Yield Makes 8 to 10 main-course servings

Number Of Ingredients 10

1 lb boneless chuck, cut into 1/2-inch pieces
1 (14 1/2-oz) can beef broth
1(28- to 32-oz) can whole tomatoes in purée
1 medium onion, chopped
1/2 stick unsalted butter, melted
1 tablespoon Worcestershire sauce
1 teaspoon sugar
2 cups fresh bread crumbs
1 lb sharp Cheddar, grated (4 cups)
1 lb elbow macaroni

Steps:

  • Simmer chuck in broth in a 2-quart saucepan, uncovered, stirring occasionally, until meat is very tender, about 1 hour.
  • While meat simmers, break up tomatoes by squeezing them into a bowl with purée. Cook onion in half of butter in a 4-quart saucepan over moderate heat, stirring, until softened. Add tomatoes with purée, Worcestershire sauce, and sugar, then simmer, stirring occasionally,15 minutes, or until slightly thickened.
  • Preheat oven to 400°F.
  • To make topping, toss together bread crumbs, 1 cup Cheddar, remaining melted butter, and salt and pepper to taste.
  • Cook macaroni in boiling salted water until al dente, then drain in a colander. Cool macaroni 3 minutes, then transfer to a large bowl. Toss with tomato sauce, beef with broth, remaining 3 cups cheese, and salt and pepper to taste.
  • Transfer macaroni mixture to a buttered 13- by 9- by 2-inch glass baking dish and spoon topping evenly over. Bake in middle of oven, uncovered, 25 minutes, or until topping is golden brown and mixture is bubbling.

  • In a large skillet over medium-high heat, cook beef and onion until the meat is no longer pink; drain. Stir in the remaining ingredients; bring to a boil. Reduce heat; simmer, covered, until macaroni is tender, stirring occasionally, 20-25 minutes. Add more water if needed.

½ large green bell pepper, coarsely chopped
½ large onion, chopped
1 (16 ounce) can tomato sauce
1 pound tomatoes, coarsely chopped
2 teaspoons Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon salt
¾ teaspoon dried basil
¾ teaspoon dried oregano
½ teaspoon ground black pepper
½ teaspoon chili powder
¼ teaspoon garlic powder
⅛ teaspoon hot pepper sauce (such as Tabasco®)
1 cup beef broth

Steps:

  • Cook beef in large skillet over medium heat, stirring occasionally, until browned, about 5 minutes. Transfer beef to a bowl.
  • Cook macaroni, bell pepper, and onion in the same skillet over medium heat for 3 minutes. Add cooked beef, tomato sauce, tomatoes, Worcestershire sauce, soy sauce, salt, basil, oregano, ground black pepper, chili powder, garlic powder, and hot pepper sauce. Pour in beef broth. Cover skillet and simmer until macaroni is tender, about 15 minutes. Remove lid and simmer, stirring occasionally, until thickened, 5 to 10 minutes.

1 cup chopped celery
2 cans mild rotel
2 cups shredded sharp cheddar cheese
8 ounces elbow macaroni
1 can of v8 juice
salt
pepper

Steps:

  • Cook Macaroni according to directions and drain.
  • Meanwhile, saute onions and celery in a little bit of oil until tender (about 10 minutes). Add Rotel, salt and pepper to taste, and simmer for 5 minutes.
  • In a casserole dish, layer 1/2 the macaroni, 1/2 the saute mix, 1/2 the cheese, then repeat. Pour 1/2 the can of V8 over the top so the macaroni stays moist while cooking.
  • Bake at 350 uncovered for 30 minutes.

1 (10 3/4 ounce) can tomato soup

  • Preheat oven to 325°F.

1 pound ground beef
1 medium onion, chopped
1 can (15 ounces) Italian tomato sauce
1 large egg
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1-1/2 cups 2% milk
2 tablespoons butter, melted
1 tablespoon minced fresh parsley
1 cup shredded cheddar cheese

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce; heat through., Drain macaroni; transfer to a greased 13x9-in. baking dish. In a small bowl, combine the egg, soup, milk, butter and parsley; pour over macaroni. 8 ounces elbow macaroni
1 pound ground beef
1 cup finely chopped onion
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon pepper
2 cans (each 8 ounces) tomato sauce
1 1/2 cups cooked frozen or fresh corn (2 to 3 ears)

Steps:

  • Bring a medium pot of water to a boil. Add macaroni, and cook until tender according to package instructions. Drain in a colander, and set aside.
  • Meanwhile, heat a large saute pan over medium-high heat. Add ground beef and onion; cook, stirring frequently with a wooden spoon, until meat is no longer pink and onion is soft and translucent, 4 to 5 minutes. Add cumin, chili powder, salt, and pepper; stir to combine.
  • Stir tomato sauce and corn into mixture in pan. Cook until sauce comes to a boil, about 5 minutes. Remove from heat, and stir in reserved cooked macaroni. Scoop onto plates, and serve warm.
