Rich, earthy sauce that clings to penne pasta to make a hearty, meatless meal. Stir pesto into freshly cooked penne pasta, add to the top of crostini, or use as a dip for Italian-seasoned pita crisps.

Steps:
- Melt butter in a saucepan over medium heat. Cook and stir mushrooms and shallot in melted butter until the mushrooms are lightly browned and soft, 5 to 7 minutes. Remove saucepan from heat and set aside to cool for 10 minutes.
- Transfer cooled mushroom mixture to a blender; add pine nuts, olive oil, vegetable broth, garlic, lemon juice, salt, and pepper. Pulse blender a few times before blending until mixture is finely ground, scraping down the sides of the pitcher with a spatula as needed; scrape into a mixing bowl. Stir Parmesan cheese through the blended mixture.

Steps:
- Brown sausage and drain off fat. Add next 5 ingredients. Simmer uncovered 30 minutes, stirring occasionally.
- Cook lasagna noodles until tender. Drain and rinse.
- Combine remaining ingredients, except mozzarella.
- Place half of the noodles in a 13x9 pan. Spread 1/2 ricotta mixture over noodles. Add 1/2 the meat mixture and 1/2 the mozzarella. Repeat with a second layer.
- Bake 30 minutes at 350 degrees. Let stand 10 minutes before serving.

I've had this recipe for years and years (wrangled it from my son's Godmother!) and it's a consistent, never-fail, chewy/fudgy piece of chocolate Heaven! It goes together very quickly, too!

Steps:
- Combine butter, sugar and water in a small saucepan. Heat on medium and stir until sugar is melted. Remove from heat.
- Add vanilla, eggs and 1 cup of chocolate morsels (I use Ghirardelli's) and stir until chocolate is melted.
- In a medium sized bowl, combine baking soda, salt and flour, mix well. Add warm chocolate mixture and stir gently until combined.
- Spray bottom of a 9"x13" baking pan with spray release of choice, then pour in the brownie batter. Wait a minute or two for the batter to even out over the pan, then sprinkle with the additional cup of chocolate morsels.
- Bake in a 350 degree oven for 30-35 minutes.

- Flatten chicken to 1/4-in. thickness; sprinkle with salt and pepper. In a large skillet, cook chicken in 1 tablespoon oil for 5-10 minutes on each side or until juices run clear., Meanwhile, for pesto, combine the basil, nuts, garlic, salt and Parmesan cheese in a blender or food processor; cover and process until well blended. While processing, gradually add remaining oil in a stream. Spoon over chicken. Top each with a slice of mozzarella. Sprinkle mushrooms around chicken. Cover and cook for 5 minutes or until cheese is melted and mushrooms are tender.
