces, some shrimp, and the mint and cilantro; drizzle with the dressing, then sprinkle with a little of the minced chilies and chopped peanuts if you like, or pass them at the table.

ASIAN SHRIMP SALAD

- Make the paste: In a blender combine the first 9 ingredients and blend until pureed. In a bowl toss the shrimp with the paste and let marinate while prepping the vegetables.
- Make the salad: In a large bowl combine the 6 salad vegetables. Make the dressing: In a bowl whisk together the 6 salad dressing vegetables. Spray a large skillet set over moderately high heat with some vegetable oil and heat until hot. Add the shrimp and cook, turning, for 3 to 4 minutes, or until just cooked. Add the shrimp to the salad bowl, drizzle with dressing to taste, and toss. Divide among serving dishes and sprinkle with the sesame seeds.
GARLICKY SHRIMP AND HERB NOODLE SALAD
Sour, tangy, sweet and spicy-this dish features the essential flavors of Southeast Asian cooking. In addition to mung bean noodles-also called cellophane or glass noodles-and shrimp, it's loaded with veggies and herbs, adding vibrant color and a mix of textures to the mix.

- 1. Bring about 4 cups water to a boil. Put the noodles in a large bowl, pour the boiling water over and let them soak until soft, 4 to 5 minutes. Drain in a colander and rinse in very cold water to cool. Shake off excess liquid so noodle are very dry. Cut the noodles with scissors into manageable lengths, about 4 inches. Transfer to a large bowl.
- 2. Pat the shrimp very dry. Heat a large skillet over medium-high heat. Add the vegetable oil and when it shimmers, add the shrimp, season with salt and cook turning once until pink and but not cooked through, 1-2 minutes. Add the garlic and cook stirring until the shrimp are coated, about 1 minute. Add the shrimp and garlic to the noodles along with the cucumber, carrot, jalapeno, herbs, lime juice, fish sauce and sugar and toss. (If the noodles clump, add up to 1/4 cup water to make mixing easier.) Season with salt or fish sauce to taste. Transfer to a serving platter. Transfer salad to a large platter and scatter the scallions on top. Serve at room temperature.

CRUNCHY ASIAN SALAD WITH SHRIMP AND SCALLOPS
A local restaurant serves a salad similar to this and after a lot of experimenting I came up with a pretty good imitation. I stop on the way home from work at the local Chinese restaurant to pick up the fried wonton strips. Don't let the number of ingredients scare you off as it assembles quickly and easily. You can make the dressing ahead of time and store in the refrigerator.

- Combine shrimp and scallops with 2 teaspoons soy sauce and set aside.
- Combine all dressing ingredients in jar and shake well.
- Divide wonton strips into two portions and place in bottom of of two serving bowls.
- Heat non stick skillet on medium high heat. Add 1 teaspoon olive oil or can omit and spray with Pam. Place marinated scallops and shrimp in hot pan and sear until done (this should only be a very short time until shrimp are pink-do NOT overcook). Turn off heat.
- Toss spring mix and cabbage with dressing. Place on top of wonton strips.
- Top salad mix with cooked shrimp and scallops.

ASIAN BOW-TIE PASTA SALAD WITH SHRIMP AND VEGETABLES
Steps:
- Whisk first 6 ingredients in small bowl to blend. Season dressing to taste with salt and pepper.
- Transfer half of dressing to large bowl. Mix in shrimp and bell peppers; let marinate 15 minutes.
- Cook broccoli stems and florets in large pot of boiling salted water until crisp-tender, about 2 minutes. Using slotted spoon, transfer broccoli to sieve and drain. Cook pasta in same pot of boiling water until just tender but still firm to bite. Drain; rinse with cold water until cool and drain again.
- Add broccoli, pasta and green onions to shrimp mixture. Toss with enough additional dressing to coat. Serve at room temperature, or cover and refrigerate up to 6 hours and serve cold.
ASIAN HERB SALAD

- Mix the shallots, rice vinegar, and sugar together in a small bowl and set aside.
- Trim excess stems from the arugula(or spinach), and pick the leaves from the stems of the herbs. Rinse and dry the arugula and herbs. Cut the bamboo shoots into matchsticks.
- To make the dressing, whisk the olive oil, sesame oil, mirin, salt and pepper together in a large bowl. Stir in the shallot mixture, taste and adjust flavors to taste.
- Very lightly toss arugula, bamboo shoots, and herbs in the dressing.
- Serve with chopsticks. Enjoy!

Steps:
- Pulse garlic and salt in a food processor until coarsely chopped, 2 or 3 times. Add shrimp; pulse until shrimp pieces are the size of small peas. (Do not puree)
- Heat the oil in a large skillet over medium-high heat. Add shrimp mixture and granulated sugar. Cook, stirring often, just until shrimp have cooked through, 3 to 5 minutes. Transfer mixture to a medium bowl. Let cool completely. Cover with plastic wrap, and refrigerate until ready to serve, up to 8 hours.
- Heat fish sauce and the brown sugar in a small saucepan over medium-low heat, stirring constantly, until sugar has dissolved. Remove from heat. Stir in cayenne and lime juice. Set aside. (Dressing can be refrigerated up to 1 hour.)
- Just before serving, add 1 sliced chile, the peanuts, and shallots to the shrimp mixture; toss to combine. Stir in dressing to taste; reserve any dressing that remains for dipping sauce.
- Add remaining sliced and whole chiles and the ginger to the remaining dressing to make dipping sauce. Add equal parts fish sauce and lime juice to yield about 1/2 cup dipping sauce. Arrange lettuce, bean sprouts, scallions, cucumber, string beans, watermelon, herbs, and lime wedges on a platter. Serve with shrimp salad and the dipping sauce.
