2 sticks unsalted butter
2 cups sugar
2 eggs
1 tsp vanilla
1 cup vegetable oil
5 cups flour
1/2 tsp salt
2 tsp baking soda
2 tsp baking powder
2 tsp cream of tartar

Steps:

  • Preheat over to 375. Cream the first 5 ingredients together. Stir the next 5 ingredients together and fold into the butter mixture and stir to combine. Form dough into small balls and place on ungreased cookie sheet. Dip the bottom of a glass in sugar and press cookies to flatten. Sprinkle with colored sugar and bake for 10-12 minutes.

DRY INGREDIENTS:
1 cup sugar
1 cup powdered sugar
1 cup butter, softened
2 eggs
1 cup vegetable oil
1 teaspoon vanilla (variation, use 1/2 teaspoon vanilla and 1 teaspoon pure almond extract)
1/2 teaspoon baking soda
1 teaspoon cream of tartar
4 cups flour
1/2 teaspoon salt
Sparkling sugar, for garnish and crunch

Steps:

  • Preheat the oven to 350°F. Whisk the dry ingredients together, and set aside. With an electric mixer, cream the butter and sugar together 3 to 4 minutes. Add the powdered sugar and mix for about 1 minute. Add the eggs, one at a time Add the vegetable oil and vanilla. Add the dry ingredients, a bit at a time, just until combined. Don't over-mix. For best results, line a baking sheet with parchment paper (or a Silpat). NOTE: The dough will be soft, so a cookie scoop makes the task a lot easier. Otherwise, chill the dough for at least 15 minutes, if you don't have a cookie scoop. I like to use a 2-inch cookie scoop to measure 12 cookies per sheet, spaced about 2" apart. With the flat of your palm (I lightly moistened my hands with water so the dough doesn't stick), gently press the cookie down just enough to flatten it out to be even. Sprinkle sugar on top. Bake for 14 to 15 minutes, rotating the baking sheet halfway through. The cookies should be slightly brown around the edges. Allow them to cool for 5 minutes, then remove to a cooling rack. Once the cookies are completely cool, they will be crunchy, with a tender texture on the inside. Yield: 3 dozen cookies. If you make 1-inch cookies, you should have 5 to 6 dozen.

1 cup evaporated milk
6 tablespoons butter
1 (7 ounce) jar marshmallow creme
3 ½ cups graham cracker crumbs

Steps:

  • Place sheets of waxed paper onto a work surface.
  • Stir sugar, cocoa, and evaporated milk together in a large nonstick saucepan over medium heat until mixture comes to a boil; boil for 5 minutes, stirring constantly. Remove from heat and stir butter and marshmallow creme into cocoa mixture. Quickly stir graham cracker crumbs into mixture.
  • Drop cookies by the spoonful onto waxed paper; let stand until firm. Store in airtight containers.

2 cups of flour - then continue to add more flour (probably up to 4 cups) to make a dough that is no longer sticky and easy to roll out.

Steps:

  • On a floured board roll out pieces of fough in a smaller portion so easy to work with. Cut in desired shapes with cookie cutters. Decorated as desired. Using a spatula or flat lifter place on geased cookie sheets and bake about 12 minutes or till lightly browned at 325F.

A wonderful vegan sugar cookie. I borrowed this recipe, but can't remember where I got it from. This is the title it came with, though, so thank you to the originator! I originally found it while looking for a recipe for Christmas cut out cookies. This one works great! I have altered it ever so slightly. I like to roll them thin (but not too thin). They get eaten very quickly, especially warm out of the oven. By the way, I'm fully guessing at the yield. It depends on what size cutters you use, and how thin you roll them out. Enjoy!

1 3/4 cups sugar
1 cup vegan margarine (I use Earth Balance Spread)
3/4 cup soymilk, with
1 teaspoon vinegar, added (to make sour milk)
4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg (freshly grated, this ingredient is key to the flavor!)

Steps:

  • Preheat the oven to 350°.
  • Mix flour, baking powder, baking soda, salt and nutmeg together.
  • In a large bowl, fully cream margarine and sugar together.
  • Add soured milk alternately with the dry ingredients to the creamed mixture.
  • Form dough into a ball, wrap and chill in the refrigerator for at least one hour.
  • Cut the dough into quarters and roll out one quarter at a time (it rolls and cuts the best if it is chilled, so keep the remaining sections in the refrigerator until you're ready to use them).
  • I use a pastry mat to cut my dough out on. I have never had a problem with the dough being sticky, but you can lightly flour your work surface, if necessary (beware that it might change the flavor a bit if you over flour).
  • Transfer the cut out cookies to an ungreased baking sheet. I like to sprinkle a little sugar on the tops of them before baking. My children like to put sprinkles on top first. Or, you can leave them plain and put icing on afterwards. We have too big a sweet tooth here to eat them plain.
  • Bake in a 350°F oven for 7-9 minutes. Do not brown!
  • Enjoy!

I know there are a ton of other sugar cookie recipes on Zaar, but I didn't see any quite like this. They're scrumptious! She told me she got them from The Good Housekeeping Cookbook, Hearst Magazines, 1949. The prep time does not include time to chill overnight, and the serving size is an estimate!

1 teaspoon cream of tartar
1/2 teaspoon baking soda

1 stick (1/2 cup) salted butter, melted and cooled
1/2 teaspoon wintergreen extract or almond extract or 1 teaspoon vanilla
4 cups sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon double-acting baking powder
1 cup sour cream

Steps:

  • In a bowl whisk together the eggs and whisk in 1 cup of the sugar, the butter, and wintergreen extract. In another bowl stir together the flour, backing soda, and baking powder and add the flour mixture to the butter mixture in batches, alternately with the sour cream, stirring until the mixture forms a dough. Chill the dough, covered, for at least two hours or overnight. Roll out the dough 1/3 inch thick on a lightly floured surface and cut with a 2 1/2 inch cookie cutter. Transfer the cookies to lightly greased baking sheets and sprinkle with sugar. Gather the scraps, reroll the dough, and cut out more cookies. Bake in batches in the middle of a preheated 350 degree oven for 12 to 15 minutes, or until they are set and the edges are pale golden. Transfer them with a spatula to racks, and let them cool.

1/2 pound (2 sticks) unsalted butter or margarine, softened
3/4 cup sugar
2 eggs
1 tablespoon brandy (optional)
Dash of salt
1/2 teaspoon vanilla
3 1/2 cups flour
1 egg yolk
Chopped nuts and raisins or 1 egg white
Coarse sugar colored with blue food coloring

Steps:

  • In a bowl, cream the butter and sugar. Then mix in the eggs, brandy, salt, vanilla, and flour. Let rest for at least 30 minutes in the refrigerator. Roll out the dough to 1/8- inch thick. Preheat oven to 350 degree. You can either use cookie cutters or use the point of a toothpick like a knife to cut out cookies in any shapes you want. Once the cookies have been cut out, gently place them on the baking sheet. Then either brush them with egg yolk and sprinkle with nuts and raisins or brush with egg white and sprinkle with blue sugar. Bake for about 10 minutes, or until golden brown. Use a metal spatula to gentle remove each cookie from the baking sheet to a cooling rack or flat plate.

1 (8 ounce) package cream cheese, softened
½ cup butter, softened
2 cups all-purpose flour
1 cup white sugar
⅓ cup milk
½ pound ground walnuts
⅓ cup confectioners' sugar for decoration

Steps:

  • Beat together cream cheese and margarine until well blended. Add flour, mixing well. Shape into a ball, cover and chill for 2 hours.
  • In saucepan over medium heat, cook sugar and milk, stirring occasionally until milk boils and sugar is dissolved. Add the ground nuts. Remove from heat and let cool until mixture is of spreading consistency.
  • Roll out chilled dough on lightly floured surface to a rectangle about 18 X 12 inches. Cut in half lengthwise. Spread each piece with milk/nut filling and roll up like a jelly-roll, starting from the long side.
  • Cut each roll in half. Place seam side down on ungreased cookie sheets (two on a baking sheet). Leaving roll's shape intact, cut into slices 1/2 inch thick almost to the bottom of the roll.
  • Bake at 350 degrees F (175 degrees C) for 15 to 20 minutes or till done. Remove from sheet and sprinkle with confectioners' sugar. Cool on racks. Cut cookies all the way through. Refrigerate or freeze. Re-sprinkle with confectioners' sugar before serving.
  • Variations: A) In place of milk/sugar/nut filling, spread with ground filberts and red raspberry preserves. B) Before rolling, sprinkle chopped chocolate chips over milk/sugar/nuts filling.

1 cup molasses
5 ½ cups all-purpose flour
2 teaspoons cream of tartar

1 cup sour milk
1 ½ cups white sugar
½ teaspoon distilled white vinegar
½ cup water
18 large marshmallows
2 egg whites
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, cream together 1 cup white sugar and shortening until smooth. Stir in the egg yolks and molasses. Combine the flour, cream of tartar, baking soda, salt, cinnamon and ginger; stir into the molasses mixture alternately with the sour milk. Cover and chill for 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). On a lightly floured surface roll the dough out to 1/8 inch thickness. Cut into rectangular shapes (I like to use a Spam can). Place cookies 1 inch apart onto an ungreased baking sheet.
  • Bake for 8 to 10 minutes in the preheated oven, until lightly browned. Remove from baking sheets to cool on wire racks.
  • To make the frosting, combine 1 1/2 cups sugar, vinegar, water and marshmallows. Mix well and place over a pot of simmering water. when the marshmallows have melted, stir in the egg whites. Remove from heat and beat with an electric mixer for 7 minutes. Stir in the vanilla and confectioners' sugar until well blended. Frost cooled cookies.
