SIMPLE SOY DIPPING SAUCE
An easy to make all-purpose soy dipping sauce for dumplings, potstickers, egg rolls, lettuce wraps, fondue dip, and cooked meats such as chicken wings and seafood. I make it and use a funnel to put the sauce into an empty glass salad dressing jar but any other jar would do.From an old magazine clipping.

ASIAN DIPPING SAUCE
Steps:
- Make the dashi
- In a medium saucepan, soak the kombu in the water for 1 to 2 hours.
- Set the saucepan of kombu on the stove and turn the heat up to high. When the water begins to throw bubbles but before it reaches a rolling boil, remove the kombu with tongs and discard. Stir the katsuobushi into the broth, and return to a boil. Reduce the heat and simmer for 1 minute. Remove from the heat and let sit for 10 minutes.
- Strain through a cheesecloth-lined strainer set over a large bowl, then press as much liquid out of the katsuobushi as you can. Reserve the liquid. Discard the katsuobushi. You can add a dried shiitake mushroom to the liquid as it cools. Dashi keeps in the refrigerator for 1 week, or until it starts to cloud.
- Make the sauce
- Combine the dashi, scallions, cilantro, vinegar, soy sauce, ginger, mirin, sesame oil, and hot pepper flakes in a medium bowl. Season to taste with more vinegar, soy, and red pepper flakes. Give the sauce a few hours to meld before serving.
- Serve the pork shoulder shredded or chopped, along with rice and leaves of bibb (or other) lettuce. Let guests use the lettuce leaves to make rolls filled with pork and rice and dipped in the sauce.
SOY-SESAME DIPPING SAUCE
This soy sauce- and sesame-flavored dip is great for egg rolls, fresh or fried spring rolls, grilled meats, or poultry. Chill or heat before serving. This is also a great dressing for coleslaw -- just toss the slaw with the dressing and chill for up to 3 days. Add some shelled sunflower seeds and some crunchy chow mein noodles right before serving.

ASIAN INFUSED SOY SAUCE
I keep a jar of this in the fridge to have on hand and use it in almost all my Asian recipes. It will make a great dipping sauce for dumplings (wontons) when mixed with a little balsamic vinegar and some mirin. Sometimes I add chilli, but we don't always want chilli in our dinners so I'd rather add it later. A simple stirfry sauce can be made with this, add some fresh coriander and a sliced chilli and some oyster sauce. A jar kept in the fridge will keep for weeks- if you don't use it before then! Adjust flavours to taste. Tamari, dark and light soys can be used. Australian measurements (1 T = 4 tsp)

SOY DIPPING SAUCE
So basic yet so wonderful, this sauce has literally dozens of possible permutations. Especially good with spring, summer, or egg rolls, it's also terrific with grilled fish or meats. If you have the time, let it sit for a few minutes before serving to allow the flavors to come together. Information on Asian fish sauces like nam pla is on page 500.
