This is a wonderful warm appetizer for springtime entertaining. It's perfect for showers and also makes a tasty first course for Easter dinner.

- In a small bowl, combine the cream cheese, bacon and green onion. Flatten bread slices with a rolling pin; spread tops with cream cheese mixture. Trim asparagus 2 in. longer than bread. Place two spears on each slice; roll up bread and place seam side down on a greased baking sheet. Brush with butter; sprinkle with Parmesan cheese. , Bake at 400° for 10-12 minutes or until lightly browned. Serve immediately.

- Preheat oven to 375 degrees. Using a sharp knife, split each chicken breast in half horizontally, then pound between 2 pieces of plastic wrap until about 3/8 inch thick (you should have 8 flattened pieces). Season on both sides with salt and pepper.
- Heat oil in a large skillet over medium-high heat. Working in batches, saute chicken breasts and garlic until chicken is light brown on one side only, about 2 minutes; discard garlic.
- Transfer chicken to a baking sheet, browned side down. Sprinkle chicken pieces with half the cheese; layer each with a tomato slice and 4 asparagus pieces. Roll up; secure with a toothpick. Sprinkle remaining cheese over rolls; bake until chicken is cooked through, 15 to 20 minutes. Remove toothpicks. Serve hot.

- In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry. Set aside., Flatten bread with a rolling pin. Combine the cream cheese, bacon and chives; spread 1 tablespoonful on each slice of bread. Top with an asparagus spear. Roll up tightly; place seam side down on a greased baking sheet. Brush with butter and sprinkle with Parmesan cheese. , Cut roll-ups in half. Bake at 400° for 10-12 minutes or until lightly browned.

- Preheat oven to 400 degrees F (200 degrees C).
- Grease a baking sheet.
- Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- When bacon is cool, crumble and set aside in a bowl.
- Place asparagus spears into a large skillet and pour in about 1 inch of water. Place over medium heat, cover the skillet, and simmer asparagus until bright green and slightly tender, about 5 minutes. Remove asparagus and set aside.
- Place cream cheese and chives into the bowl with bacon and stir to evenly combine.
- Roll each bread slice with a rolling pin on a work surface until the slices are thin and flat.
- Spread cream cheese mixture evenly over each slice of bread.
- Center 2 asparagus spears on a bread slice, and roll the slice around the asparagus into a tidy and compact cylinder. Place seam side down onto the prepared baking sheet. Repeat with remaining ingredients.
- Brush each roll with melted butter and sprinkle each with about 1 1/2 teaspoon Parmesan cheese.
- Bake in the preheated oven until lightly golden brown and hot, 10 to 12 minutes.

ASPARAGUS ROLL APPETIZERS
This delightful dish makes a great asparagus appetizer and one that can be prepped ahead of time. You wouldn't know that it's made with white bread and baked! We really liked the creamy mixture of blue cheese and cream cheese. They're surprisingly good and easy to make.

- 1. Flatten bread slices with a rolling pin.
- 2. Mix together blue cheese, cream cheese, and the egg.
- 3. Spread bread with cheese mixture.
- 4. Roll asparagus spears in bread slices and place on wax paper.
- 5. Freeze on wax paper until firm (about 30 minutes).
- 6. When firm, cut each roll in half.
- 7. Roll in butter.
- 8. Then roll in Parmesan cheese.
- 9. Place on a foil-lined pan and freeze until firm (about 30 minutes). Store in plastic bags until ready to use.
- 10. Bake in 375 degree oven on Pam sprayed cookie sheets for about 15-20 minutes until golden.
- 11. Serve warm.
CHEESE AND ASPARAGUS ROLLS
This is a recipe from a cooking class taught by Doris Simms over 20 years ago, and it is still a favourite of ours. Doris shared many wonderful recipes. This is untested with low fat ingredients, but I expect that by using them the bread would become too moist and not brown and crisp when baked, and thus would not be as delicious, or beautiful to behold.

- Trim crusts from the bread.
- Sprinkle one side of bread with poppy seeds.
- Flatten with a rolling pin.
- Turn over bread slice and roll lightly again.
- Beat cream cheese together with mayonnaise and egg yolk.
- Beat until smooth then blend in grated cheese and lemon rind.
- Spread cheese mixture over plain sides of bread slices.
- Place 1 or 2 asparagus spears on each slice.
- Roll up, jelly roll fashion, and cut rolls in half. For a coctail party cut into thirds.
- Brush with melted butter.
- Place rolls, seam side down on baking sheet and bake in 400 degree oven for 10 minutes.
- If making ahead of time, cover the rolls with plastic wrap touching the surface, then cover the container.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cooled.
- Cook asparagus in a skillet with a small amount of water over medium heat until crisp and tender, about 6 to 8 minutes; drain and sprinkle with lemon juice.
- Flatten bread slices with a rolling pin.
- Stir cream cheese, crumbled bacon, and chives together in a small bowl until evenly mixed. Spread 1 tablespoon of the cream cheese mixture onto each slice of bread and top with an asparagus spear. Roll the bread tightly around the asparagus; arrange onto prepared baking sheet with seam side down. Brush the tops of the rolls with melted butter and sprinkle with Parmesan cheese.
- Bake in preheated oven until lightly browned, 10 to 12 minutes.

SMOKED SALMON ASPARAGUS PINWHEELS (PARTY SANDWICHES)
These pinwheels are absolutely delicious... don't wait for a party to make them, whip them up for a weekend brunch or evening snack! You can make these up to 1 day ahead and refrigerate. You should get around 48-50 pinwheels/sandwiches if you slice each bread roll into 8 pieces, but it will depend on how large you slice them, so servings is only estimated. Don't purchase the completely square slices of bread, purchase the sandwich loaf that is higher on the top. Plan ahead these need to chill for a minimum of 2 hours before slicing. You can also make these with fresh steamed asparagus, but I prefer the canned better.

- In a bowl stir together softened cream cheese and mayo; season with a pinch of cayenne pepper or to taste (if using) mix very well to combine.
- Remove crusts from ends of bread slices.
- Using a rolling pin roll out the bread slices to flatten slightly.
- Divide/spread the the cream cheese mixture between the 6 slices of bread.
- Divide and top with smoked salmon slices.
- Place one asparagus spread along the shorter end of each slice of bread (trim ends more if necessary to roll).
- Roll each slice of bread up firmly.
- Wrap EACH roll of bread up firmly in plastic wrap and refrigerate for at least 2 hours or up to 24 hours.
- Remove from fridge, using a serrated knife, slices each roll into 6-8 pieces.
- Cover and refrigerate pinwheels if not serving immediately.
ASPARAGUS APPETIZERS
My mother-in-law used to make these at her cocktail parties. There were never any left. I use them even as an appetizer when entertaining just one other couple. The nice thing is that you can take out just the amount you want. Although, be careful... I have one friend that could eat them all herself! Enjoy!

- 1. Mix together: cream cheese, lemon zest and bacon.
- 2. Cut crusts from 20 slices of Pepperidge Farm bread; roll flat.
- 3. Spread cheese mixture on bread. Lay stalk of asparagus on each and roll up. Secure with toothpick if necessary.
- 4. Brush top with melted butter and sprinkle with parmesan cheese. Put in freezer until frozen.
- 5. When using, partially thaw. Slice each roll into 3 equal pieces. Bake at 375 degrees 15 minutes.
- 6. Serve WARM.

- Trim crusts from bread, and flatten slightly with a rolling pin. 2.In a bowl, stir blue and cream cheeses together with the egg until well blended and creamy. Spread a thin layer of cheese mixture over each slice of bread. Roll one asparagus spear inside each, and fasten with a toothpick. 3.Melt butter in a small saucepan. Roll each asparagus wrap in butter to coat. Place on a baking sheet small enough to fit into the freezer, and freeze for one hour, or until butter hardens and wraps are somewhat firm. Remove pan from freezer, discard toothpicks, and cut each wrap in half crosswise. Store in a resealable plastic bag in the freezer until ready to use. 4.To serve, preheat oven to 400 degrees F (205 degrees C). 5.Arrange frozen asparagus wraps on an ungreased baking sheet. Bake in the preheated oven for 25 minutes, or until lightly browned. Check occasionally, and turn if necessary, for even browning and to prevent burning. Enjoy!
ASPARAGUS ROLLS
Steps:
- In a large skillet, bring enough water to boil to barely cover asparagus. Trim the spears to the same length as the bread slices and place in the skillet. Sprinkle with salt and cover tightly. Boil gently until the lower parts of the stalks are barely fork tender, about 3 to 5 minutes. Drain immediately and rinse in cold water to stop the cooking process. Remove crusts from bread and flatten slices with rolling pin. Combine cheeses and egg in bowl and beat with mixer until blended. Spread the mixture evenly over the bread slices. Place an asparagus spear on the edge of each one and roll up. Dip in melted butter to coat all sides. Place seam side down on a baking sheet and chill for 24 hours, or freeze. Cut rolls into thirds and bake at 400 degrees for 10 minutes or lightly brown for unfrozen and 15 minutes for frozen. Serve immediately.
