I love making a frittata whenever I want a quick meal. I always have eggs in the fridge and you can use a variety of vegetables. I like asparagus the best, though. This is also a KETO-friendly recipe.

Steps:

  • Heat olive oil and butter in a 9-inch nonstick pan over medium heat and cook asparagus, stirring occasionally, until soft but still firm to the bite, 10 to 15 minutes.
  • Beat eggs in a bowl until frothy. Stir in Parmesan cheese and milk; season with salt and pepper. Pour egg mixture over asparagus and cook until eggs are set, 10 to 15 minutes.
  • Invert frittata onto a plate and garnish with parsley.

1 pound thin asparagus
1 ½ teaspoons extra-virgin olive oil
2 onions, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
½ teaspoon salt, divided

Freshly ground pepper, to taste
4 large eggs
2 large egg whites
1 cup part-skim ricotta cheese
1 tablespoon chopped fresh parsley
½ cup shredded Gruyère cheese

Steps:

  • Preheat oven to 325 degrees F. Coat a 10-inch pie pan or ceramic quiche dish with cooking spray. Sprinkle with breadcrumbs, tapping out the excess.
  • Snap tough ends off asparagus. Slice off the top 2 inches of the tips and reserve. Cut the stalks into 1/2-inch-long slices.
  • Heat oil in a large nonstick skillet over medium-high heat. Add onions, bell pepper, garlic and 1/4 teaspoon salt; cook, stirring, until softened, 5 to 7 minutes.
  • Add water and the asparagus stalks to the skillet. Cook, stirring, until the asparagus is tender and the liquid has evaporated, about 7 minutes (the mixture should be very dry). Season with salt and pepper. Arrange the vegetables in an even layer in the prepared pan.
  • Whisk eggs and egg whites in a large bowl. Add ricotta, parsley, the remaining 1/4 teaspoon salt and pepper; whisk to blend. Pour the egg mixture over the vegetables, gently shaking the pan to distribute. Scatter the reserved asparagus tips over the top and sprinkle with Gruyere.
  • Bake the frittata until a knife inserted in the center comes out clean, about 35 minutes. Let stand for 5 minutes before serving.

3 tablespoons olive oil
½ pound fresh asparagus, trimmed and cut into 1 inch pieces
½ pound fresh mushrooms, sliced
6 eggs
1 tablespoon water
1 teaspoon chopped fresh thyme
3 tablespoons freshly grated Parmesan cheese
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt butter in an oven-safe skillet over medium heat. Stir in olive oil and asparagus, and cook until the asparagus is tender, about 10 minutes. Stir in the mushrooms, and continue cooking about 5 minutes.
  • In a medium bowl, whisk together eggs, water, and thyme. Pour into the skillet, and reduce heat to low. Cover, and cook 5 minutes.

1/2 cup shallots (chopped)
2 teaspoons salted butter
5 large eggs
4 large egg whites* ((1/2 cup))
2 tbsp fresh grated Pecorino Romano
3 oz part-skim Swiss cheese
1/2 tsp kosher salt and fresh pepper to taste

Steps:

  • Steam asparagus crisp and tender, about 3 to 4 minutes. Thinly slice on the diagonal into 1/2-inch pieces.
  • Preheat oven to 350°F.
  • Heat butter in a 10-inch oven safe skillet over medium heat. Stir in shallots and saute until golden, about 4-5 minutes. Add steamed asparagus, salt and pepper.
  • In a medium bowl whisk eggs, egg whites, grated cheese, salt, and pepper. Add the Swiss cheese and mix well.
  • Add eggs to the skillet making sure eggs cover the asparagus. Cook on medium for about 4 minutes, until the edges begin to set.

3 tablespoons roughly chopped fresh cilantro leaves

Steps:

  • Heat the broiler to high and arrange rack in upper third.
  • In a large bowl, whisk together eggs, cheese, salt, and freshly ground black pepper until thoroughly combined.
  • In a large ovenproof frying pan, heat the oil and the butter over medium-high heat. When it foams, add asparagus, season well with salt and freshly ground black pepper, and cook, stirring occasionally, until cooked through, about 5 minutes. Stir in the cilantro. Reduce heat to low, pour in egg mixture, and cook until a 1-inch border of egg mixture is firm, about 3 minutes. (The center of the frittata will not be set at this point.) 2 Tbsp butter, unsalted
1/2 c shallots, minced
1/2 tsp kosher salt
1 lb asparagus, tough ends snapped off and cut diagonally in 1 inch cuts
6 large eggs, lightly beaten
1 c gruyere or swiss cheese, freshly shredded

Steps:

  • 1. Heat butter into a 10-inch oven-proof frying pan over medium-high heat. Add shallots and cook, stirring occasionally, until they soften and turn translucent, about 3 minutes. Add asparagus, reduce heat to medium-low, and cook, covered, for 3 minutes. Pour in eggs and cook until almost set, but still runny on top, about 2 minutes. While cooking, pre-heat oven broiler.
  • 2. Sprinkle cheese over eggs and put in oven to broil until cheese is melted and browned, about 4-6 minutes. Remove from oven with oven mitts and slide frittata onto a serving plate. Cut into wedges.

1 lb. asparagus
1/2 onion (diced)
1 tbsp. butter
3 eggs
1 cup of egg whites
1 tbsp. 2% milk
3 oz. shredded Swiss cheese
2 tbsp. Parmesan cheese
Salt and pepper to taste

Steps:

  • Pre heat oven to 350.
  • Trim asparagus and cut into 1-inch pieces on the bias (aka on a diagonal) and steam for 3-4 minutes in the microwave.
  • In a large bowl combine egg, egg whites, Swiss cheese, Parmesan cheese, milk and season with salt and pepper.
  • Heat butter in a 12-inch skillet and add onion. Saut the onion for 5 minute or until it's fragrant and translucent. Stir in the asparagus and season with salt and pepper.
  • Turn off the heat and pour egg mixture into the pan with the veggies. Pop the pan into the oven for 18-20 minutes or until just cooked through. Cool and enjoy!

A recipe considerably adapted from a 1998 Home Beautiful magazine. A very tasty not too 'eggy' frittata. Serve this with a fresh carrot salad - suitable for vegetarians as well. The original recipe called for strong blue cheese, however I substituted a tasty cheese. Additions such as mushrooms and red capsicum makes this even better.Can also be baked in a pre-heated hooded barbecue.

4 bunches asparagus
4 tablespoons chopped chives
2 tablespoons chopped parsley
1 tablespoon dried sweet marjoram

200 g cheddar cheese

1 cup self raising flour
60 g butter, melted
5 eggs
1 cup milk

  • Lightly steam the asparagus, until tender, but not mushy.

1 medium tomato, coarsely chopped

  • 1. Preheat broiler. Mix Egg Beaters, cheese, and milk in a medium bowl until well blended; set aside.
