MY AUNT TERRIE'S FAMOUS HOMEMADE DINNER ROLLS (BEST EVER!)

Steps:
- In a heat-proof bowl, melt 1 stick of the butter in the microwave and allow it to cool.
- Add 1/4 cup warm (not hot) water, the yeast, and 2 tablespoons of sugar to a small bowl and stir slightly with fork. Set aside to proof.
- In a mixing bowl of a stand mixer fitted with a dough hook, put 3 cups of the flour with the salt, eggs (preferably at room temperature), 1 cup warm (not hot) water, 1 cup sugar, and the cooled melted butter. Mix well.
- Add the yeast mixture and gradually add the remaining 2 cups of flour and keep beating. Cook's Note: You may not need the whole 5 cups of flour; the stickier (not runny) the dough, the lighter the rolls.
- Transfer the dough to a large bowl and pour about 1/4 cup of oil over the dough. Cover with a plate and let rise, at least double or more its original size, about 2 hours.
- Preheat the oven to 350 degrees F.
- After the dough has risen, transfer it to a floured surface and knead it a little. Roll out the dough about 1/4-inch thick (or thinner). Let the dough rest a few minutes while you melt the other stick of butter. Use a cookie cutter and cut out rolls. Dip each roll in melted butter, fold in half and put them on a sheet pan. Arrange them close together, filling up the pan.
- Bake until nice and brown. Ovens vary, so maybe about 20 minutes.
- Take the pan out of oven and immediately brush the rolls with butter. Transfer them to a serving dish and serve.
AUNT JUDY'S HAMBURGER ROLLS
Steps:
- Mix yeast mixture first and set aside. Combine sugar, salt, oil, egg, water and yeast (when done). Add 5 cups of flour, stir in then add 3 cups of flour. Mixture could be very sticky. Kneed 1 cup flour into dough, if more if needed. Let rise, covered for 4 hours. Shape into rolls, place on greased cookie sheets, let rise 4 more hours. Cook 10-12 minutes 400.

- In a large bowl, dissolve yeast in warm water. Add oil and sugar; let stand for 5 minutes. Add the egg, salt and enough flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 3-5 minutes. Do not let rise. Divide into 12 pieces; shape each into a ball. Place 3 in. apart on greased baking sheets. Preheat oven to 425°., Cover and let rest for 10 minutes. Bake until golden brown, 8-12 minutes. Remove from pans to wire racks to cool.

AUNT JUDY'S CHRISTMAS BREAD
A braided yeast bread filled with almond, pastry cream, and walnut fillings. This is a recipe that my aunt used to make every year for Christmas morning when the entire family would gather at her house. Now I make it for my family. It takes awhile to make and uses an insane amount of dishes, but it's worth it. So delicious!

Steps:
- Mix water, yeast, and 1 tablespoon sugar together in a small bowl until yeast is raised and bubbly, 5 to 10 minutes.
- Cream butter and 1 cup sugar together in the bowl of an electric stand mixer. Pour in warm milk and add yeast mixture, eggs, and salt; mix together. Mix in flour until just incorporated; do not knead dough.
- Move dough to a large bowl and cover with a towel. Let rise until doubled in size, about 1 1/2 hours. Punch dough down and let rise for another 45 minutes.
- While dough is rising, heat milk for pastry filling in a medium saucepan until warm, 2 to 3 minutes. Whisk in 3 tablespoons flour gradually. Beat egg yolk in a separate bowl and add a little of the warm milk mixture to temper it; whisk yolk mixture into milk mixture. Mix in sugar and salt. Cook until thickened, stirring constantly, about 5 minutes.
- Let cool to room temperature, about 5 minutes. Cover the top with plastic wrap, touching the filling, to prevent skin from forming. Refrigerate until cool, 20 to 30 minutes.
- Meanwhile, make almond filling by mixing butter, sugar, and almond extract together in a bowl until blended. Set aside.
- Make nut crumb filling by crumbling flour, sugar, walnuts, and butter together in a bowl. Set aside.
- Preheat the oven to 375 degrees F (190 degrees C). Line 2 half sheet pans with parchment paper or silicone mats.
- Divide the dough and fillings in 1/2 for 2 loaves. Set aside a small amount of nut filling to sprinkle on top of loaves.
- Roll out 1/2 of the dough onto 1 of the prepared pans into a rectangle that fills the pan. Spread cream filling lengthwise down the middle 1/3 of the dough, leaving about 1 inch free on each short end. Sprinkle almond filling on top of cream, followed by nut crumb filling.
- Make diagonal cuts into the dough on either side of the filling down each side, about 2 inches apart; don't cut too close to filling or it will leak out. Fold dough strips across the top of the filling, alternating each side, to make a braid. Tuck the 2 short ends into the braid to prevent leaking. Brush with reserved egg white and sprinkle with 1/2 of the reserved nut crumb filling. Repeat for second loaf.
- Bake loaves in the preheated oven until golden, 20 to 30 minutes.
- Remove from the oven and let cool for at least 20 minutes. Slice and serve.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and saute for 5 to 10 more minutes. Season with garlic powder, salt and pepper to taste. Add the tomato sauce, stewed OR diced tomatoes, corn and cooked macaroni. Stir well and allow to heat through, about 5 to 7 minutes.

AUNT JUDY'S PUMPKIN DESSERT
This is for all those out there that eat pumpkin pie only because its Thanksgiving, not really because they love it. This recipe will make you want canned pumpkin stocked in your pantry year round! YUMMY! And the kids love it!

Steps:
- Mix first 3 ingredients and spread into 9x13 inch casserole dish then bake for 30 minutes.
- Cool.
- Mix next 3 ingredients well and spread over cooled crust.
- Refrigerate 1 hour.
- Mix next 5 ingredients well and bring to a boil.
- Dissolve gelatin in 1/4 cup of water and add to boiling mixture.
- Turn heat down to warm.
- Beat the three egg whites, gradually adding 1/4 cup of sugar until stiff.
- Fold egg white mixture into slightly cooled pumpkin mixture and spread over the other 2 layers of the dessert.
- Top with a generous layer of Cool Whip to finish off this yummy dessert.

AU JUS ONION BURGERS
Very tasty Burger recipe served with a flavorful dipping sauce. Use whatever type bun that you like but I recommend a really crispy roll or an 8" slice of French Baguette sliced through the middle. Use the cheese of your choice. Serve with a small green/tomato side salad. I have said 4 slices of cheese and 4 rolls but you can make this recipe to serve 6 just get 2 more rolls & cheese slices. I have added 1-2 tsp Wasabi but only if you like HOT

Steps:
- Mix the beef with the worchestershire sauce, garlic, Wasabi (if using) & pepper.
- Shape into 4 patties to match the shape and size of your rolls.
- Cook the patties in a skillet. Have heat on high, brown one side of the patties, turn heat to medium, flip the patties, add the onion and cover the pan.
- Contimue cooking until the patty is nicely browned and the onions are golden, stir the onions a few times to prevent burning while cooking.
- Pour in the onion soup, turn heat to high, bring to a simmer and cook covered a further 5 minutes.
- Meanwhile Toast the inside of your bun, top with cheese(I like to broil the bun so the cheese melts).
- Place meat and onions on the bun.
- Serve with the" Au Jus" in individual cups large enough to dip the burger.
- Enjoy.
