ITALIAN COD TRAYBAKE {WITH PANCETTA}
This oven baked Italian Cod traybake recipe is an easy and complete meal that's packed with Italian flavours. Crispy pancetta bacon wraps the fish and tomatoes add a juicy sauce. All in one pan!

Steps:
- Pre heat the oven to 200C.
- Put the potatoes and 1 tbsp of the oil onto a baking sheet. Cover the potatoes with the oil and bake for 15 minutes.
- Add the onions, peppers, garlic cloves with the herbs and salt and pepper and the extra 1tbsp of oil. Mix thoroughly and return to the oven for 15 minutes.
- Meanwhile, wrap the cod loin fillets in the pancetta.
- Remove the tray from the oven, add the tomatoes, olives and cod fillets wrapped in pancetta.
- When cooked, sprinkle with fresh basil and serve.

- If you are using Frozen cod defrost and drain all liquid from pouch.
- Marinade cod in zesty Italian dressing set aside for 30 minute.
- Combine all dry ingredients in bowl or ziplock bag.
- Place cod in bowl or ziplock bag to coat.
- Put cod in non greased baking dish
- Bake for 35 minute or until done.

- Preheat oven to 450 degrees F (230 degrees C).
- In a small shallow bowl, stir together the bread crumbs, cheese, cornmeal, oil, italian seasoning, garlic powder and pepper; set aside.
- Coat the rack of a broiling pan with cooking spray. Place the cod on the rack, folding under any thin edges of the filets. Brush with the egg white, then spoon the crumb mixture evenly on top.
- Bake in a preheated oven for 10 to 12 minutes or until the fish flakes easily when tested with a fork and is opaque all the way through.

CRUNCHY PECORINO BAKED COD
Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with parchment paper.
- Place cod fillets on a paper towel. Place another paper towel over top, and press until fillets are thoroughly dried. Season both sides of each fillet with salt and pepper and place on the prepared baking sheet.
- Mix together bread crumbs, Pecorino Romano cheese, mayonnaise, butter, oregano, thyme, and Worcestershire sauce in a bowl until well combined. Season to taste with salt and pepper. Spread a generous amount of topping over each cod fillet.
- Bake in the preheated oven for 8 to 10 minutes. Switch to broil and broil until topping is browned and cod flakes easily with a fork, 2 to 3 minutes. Serve immediately.

- In a saucepan, bring orange juice, wine and shallot to a boil over medium-high heat. Cook until reduced, 10-12 minutes. Lower the heat and whisk in 6 tablespoons butter, one tablespoon at a time; season with salt and pepper. Using a food processor, pulse the macadamia nuts with 1/4 cup panko until coarsely chopped. Transfer to shallow bowl and stir in the remaining 1/2 cup panko. Put the beaten eggs in a separate wide, shallow bowl. Season the fish with salt and pepper, dip in the egg and coat with the panko mixture. Heat 2 tablespoons butter and 2 tablespoons oil over medium-high heat until melted. Add fillets and cook, turning once, until golden, about 8 minutes.
QUICK & EASY ITALIAN-STYLE COD FILLETS
In my never-ending quest to get my husband, not a fish fan, to eat what's good for him, I put this recipe together using items from my pantry. Remembering what I had learned from my Italian "super-cook" mother, I came up with this delicious, quick and easy fish recipe. He loved it! This might even convert a couple of fish-haters.

Steps:
- Mix together the canned tomatoes and garlic.
- Spread 1/2 of the tomato/garlic mixture on the bottom of a large frying pan.
- Place the fish fillets on top of the tomatoes.
- Spread the remaining mixture over the fillets.
- Sprinkle with salt, pepper and Italian cheese.
- Bring to a boil, lower heat and simmer until fillets flake easily with a fork.
- Serve with rice or pasta.

AUNT PHYL'S BAKED COD ITALIAN-STYLE RECIPE

- Preheat oven to 400. Using a blender or chopper, crumble day old bread to make fluffy bread crumbs, not too fine. In a saute pan, heat 2 T of oil and add onion and garlic. Season w/ salt and pepper, saute over low heat til the onion has wilted and started to turn translucent; be careful not to let it brown. Transfer to a large mixing bowl. Wipe the pan w/ paper towel to clean it, then place it back over low heat and add the remaining oil. Dump the breadcrumbs into the pan and stir to completely coat them w/ oil. Transfer the breadcrumbs to a large mixing bowl and let cool slightly. Mix in the chopped parsley and add the golden raisins to mixture. Salt and pepper. Lay fish fillets in a large foil baking pan and season w/ a bit s/p. Distribute the breadcrumb/herb/raisin mixture evenly on the top of the fish. Drizzle w/ olive oil to moisten. Cover and bake for 25 mins. Remove foil cover and bake for 15 mins longer to brown breadcrumbs.
