This recipe creates an impressive vegetarian main dish for brunch, lunch or dinner or a fancy side dish to perk up your meal. I love the combination of flavours and a serving of cottage cheese on the side compliments this nicely. This will make 2 servings as a vegetarian dish or 3-4 servings as a side dish.

1 lb fresh asparagus, trimmed
1 onion, roughly chopped
2 garlic cloves, minced
1 1/2 tablespoons olive oil
1/2 teaspoon salt
1 (14 ounce) can chopped tomatoes, in tomato sauce
1/4 teaspoon thyme
2 ounces mozzarella cheese, thinly sliced
1 tablespoon parmesan cheese, grated

Steps:

  • Lightly grease a shallow baking dish; Preheat the oven to 350°F.
  • Steam asparagus until crisp tender; arrange in baking dish.
  • Sauté onion and garlic in olive oil in saucepan until golden.
  • Add tomatoes, salt and thyme; simmer uncovered 15 minutes.
  • Pour sauce over asparagus.
  • Place slices of mozzarella cheese over top.
  • Sprinkle with grated Parmesan cheese.
  • Bake in preheated oven for 30 minutes.

10 fresh asparagus spears, trimmed
cooking spray
1 tablespoon grated Parmesan cheese
⅛ teaspoon garlic salt

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease a baking sheet with cooking spray.
  • Lightly coat asparagus with cooking spray; place on prepared baking sheet. Combine Parmesan cheese and garlic salt in a small bowl; set aside.
  • Bake in preheated oven for 6 minutes; turn asparagus and continue baking until tender, about 6 minutes.
  • Sprinkle Parmesan cheese mixture over asparagus.

2 pounds (1 kg) asparagus (washed, dried and wood ends removed)
3 tablespoons unsalted butter, (melted)
2 tablespoons olive oil
5 cloves garlic, (minced)
1/2 cup fresh grated Parmesan cheese ((or Parmigiano-Reggiano cheese))
1/2 cup Panko breadcrumbs
2 teaspoons parsley, (finely chopped)
Salt and pepper, (to taste (about 1/2-3/4 teaspoon salt and 1/4 teaspoon pepper))

Steps:

  • Preheat the oven to 400°F (205°C). Lightly grease a baking tray or sheet with non stick cooking oil spray.
  • Place the trimmed asparagus in a bowl. Add the rest of the ingredients and use your hands to evenly coat onto the asparagus.
  • Transfer the asparagus and breadcrumb mixture onto prepared baking sheet and arrange into one even layer. Bake for about 10 minutes, or until the asparagus are just tender.
  • Broil/grill for 2-3 minutes until breadcrumbs are golden browned and asparagus has reached desired doneness.
  • Serve warm.

  • Spray the inside of a 9x13 casserole dish with olive oil cooking spray. Place asparagus in the dish and lightly spray spears with cooking spray.

  • Preheat oven to 450 degrees F.
  • Trim and/or peel tough ends from asparagus.
  • On a rimmed baking sheet, toss asparagus with olive oil.
  • Season with salt and pepper.
  • Arrange asparagus in an even layer on the baking sheet.

1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan
2 lemons cut in wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges.
