A simple, moist mellow spiced crumb cake that is perfect for brunch or any other time. Long time family favorite.

1 cup white sugar
1 ½ cups all-purpose flour
½ cup butter, cut into pieces
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 teaspoon baking soda
1 pinch salt
1 cup buttermilk
1 egg, lightly beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking pan or casserole dish.
  • Combine sugar, flour and butter. Use a fork to cut butter in until mixture resembles coarse crumbs. Set aside 1/2 cup of this mixture to use as topping.
  • To the remaining flour mixture, add cinnamon, cloves, baking soda and salt. Lightly stir in the buttermilk and egg. Pour batter into prepared pan. Sprinkle cake with reserved topping.
  • Bake in preheated oven for 25 minutes, until a toothpick inserted into center of the cake comes out clean.

1/2 cup butter, softened
1 cup sugar
2 large eggs
1 cup sour cream
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
TOPPING:
1/2 cup sugar
1/4 cup chopped walnuts
2 tablespoons sweetened shredded coconut
2 teaspoons ground cinnamon

Steps:

  • In a large bowl, cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in , sour cream and vanilla. Combine the flour, baking soda and salt; add to the creamed mixture and mix well. Spread half into a greased 9-in. square baking pan., Combine topping ingredients; sprinkle half over batter. Carefully spread remaining batter on top; sprinkle with remaining topping. This recipe is actually more crumb than cake; very buttery and yummy. Makes two large trays. Wrap well, after cooling and freeze one for later use.

4 ounces butter, room temp
1 cup sugar
2 eggs, room temp
2 cups flour
3 teaspoons baking powder
1 cup milk
1 teaspoon vanilla
3 cups flour
8 ounces butter, room temp
2 cups sugar
1 teaspoon cinnamon

Steps:

  • Preheat oven to 375°.
  • Cream butter and sugar until light yellow and well blended.
  • Add eggs, one at a time.
  • Sift flour and baking powder together and add alternately with milk, beginning and ending with 1/2 cup of flour.
  • Add vanilla.
  • Spray two cookie sheets with cooking spray and fit with parchment paper. Spray again.
  • Divide batter between two trays.
  • Mix all crumb ingredients together with a fork, and form into two balls.
  • Crumble each ball over each tray.
  • Bake for 25 to 30 minutes.
  • When cool, sprinkle with confectioners sugar.

1 1/4 cups whole roasted pecans, roughly chopped
3/4 cup all-purpose flour
3/4 cup light brown sugar
3/4 cup granulated sugar
2 teaspoons ground cinnamon
1 1/4 sticks (10 tablespoons) unsalted butter, melted
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for greasing the pan
2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
1 cup sour cream
19 mini coffee cake-flavored cake doughnuts or 9 regular glazed cake doughnuts
8 ounces cream cheese, at room temperature
4 tablespoons unsalted butter, at room temperature
2 cups confectioners' sugar
2 teaspoons pure vanilla extract

Steps:

  • For the streusel: Preheat the oven to 325 degrees F.
  • Stir together the pecans, flour, brown sugar, granulated sugar, cinnamon and butter in a large bowl until wet, sandy and combined. Spread 3/4 cup on a baking sheet (set the remaining aside for the cake). Bake until the streusel is set and crispy, about 15 minutes. Break up the pieces with a spatula and let cool completely in the pan, about 30 minutes. Break up the pieces into crumbs with your hands and set aside.
  • For the cake: Grease a 9-by-13-inch baking sheet with butter. Whisk the flour, baking powder, baking soda and salt in a medium bowl.
  • Beat the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream; begin and end with the flour and beat until just incorporated.
  • Pour the batter into the prepared pan (it will be very thick) and smooth with a silicone spatula. Press 15 mini doughnuts or 6 regular doughnuts into the batter and sprinkle over the reserved un-baked streusel topping. Bake until a toothpick inserted into the center of the cake comes out clean, 60 to 65 minutes. Run a knife around the edge of the pan to loosen any streusel that has baked on. Let cool in the pan for 1 hour, then invert onto a serving platter to cool completely, about 2 hours more.
  • For the frosting: Meanwhile, beat the cream cheese and butter in a medium bowl with an electric mixer on medium speed until light and fluffy. Slowly add 1 1/2 cups confectioners' sugar, 1/2 cup at a time, until well combined. Add the vanilla, beating until well combined.
  • Assemble the cake: To make a glaze, mix the remaining 1/2 cup confectioners' sugar in a small bowl with 1 tablespoon water until smooth. Use a serrated knife to trim the edges from the short sides of the cake to make sharp corners. Cut the cake in half crosswise.
  • Put a cake half on a cake stand or serving platter. Reserve 1/4 cup frosting and spread the remaining frosting on the top of the cake, then place the other piece of cake on top. Cut the remaining 4 mini doughnuts or 3 regular doughnuts in half and spread some of the reserved frosting on the cut ends. Put the doughnuts on the top of the cake around the edge, cut-side down. Sprinkle the reserved streusel on the center of the cake and drizzle with the glaze. Refrigerate to set, about 2 hours. Bring to room temperature, about 1 hour, before serving.

Growing up on Long Island in the 60s a big treat was going to the luncheonette after church. I'd sit at the counter and use my quarter to buy a big square of crumb cake. The brown and powdered sugar crumbs were melt in your mouth and the cake moist and delicious. This cake adapted from Cooks brings back those wonderful memories!

1/3 cup granulated sugar
1/3 cup dark brown sugar
1 tablespoon ground cinnamon
1/8 teaspoon table salt
8 tablespoons unsalted butter, melted and still warm (1 stick)
1 3/4 cups cake flour
1 1/4 cups cake flour
1/2 cup granulated sugar
1/4 teaspoon baking soda
1/4 teaspoon table salt
6 tablespoons unsalted butter, cut into 6 pieces, softened but still cool (3/4 stick)
1 large egg
1 large egg yolk
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1/3 cup buttermilk
confectioners' sugar, for dusting
1 teaspoon powdered sugar, to make the recipe input

Steps:

  • TOPPING:.
  • In a medium bowl whisk sugars, cinnamon, salt. Stir in the melted butter. Add flour and mix with your hands until the mixture resembles thick, cohesive dough; set aside to cool to room temperature, 10 to 15 minutes.
  • CAKE:.
  • Adjust oven rack to upper-middle position and heat oven to 325 degrees.
  • Completely line an 8 x 8 pan with parchment paper or foil and spray with nonstick cooking spray.
  • Using an electric mixer, in your bowl mix flour, sugar, baking soda, and salt on low speed to combine.
  • With mixer running at low speed, add butter one piece at a time; continue beating until mixture resembles moist crumbs, with no visible butter chunks remaining, 1 to 2 minutes.
  • Add egg, yolk, vanilla, almond extract and buttermilk; beat on medium-high speed until light and fluffy, about 1 minute, scraping once if necessary.
  • Transfer batter to baking pan; using rubber spatula, spread batter into even layer. Break apart crumb topping into large pea-sized pieces and spread in even layer over batter.
  • Bake until crumbs are golden and wooden skewer inserted into center of cake comes out clean, 35 to 40 minutes. Cool on wire rack at least 30 minutes. Remove cake from pan by lifting parchment overhang.
  • Dust with confectioners' sugar - this is what makes it a true NY Crumb cake!

He said she called it "kuchen" and served it in a bowl, broken into chunks, with milk poured on top. You can serve it plain for breakfast, or with whipped cream as a dessert.

2 cups packed brown sugar
2-1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup butter, softened
1 teaspoon ground cinnamon
1/2 cup chopped pecans
1 cup milk

  • In a bowl, combine sugar, flour and salt. Cut in butter until mixture resembles a coarse meal. Remove 1 cup mixture and combine with cinnamon and nuts; set aside.
