- If using shrimp, use 2-3 large pieces per serving. Remove the tail, place in a small bowl and drizzle with a little olive oil, a splash of white wine, a squeeze of lemon juice, one small clove of freshly minced garlic, and a little salt and pepper and set aside. Heat chicken stock in medium saucepan. In a separate saucepan, heat garlic and and shallots in olive oil over medium-low heat, stirring frequently, until fragrant. Add rice and stir to coat for a few seconds. Add wine and a half cup of chicken stock. Stir frequently until liquid is mostly absorbed, then add another half cup of stock and saffron. Allow to absorb, and then add another half cup of stock, repeating the process until the stock has been mostly absorbed (about 20-25 minutes). Rice should be tender but slightly firm, and risotto should have a thick creamy consistency. Meanwhile (within 10 minutes of the risotto being ready): In a small skillet, heat about 1 Tbsp olive oil, and 1 small pat of unsalted butter. Saute the asparagus until just al dente--about 7 minutes. Set aside. In the same pan, cook the shrimp until pink-- about 2 minutes per side. Once the risotto is finished, remove from heat and stir in lemon juice**, lemon zest, parmigiano reggiano, asparagus and frozen peas. Add salt to taste. Garnish with grated cheese and lemon zest. Top with shrimp, if serving. **add about 1/2 the lemon juice, and taste. Add more, if you prefer for the lemon citrus taste to come through.

If like me arborio rice is unavailable to you, this a tasty risotto look-alike. Also, unlike traditional risotto, it does not require half an hour of constant stirring, and does not include some of the traditional ingredients such as peas.

- In large saute pan, heat oil over medium high heat. Add onion and garlic, saute for about 2 minutes, until onions are translucent.
- Add tougher asparagus pieces, continue to saute for about 1 minute. Add remaining asparagus and continue to saute for another minute.
- Add shrimp, saute for 1 minute.
- Add chicken broth, continue stirring. Cook until shrimp turn completely pink.
- Add all spices, stir to coat.
- Add prepared rice mix and feta. Stir to completely incorporate rice, feta, and shrimp/asparagus mixture.
- Enjoy!

A beautiful bright and easy risotto with an egg yolk added at the end to give a lovely silky richness - perfect for lunchtime entertaining

- Heat the stock in a pan over a very low heat - have a ladle at the ready. Melt the butter and olive oil in a high-sided, non-stick frying pan. Add the onion and a large pinch of salt, then cook, stirring, for 5 mins until softened and fragrant but not colouring. Tip in the rice and coat in the oil and butter, cooking for a few mins until beginning to toast. Pour in the wine and cook, stirring, until it's absorbed. Add the saffron and begin to add the stock, a ladle at a time, stirring continually. Add more stock as it's absorbed. After 25-30 mins, all the stock should be absorbed and the rice should be creamy and al dente.
- Add the Parmesan and stir until melted. Turn off the heat and stir in the egg yolk. Season and serve with a peppery rocket salad, if you like.

Made this for the first time last night, and the bowl was licked clean within minutes! Best prawn risotto I've made at home to date. Have some spare stock and wine handy because the amount absorbed by the rice varies depending on lots of things - altitude, heat of cooking, type of rice etc.

- Heat the oil in a large, heavy pan. Add the onion, garlic and chilli and heat until golden.
- Meanwhile, shell all the prawns but one per person, discarding the shells but retaining the heads.
- Add the rice to the onion and stir until well covered with oil.
- Reduce the heat and add saffron and white wine to the rice, stirring until the wine is mostly absorbed.
- Add the prawn heads to the mix and ladle in the fish stock, about 100ml at a time, waiting until it is absorbed by the rice before adding another ladle.
- When the rice is almost done (it should be a soft, creamy consistency), add the fish meat, two whole prawns and basil.
- Turn the heat to high and cook, stirring, until the prawns are *just* done - don't overcook or they will turn rubbery.
- Season with salt and pepper - remove the heads if you wish.
- Just before serving, add the butter and stir in well.
- Serve garnished with a whole prawn.

- Trim and cut the asparagus into 1 inch pieces.
- Chop the onion to your desired texture.
- Bring a large pot of water to boil and add the asparagus.
- Cook until crisp-tender, approximately 3-4 minutes.
- Remove the asparagus and set aside.
- Add the pappardelle to the boiling water and cook till al dente.
- While the pasta is cooking, set a large skillet over medium heat.
- Add saffron to the skillet and heat till the saffron is fragrant and brittle, approximately 30 seconds.
- Crush the saffron to a powder with the back of a wooden spoon.
- Add the butter to the pan, heat till melted.
- Add the onion and saute till translucent.
- Stir in peas and orange zest, cook about 2 minutes, till peas are tender.
- Add the orange juice and asparagus, cook till the asparagus is warmed through.
- Season to taste with salt.
- When the pasta is cooked, drain and toss with the asparagus mixture.
- Serve with the grated Parmesan cheese.

- Cook the asparagus in salted boiling water until crisp-tender. Drain and cool under running water; cut into 1-inch pieces.
- Season the shrimp with salt and pepper. In a skillet, heat the oil. Add the shrimp and cook over moderately high heat, turning, until just white throughout, 3 minutes. Transfer to a plate.
- In a large saucepan, melt 4 tablespoons of the butter. Add the onion and cook over moderate heat, stirring, until softened, 5 minutes. Add the rice and cook, stirring, for 2 minutes. Add the wine and simmer until almost evaporated. Add enough stock to just cover the rice and cook, stirring, until the stock has been absorbed. Stir in the saffron and continue stirring in stock, 1/2 cup at a time, until nearly absorbed between additions. The risotto is done when the rice is al dente and suspended in a creamy sauce, 25 minutes. Stir in the cheese and remaining 2 tablespoons of butter. Fold in the asparagus and shrimp. Season with salt and pepper.
