AUNT GISELE'S CARAMEL COOKIES

1/2 pound butter
2 egg yolks
1 cup sugar
Scant 1/4 teaspoon ground cinnamon
2 cups unsifted flour
1/2 pound sliced blanched almonds
3/4 cup sugar
6 tablespoons butter
3 tablespoons honey
3 tablespoons milk

Steps:

  • Preheat the oven to 350 degrees. Butter and flour a 15 1/2 by 10 1/2 by 1-inch jelly roll pan; set aside.
  • Combine the butter, yolks, sugar, cinnamon and flour and mix until you form a cohesive ball of dough. Spread the dough onto the prepared jelly roll pan and bake for 15 minutes.
  • Meanwhile cook the almonds, sugar, butter, honey and milk, stirring on occasion, until the mixture is light golden.
  • Remove baked dough; spread almonds mixture over the top and bake for 15 to 20 minutes longer until dark golden. Cool and cut into squares or rectangles (be sure to cut the cookies before they turn too hard.)

1 (8 ounce) package cream cheese, softened
½ cup butter, softened
2 cups all-purpose flour
1 cup white sugar
⅓ cup milk
½ pound ground walnuts
⅓ cup confectioners' sugar for decoration

Steps:

  • Beat together cream cheese and margarine until well blended. Add flour, mixing well. Shape into a ball, cover and chill for 2 hours.
  • In saucepan over medium heat, cook sugar and milk, stirring occasionally until milk boils and sugar is dissolved. Add the ground nuts. Remove from heat and let cool until mixture is of spreading consistency.
  • Roll out chilled dough on lightly floured surface to a rectangle about 18 X 12 inches. Cut in half lengthwise. Spread each piece with milk/nut filling and roll up like a jelly-roll, starting from the long side.
  • Cut each roll in half. Place seam side down on ungreased cookie sheets (two on a baking sheet). Leaving roll's shape intact, cut into slices 1/2 inch thick almost to the bottom of the roll.
  • Bake at 350 degrees F (175 degrees C) for 15 to 20 minutes or till done. Remove from sheet and sprinkle with confectioners' sugar. Cool on racks. Cut cookies all the way through. Refrigerate or freeze. Re-sprinkle with confectioners' sugar before serving.
  • Variations: A) In place of milk/sugar/nut filling, spread with ground filberts and red raspberry preserves. B) Before rolling, sprinkle chopped chocolate chips over milk/sugar/nuts filling.

2 -3 green peppers
1 -2 medium onion
2 cans stewed tomatoes (Italian Style, Blended but not pureed.)
2 cans chili beans
1 (12 ounce) can tomato sauce
1 1/2 tablespoons chili powder
2 tablespoons ground cumin
1 teaspoon garlic (chopped or powder)

Steps:

  • Brown Turkey in large sauce pan with chopped onions and peppers.
  • Put turkey, into crockpot and add tomatoes, chili beans, tomato sauce, cumin, garlic, salt and pepper to taste, and chili powder.
  • Simmer on low all day long!

Wonderful frozen treat that everyone loves. Very colorful and great for the holidays and extremely easy to make. Cooktime is long due to freezing time, as this actually just takes minutes to make.

3 ounces cream cheese
9 ounces pineapple bits (drained)
7 ounces 7-up
2 cups peaches (diced, drained)
2 cups red maraschino cherries (drained)
2 cups green maraschino cherries (drained)
1/2 cup white sugar
1/2 cup Cool Whip
1 1/2 cups colored miniature marshmallows

Steps:

  • In a large bowl, mix cream cheese, pineapple and 7-UP.
  • In a smaller bowl mix peaches, cherries and sugar.
  • Pour contents of 2nd bowl into 1st bowl.
  • Put in freezer until halfway frozen (about an hour).
  • Remove the coolwhip from freezer (to partially thaw).
  • After the hour or so, remove the mixture from freezer and fold in the cool whip and marshmallows.
  • Put back in freezer until frozen.
  • My aunt makes this in a bundt pan, but I just use round bottom tupperwares so that when I remove it and serve, it looks like a little igloo.
  • To remove easily from tupperware or bundt pan, surround with a hot wet cloth for a moment, it will slide out easily.
  • Slice to make a beautiful, colorful, tasty treat.
