Chunks of beef alternating with whole mushrooms and red onion are threaded onto Callisons Mediterranean Garlic Herb Seasoned Skewers and grilled to perfection. To complete the meal, serve with orzo pasta tossed with olive oil, parsley and chopped tomato.

4 each Callisons Mediterranean Garlic Herb Seasoned Skewers
½ cup white wine
1 ¼ pounds boneless beef steak, cut into 2-inch chunks
8 medium (blank)s medium mushrooms
8 (1 1/2 inch) pieces red onion
1 teaspoon Salt and freshly ground black pepper to taste
1 tablespoon Olive or salad oil, as needed

Steps:

  • Soak skewers in white wine for 10 to 15 minutes.
  • Thread onto a skewer in the following order: beef-mushroom-onion, using 1 piece of each. Repeat 1 more time. Repeat with remaining skewers.
  • Let sit for 10 to 20 minutes in refrigerator.
  • Lightly brush skewers on each side with olive or salad oil and season to taste with salt and pepper.
  • Place on a preheated medium-high grill and cook until beef is cooked to desired doneness, about 4 to 5 minutes per side.

700 g rump steak, cut into 1cm-thick strips
3 garlic cloves, crushed
1 1/2 teaspoons dried herbs
2 1/2 tablespoons olive oil
8 about 600g chat potatoes
1 1/2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 pinch caster sugar
1 red capsicum, deseeded, diced
1/2 red onion, diced
80 g baby rocket

Steps:

  • Soak skewers in a shallow dish of cold water for 30 minutes. Drain.
  • Place beef into a bowl with garlic, herbs and 1 tablespoon of oil. Toss to coat. Thread onto skewers. Place onto a plate. Cover. Refrigerate for 1 to 2 hours, if time permits.
  • Meanwhile, cook potatoes in a saucepan of boiling salted water for 15 minutes or until just tender. Drain. Thickly slice.
  • Combine lemon juice, mustard, sugar, remaining 1 1/2 tablespoons oil, and salt and pepper in a screw-top jar. Shake well. Place potatoes into a bowl with capsicum, onion, rocket and dressing. Toss to combine.
  • Preheat a barbecue grill on high heat until hot. Reduce heat to medium. Cook skewers, turning, for 4 minutes for medium.
  • Serve skewers with potato salad.

This recipe comes from inspiration. I was asked to cook something for dinner and my mind pulled this together while in the store.I put my mind to work so I could make what I hoped would be a great Italian meal. My family loved it and I hope you and yours does too.

2 lbs beef round tip steaks (cut into bit size pieces)
2 small zucchini
1 large bell pepper (green)
1 medium onion
2 medium tomatoes
6 ounces mushrooms (your chioce)
3 cloves garlic (minced)
5 tablespoons olive oil
1 (12 ounce) bottle lawrey herb and garlic marinade
1 box bow tie pasta
salt and pepper

Steps:

  • Cut beef tips into bit size pieces.
  • Place in bowl and add 8oz of marinade.
  • Mix well and place in refrigerator for 30 minute to an hour.
  • After beef has marinaded,get a large skillet and add 2tbls of olive oil.
  • Make sure skillet is as hot as possible.
  • Add beef and cook until done.
  • Saute onions and garlic.
  • Then saute bell peppers and zucchini (saute only to the point it is softened but still crisp).
  • Finally saute the mushrooms.
  • Cut and remove seeds from tomatoes.
  • Then dice tomatoes.
  • Mix all ingredients into a large skillet and keep warm.
  • Boil pasta until desired softness.
  • Strain then put in a large bowl and toss with 3 tbls of olive oil.
  • Then mix in the beef and vegetables and toss well,adding last 4oz of marinade as you toss ingredients together.

1 sprig fresh thyme
1 sprig fresh rosemary
1 sprig fresh sage, bruised
fresh ground black pepper
12 -24 wooden skewers

Steps:

  • Mix marinade and pour into a a small cookie sheet pan to ft the wooden skewers.
  • Soak the skewers in liquid for one hour.
  • Then skewer your choice of food, fish, chicken, tofu, vegetables, cook on the grill or indoors if you prefer. A little trick so the skewers don`t burn is to hang them over the edge of the grill or wrap them in foil.
