As a military spouse living overseas, I got the chance to try many styles of cooking. Here's a Mediterranean-inspired recipe that we still love today. -Stacey Boyd, Springfield, Virginia

4 cod fillets (6 ounces each)
2 tablespoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
1 small green pepper, cut into thin strips
1/2 small red onion, thinly sliced
1/4 cup pitted Greek olives, sliced
1 can (8 ounces) tomato sauce
1/4 cup crumbled feta cheese

Steps:

  • Preheat oven to 400°. Place cod in a greased 13x9-in. baking dish. Brush with oil; sprinkle with salt and pepper. Top with green pepper, onion and olives., Pour tomato sauce over top; sprinkle with cheese. Bake until fish just begins to flake easily with a fork, 15-20 minutes.

This fish is so easy and really flavorful. If you like spicy, try sprinkling a little bit of cayenne pepper as well as the seasoning on the fish before pour the mixture over it. One of the household favorites!

4 (6 ounce) fillets halibut
1 tablespoon Greek seasoning (such as Cavender's®)
1 large tomato, chopped
1 onion, chopped
1 (5 ounce) jar pitted kalamata olives
¼ cup capers
¼ cup olive oil
1 tablespoon lemon juice
salt and pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place halibut fillets on a large sheet of aluminum foil and season with Greek seasoning. Combine tomato, onion, olives, capers, olive oil, lemon juice, salt, and pepper in a bowl. Spoon tomato mixture over the halibut. Carefully seal all the edges of the foil to create a large packet. Place the packet on a baking sheet.
  • Bake in the preheated oven until the fish flakes easily with a fork, 30 to 40 minutes.

A low calorie and SPEEDY recipe from Family Style Spring 2009, a Publix Publication. They say tilapia, snaper or mahi mahi all provide great results; I made it with grouper and that worked well. They also recommend serving with a salad of cucumbers, tomatoes and feta along with some pita bread and hummus.

4 tilapia fillets, thawed (1-1.5 pounds)
1/2 teaspoon lemon pepper
1 teaspoon all purpose Greek seasoning, divided
1 tablespoon extra virgin olive oil
1 tablespoon minced garlic
1/4 cup diced onion
1 (14 ounce) can quartered artichoke hearts (drained)
1 (14 1/2 ounce) can diced tomatoes (drained)
1/2 cup white wine
2 tablespoons sliced black olives

Steps:

  • Preheat large saute pan on medium-high for 2-3 minutes.
  • In the meanwhile, season both sides of the fish fillets with pepper and 1/2 t of the Greek seasoning. Wash your hands.
  • Place oil in pan; swirl to coat. Add garlic and onion; cook 1-2 minutes until onion is soft.
  • Add fish fillets (wash hands). Top fish with remaining ingredients (including remaining 1/2 t Greek seasoning).
  • Cover and cook 8-10 minutes, stirring veggies once. Cooking time will depend on the thickness of the fish. . .fish is done when it has an internal temperature of 145 degrees and flesh is opaque and separates easily with a fork.

1 1/2 cups water or 1 1/2 cups chicken stock, per package of noodles
onion, chopped (green, red, yellow, white, pearl, sweet, leeks, chives or shallot)
carrot (finely chopped, thinly sliced, or julienne, baby carrots work very well)
celery (finely chopped or thinly sliced)
mushroom (of whatever sort, thinly sliced, fresh, tinned, or dried)
bell pepper, finely chopped (a mix of colors adds to the visual appeal)
fresh yams or fresh sweet potato, julienne and cut to very thin bite size
cherry tomatoes, quartered
sausage (kielbasa, bratwurst, mettwurst, pepperoni, genoa, what have you, cut into thin bite-size bits)
cold cuts beef (lamb, pork, ham, chicken or turkey, cut bite size)
bacon, crumbled
meatballs (crumbled or cut bite size) or meatloaf (crumbled or cut bite size)
beef jerky, cut thinly across the grain
cooked fish (fresh or tinned, anything but lobster, there are no recipes for leftover lobster, there's never any) or shell fish, clams, oysters, mussels, crawdads, s callops, etc (fresh or tinned, anything but lobster, there are no recipes for leftover lobster, there's never any)
cheese (of every persuasion, grated, shredded, crumbled or cut into small cubes, Ramen with green onions and)
soy sauce, Worcestershire, tamari, hot, barbecue (I prefer Cholulla hot sauce)
mustard, horseradish, etc. (Anything I may have missed? Check your fridge and pantry, you'll find something)
salt & freshly ground black pepper

Steps:

  • Bring the water or stock to a boil in a sauce pan.
  • Open the noodles.
  • If you like playing with long noodles leave them as is, if not break them into more manageable lengths (throw away the little 'flavor packet' of unpronounceable chemicals).
  • When pan boils, add the noodles and any options you desire and cook, covered for 3 minutes.
  • ADD ANY COOKED FISH OR SHELLFISH AFTER THE NOODLES ARE DONE TO AVOID OVERCOOKING IT.
  • Flavor with any sauce(s) you wish.
  • That's it start to table in 10 minutes.
